From "The South Beach Diet" copyright 2003. Phase Two recipe. I have heard that the "White Wine Worcestershire Sauce" has been re-marketed and is now called "Chicken Marinade."

3 tablespoons I Can't Believe It's Not Butter® Spread
1 cup Lea & Perrins White Wine Worcestershire Sauce
1/4 cup fat-free half-and-half
4 sole fillets

Steps:

  • Place the spread in a medium saucepan.
  • Whisk in the Worcestershire sauce, bring it to a boil and reduce the sauce slightly.
  • Stir in the half & half and keep warm.
  • Meanwhile, preheat the broiler and place the fish on an unheated rack in a broiler pan.
  • Broil 4-6" from heat and for 2-6 minutes or until fish flakes easily.
  • Remove fish to a serving platter and spoon the sauce over the fish.

2 tablespoons vegetable oil
2 1/2 lbs chicken, cut up
salt and pepper, to taste
1 lb baby carrots, peeled
1/2 cup red onion, sliced
1 green bell pepper, sliced
1 red bell pepper, sliced
1 lb mushroom, sliced
3/4 cup lea and perrins chicken marinade
1/4 cup yogurt or 1/4 cup light cream

Steps:

  • Heat oil in a large skillet, season chicken and brown pieces over moderately high heat until golden on all sides, about 15 minutes.
  • Add vegetables and turn to glaze.
  • Drain excess fat.
  • Pour chicken marinade (aka. white wine worcestershire sauce over all. Cook 15 minutes more, basting occasionally, until chicken and vegetables are tender.
  • Stir in yogurt or cream and warm through.

Found on the back of a bottle of Lea & Perrins Worcerstershire Sauce. Great for steaks or any grilled meat. Note: you can replace the olive oil with vegetable oil if you like.

1/2 cup Worcestershire sauce (Lea & Perrnis)
3 tablespoons olive oil
3 tablespoons balsamic vinegar
1/4 teaspoon salt

Steps:

  • In large, shallow non-aluminum baking dish or plastic bag, pour marinade over steak(s); turn to coat. marinate in refrigerator for 30 minutes. Remove steak(s); discard marinade. Grill or broil to preferred doneness, brushing frequently with additional Leaq & Perrins.

1/3 cup lea & perrins chicken marinade
1 lb boneless skinless chicken breast, pounded thin
2 -3 tablespoons butter

Steps:

  • in bowl put chicken and white wine sauce turning to coat well.
  • heat butter in a skillet.
  • lift chicken out of bowl and place in skillet saute until lightly browned and cooked though about 3 minutes per side.
  • remove chicken to a plater.
  • pour sauce from the bowl into the skillet and cook over medium heat about 2 minutes stirring constantly.
  • pour over chicken and serve.
