RICE KRISPIES TREATS WITH CHOCOLATE AND PRETZELS
Marshmallow treats can skew saccharine, but this slightly more sophisticated version embraces the salty as much as it does the sugary. Sweet marshmallows and chocolate are balanced by plenty of salt: in the butter, on the pretzels and in the flaky sea salt finish. Butter-flavored pretzels ("butter snaps") have a delicate crunch and a creamy note that work well in this recipe, but any small, thin pretzels are also good. You'll want to use chopped chocolate here instead of chips: They melt faster, so you end up with smeared chocolate bits instead of distinctive chunks.

Steps:
- Line the bottom and sides of a 9-inch square baking pan with foil, leaving a 1-inch overhang on all sides, then coat with nonstick cooking spray.
- Melt the butter in a large saucepan over medium-low heat. Add the marshmallows and stir with a sturdy silicone spatula until smooth and melted, about 3 minutes.
- Remove from the heat, add the cereal and pretzels, and stir until evenly coated. Immediately scrape the mixture into the prepared pan. Using the spatula, press the mixture to evenly cover the bottom of the pan. Working quickly (you want the cereal mixture to still be quite warm so the chocolate will melt a bit and adhere to the the surface), sprinkle the chopped chocolate on top. Press the mixture with the chocolate into a flat, even layer in the pan. Sprinkle with flaky sea salt.
- Cool to room temperature in the pan on a rack. Lift out of the pan using the foil and cut into squares. Serve immediately or transfer to an airtight container.

Dairy-free Rice Krispies Treats are kicked up a notch to Chocolate Pretzel Rice Krispie Treats. This sweet-salty-chocolatey riff on the classic is so easy. It doesn't take any longer than the classic and it's so good.

- Prepare a square baking pan, 9 x 9 or 8 x 8, doesn't matter. Glass, Pyrex, metal, all ok. Spray with cooking spray. My cake pan is a nice Sur La Table non-stick pan, and I don't want to cut the treats in the pan and ruin the coating. So I make a "Parchment Belt" to lift the square out when cool. I fold a sheet of parchment paper in the bottom, letting the edges hang over the sides. That way I can lift the block of treats out before cutting.
- In a large microwave safe bowl, heat the margarine and marshmallows, 30 seconds at a time, until they melt. Stir until smooth, heating more as needed to get all the lumps out.
- Add the cereal and pretzels and stir until coated well.
- Allow mixture to cool slightly before adding the chocolate.
- Sprinkle half the chocolate over the marshmallow-cereal mixture, mix quickly so it doesn't melt everywhere, and then dump into the pan. Sprinkle the rest of the chocolate on top and press down into the pan.
- Sprinkle with some flaky salt, cool, cut and serve.
CHOCOLATE COVERED PRETZEL RICE CRISPY TREATS

- Line a 9x13 pan or a large baking sheet with parchment and set aside. (Feel free to use foil, if you'd prefer, just don't forget to grease the foil very well with butter to prevent sticking!) Melt 6 tablespoons butter in a large pot, over medium heat. Add 8 cups marshmallows and stir until they begin to melt and stick together.
- Remove from the heat, add 6 cups cereal, stir until well combined. Stir in the remaining 2-3 cups marshmallows and about ½ cup of FLIPZ pretzels. Scoop the sticky cereal mixture onto the lined pan. Use a lightly buttered spatula or spoon to gently press the mixture across the pan, being careful not to press too firmly. Let cool for a few minutes before slicing. Store in an airtight container for several days. Enjoy!

CHOCOLATE RICE KRISPIES TREATS
Using unsweetened chocolate gives these treats a really chocolate-y taste. The marshmallows add plenty of sweetness to offset the unsweetened chocolate. I made these every year for my students, cutting them into owl shapes, and they would gobble them up! If you want to go chocolate all the way, use Cocoa Rice Krispies.

- Melt the marshmallows, butter and chocolate in the top of a double boiler over simmering water, or in the microwave. Meanwhile, butter a large bowl and add the Rice Krispies.
- Butter a 9 x 9 x 2-inch baking pan, also.
- Pour the melted marshmallow mixture over the cereal and stir to coat completely. Press into prepared baking pan. Cut into squares when cool.
- NOTE: To make owls or other shapes: Press the mixture into a buttered jelly roll or 9 x 13-inch baking pan. This makes a thinner layer which may be cut into shapes with Halloween cookie cutters. Be sure to choose the metal "topless" type of cutters which do not have too detailed a shape. Use a spatula to lift the shapes from the pan.
