RICE KRISPIES ICE CREAM SANDWICHES
A favorite for children and grown ups alike. A combination of corn syrup, peanut butter, and Rice Krispies with your choice of ice cream or yogurt sandwiched in between.Place a piece of plastic wrap on top of the cereal mixture and then press down with your hands if you wish to keep your hands clean. I keep a plastic quilt ruler with my baking supplies for measuring squares and pastry. From a magazine clipping. No baking required!

Steps:
- In a medium bowl, stir together corn syrup and peanut butter.
- Add cereal and stir until well coated.
- Press mixture firmly and evenly into a buttered 9"x13" pan.
- Place in freezer until firm, about 15 minutes.
- Cut cereal mixture in half crosswise.
- Spread one half with softened ice cream or frozen yogurt.
- Top with second half of Rice Krispie mixture to make one very large sandwich.
- Freeze until firm, about 2 hours.
- Cut large sandwich into 2" portions (using ruler again).
- Wrap individually in foil paper or freezer wrap and store in freezer until needed.

CLASSIC CRISPY RICE TREATS
Gooey marshmallows and crispy rice cereal come together in this recipe for the all-original favorite. We added a splash of vanilla extract and pinch of salt to give these sweet treats a palatable punch. Cut into squares, store between a few pieces of wax paper (to prevent any sticking) and enjoy for up to three days.

Steps:
- Line a 9-by-13-inch baking dish with aluminum foil, leaving a 2-inch overhang on each of the longer sides. Spray the foil lightly with cooking spray.
- Melt the butter in a large pot over medium heat. Add the marshmallows and cook, stirring occasionally, until melted and smooth, about 5 minutes. Remove from the heat and stir in the vanilla and salt.
- Working quickly, add the rice cereal to the pot and stir with a rubber spatula until evenly coated. Transfer to the prepared baking dish and press into an even, compact layer. (Spray your hands with a little cooking spray to keep them from sticking when pressing the cereal mixture into the pan). Decorate with toppings if using (see Cook's Note).
- Let sit at room temperature until firm, about 30 minutes. Cut into 24 squares. Store the cereal treats at room temperature in an airtight container for up to 3 days.
RICE KRISPIES ICE CREAM DESSERT
This always bring's back chilhood memories. It's an old time dessert that my mom made quite frequently. You may also use CornFlakes or RiceChex instead of the Krispies.

Steps:
- Mix all together. (omitting the icecream).
- Spread 1/2 the mixture in a buttered 9x13 inch baking pan.
- Slice icecream (softened) on top.
- Sprinkle with remaining crumbs over the top.
- Refreeze.
- It's already quite sweet, but if you're so inclined, drizzle with a little of your favorite ice-cream topping. Butterscotch, caramel, or hotfudge all work.

Steps:
- Mix corn syrup and peanut butter in a large bowl until smooth; stir in rice cereal. Press cereal mixture into the bottom of a 9x13-inch baking dish. Cover and freeze until firm.
- Cut cereal mixture in half, crosswise. Spread ice cream over half the cereal and press the second half over the ice cream to create a large sandwich. Cover and freeze again until firm.
- Cut sandwich into bars and serve or wrap individually with aluminum foil.

- Line a 13" x 9" dish with heavy duty foil, overlapping the sides by a couple of inches. Spray the foil with non-stick cooking spray and set aside.
- Combine 1/2 cup creamy peanut butter with 1/2 cup corn syrup in a large mixing bowl. Add 4 cups Rice Krispies and mix until well combined. Pour the cereal mixture into the foil-lined dish. Spray your hands with a little non-stick cooking spray and pat the mixture down evenly into the dish. Alternately, use a small piece of wax paper to pat the mixture down. Place the dish in the freezer for about 15 minutes, or until cereal mixture is firm.
- Mix together remaining 1/2 cup peanut butter, 1/2 cup corn syrup in a large bowl and remaining 4 cups Rice Krispies. Combine well and set aside.

- Preheat oven to 300 degrees. Line a 9×13 inch pan with foil or a parchment sling, extending a little over the edges of pan.
- Place Rice Krispies, pecans, coconut, and brown sugar in a 9×13 inch pan. Drizzle butter over mixture and combine well (a fork, or clean hands work well.) If desired, sprinkle in a few shakes of ground cinnamon and mix in. Bake for about 30 minutes, stirring once or twice during cooking time. Remove from oven when toasted and golden brown and let mixture cool completely.
- Remove half of crispy mixture and spread remaining half in an even layer on the bottom of pan. Gently spoon softened ice cream on top of mixture. Use a spoon and very gently spread mixture, being careful to not lift up crisp from bottom of pan. (see notes for a tip). Spread ice cream out evenly and then top with remaining crisp mixture. Gently press top crisp into ice cream with hands. Cover pan with plastic or foil and chill until firm (preferably overnight.) When ready to serve, use foil/parchment to completely remove ice cream from pan. Slice into squares and serve.

- Line a baking sheet with parchment; set in freezer. Using foil handles, lift ice cream treat from pan, peel off foil and place on a cutting board. Cut into 18 sandwiches; place on baking sheet in freezer. Remove a sandwich from freezer, press edges of sandwich into sprinkles, then return to freezer. Repeat with remaining sandwiches. Freeze until ice cream hardens, at least 30 minutes. (For longer storage, wrap sandwiches in plastic wrap after they are firm.)
