BUTTERED WINE RICE

From a Women's Weekly Dinner Party Cookbook. A nice change from plain rice! If you have any leftovers, add some cooked peas, canned tuna & some cream for an easy tuna rice dish, yum!

Yield 4-6 serving(s)

Number Of Ingredients 6

90 g butter
1 onion, chopped finely
1 cup long grain rice, washed
2 1/2 cups chicken stock
1/2 cup dry white wine
salt and pepper

Steps:

  • Heat butter in a pan, add onion and cook gently until onion is tender and lightly golden.
  • Add rice and stir for 3 minutes.
  • Add 1 cup of hot chicken stock to pan and stir until almost completely dissolved.
  • Add remaining stock & wine, bring to the boil, reduce heat & simmer gently for approximately 10 mins until rice is tender.
  • Season with salt & pepper & serve.

1 large onion
1 large carrot
2 ounces unsalted butter
8 ounces rice
salt
pepper
1/2 teaspoon dried marjoram
1/2 cup beef broth (bouillon)
1/2 cup white wine
parmesan cheese

Steps:

  • 1 Peel and chop the onion medium - fine. Peel the carrot and chop into a small dice. 2 Melt the butter in a large frying pan over medium heat, when foaming, saute the onion and carrot until golden brown, stirring frequently. 3 Add the rice and stir well to coat, season, stir in the majoram, beef broth and wine. 4 Cover, reduce the heat and simmer until the liquid is absorbed, ca.15 minutes, depending on the quality of the rice. If this happens before the rice is cooked, add 1 - 2 tsp of hot water. 5 Correct the seasonings, empty the rice into a heated bowl and sprinkle with parmesan if desired. Serve immediately.

Easy to make. A good mixture of flavors. One of our favorites. This is from Pierre Franey, my favorite chef. If you like you can add a bay leaf with the mushrooms.

4 boneless skinless chicken breast halves
4 teaspoons butter
1/2 cup minced onion
2 teaspoons minced garlic
1 cup fresh mushrooms, sliced
1 cup chicken broth
1/2 cup dry white wine
3/4 cup rice

Steps:

  • Brown chicken in butter in a dutch oven.
  • Scatter onion and garlic over chicken.
  • Add mushrooms,and cook 5 minutes.
  • Add chicken broth.
  • Add wine, cook another 5 minutes.
  • Add rice, cover and cook 20 minutes.

1/2 cup white raw rice
1/2 cup black raisins (with seeds)
1 kg sugar (I hav used Brown Sugar)
1 teaspoon instant yeast
2 tablespoons lemon juice
2 liters water (boiled and cooled)

Steps:

  • Wash and rinse rice and black raisins and keep it aside.
  • Take a clean big ceramic jar or a glass jar. Add in all ingredients, rice, raisins, sugar followed by water. Stir it well with a wooden ladle.
  • Next add in yeast and lemon juice and mix well.
  • Cover the jar with its lid.
  • Everyday stir it well for 2 minutes in morning and evening.
  • Do it for the next eighteen days.
  • On the 19th day open the jar and filter it (you can use a muslin cloth, I didn't use) to a clean big bowl.
  • Wash the jar and allow it for pat drying.
  • Transfer the filtered content to the jar back and close the lid. Keep it for another week.
  • You can see the colour changing from the next day onwards.
  • After the said period, transfer it to clean bottles and you can start using it.
  • The rice wine is ready to serve.

  • Bring the 4 cups of chicken broth to a boil, then reduce heat and let simmer. Heat butter in a large saucepan over medium heat, then add shallot and garlic and let cook until translucent. I finally invested in this saucepan, and it makes such a huge difference!
  • Add the rice to the shallot mixture, tossing to coat. Toast the rice for about 3-5 minutes, then add wine. Simmer over medium-low heat until the wine is almost evaporated.
  • Add the broth one cup at a time, continuing to stir until all the liquid is almost absorbed before adding more. Once all the broth has been added and cooked into the rice, remove pan from heat and stir in parmesan, salt, pepper and paprika. Serve hot.
