This is a great recipe that I got from a friend. If you can't find whole wheat bread dough, I've used white and I've also made my own.

1 (1 pound) loaf frozen whole wheat bread dough, thawed
½ cup thousand island dressing
2 cups shredded Swiss cheese
6 ounces deli sliced corned beef, cut into strips
1 cup sauerkraut - rinsed and drained
½ teaspoon caraway seed
¼ cup chopped dill pickles

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a large pizza pan. On a lightly floured surface, roll the bread dough out into a large circle about 14 inches across. Transfer to the prepared pizza pan. Build up the edges, and prick the center all over with a fork so it doesn't form a dome when baking .
  • Bake for 20 to 25 minutes in the preheated oven, or until golden.
  • Spread half of the salad dressing over the hot crust. Sprinkle with half of the Swiss cheese. Arrange corned beef over the cheese, then drizzle with the remaining salad dressing. Top with sauerkraut and remaining Swiss cheese. Sprinkle with caraway seed.
  • Bake for another 10 minutes in the preheated oven, until cheese melts and toppings are heated through. Sprinkle with chopped pickle. Let stand for 5 minutes before slicing.

Pastrami/Reuben Pizza Mash-Up image

This pizza is loaded with pastrami and Swiss cheese and is nice and messy, just like a good Reuben sandwich should be.

All-purpose flour, for dusting
1 pound store-bought pizza dough, at room temperature
2 tablespoons unsalted butter, melted
1 tablespoon caraway seeds
1/2 pound sliced Swiss cheese
3/4 cup sauerkraut, drained well
1 pound sliced pastrami
Russian dressing, for drizzling
1/4 cup chopped gherkin pickles

Steps:

  • Place a pizza stone or an inverted rimmed baking sheet on the bottom rack of the oven and preheat to 500 degrees F.
  • Dust a piece of parchment paper lightly with flour. Stretch or roll out the pizza dough into a 12-inch round on the parchment, then transfer the dough on the parchment to a pizza peel or another inverted rimmed baking sheet.
  • Brush the pizza all over with the butter and sprinkle with the caraway seeds. Top with half of the Swiss cheese, then sprinkle over 1/4 cup of the sauerkraut. Add the pastrami, overlapping the slices, then top with the remaining slices of Swiss cheese.
  • Slide the pizza on the parchment onto the pizza stone or rimmed baking sheet and bake until the cheese is melted and the crust is golden brown, 10 to 15 minutes.
  • Drizzle the pizza with Russian dressing and top with the remaining 1/2 cup sauerkraut and the gherkins.

2 cups brown sugar
1/3 cup black peppercorns
1/4 cup juniper berries
8 allspice berries
8 whole cloves
2 tablespoons yellow mustard seeds
2 bay leaves
1 cinnamon stick, broken
One 5- to 8-pound beef brisket, trimmed from butcher
Butter, softened
Rye bread
Beer Braised Sauerkraut, recipe follows
Swiss cheese, sliced
Smoked Russian Dressing, recipe follows
8 ounces applewood smoked bacon, diced
1/2 Spanish onion, diced
1 pound sauerkraut (bagged or jarred), drained
1/4 cup brown sugar, plus more if needed
One 12-ounce bottle IPA beer
1 bay leaf
Salt and freshly ground black pepper
1 cup mayonnaise
3/4 cup ketchup
1/4 cup sweet pickle relish, drained
1 tablespoon Worcestershire sauce
1/2 small tin anchovies, mashed
3 drops liquid hickory smoke

Steps:

  • For the brisket: In a large pot, combine the salt, sugar, peppercorns, juniper berries, allspice, cloves, mustard seeds, bay leaves and cinnamon stick and cover with 2 gallons water. Bring the mixture to a boil, remove from the heat and chill to 40 degrees F.
  • Fill a marinade injector with some of the brine and inject the brisket with as much brine as it will hold. Submerge the brisket in the remaining brine and store in a baking dish, covered, in the refrigerator overnight.
  • Preheat the oven to 300 degrees F.
  • Place the brisket into a large roasting pan and cover it with as much of the brining liquid as the pan will hold. Cover the pan with foil and place in the oven until tender and medium-rare, about 2 hours. An instant-read thermometer should register 130 degrees F. Remove the brisket from the oven, place on a platter and/or cutting board and tent with foil. Let the brisket rest for 1 hour. Slice as thinly as possible.
  • To serve: Preheat the oven to 350 degrees F.
  • Butter the rye bread and place on a baking sheet. Top with 6 ounces thinly sliced brisket, some Beer Braised Sauerkraut and a slice of Swiss cheese. Bake the Reubens until the cheese is melted and warmed through, about 5 minutes. Top with Smoked Russian Dressing.
  • Heat a saute pan over medium heat, add the bacon and render the fat, cooking until bacon is crispy. Remove the bacon from the pan and set aside. Add the onions and saute in the bacon fat until translucent. Add the sauerkraut, sugar, beer and bay leaf and simmer until almost all of the liquid is gone, about 15 minutes. Add the bacon back to the pan to warm through and adjust the seasoning with salt, pepper and brown sugar.
  • Mix all of the ingredients together in a bowl and chill in the refrigerator.

In another bowl, toss bread cubes with melted butter., Spread cream cheese mixture over crust; top with corned beef, sauerkraut and cheese. Sprinkle with bread cubes. 1 lb pkg refrigerated pizza dough
1 1/2 cups shredded swiss cheese
1 lb deli-sliced pastrami or 1 lb corned beef
1 cup sauerkraut (drained well)
1/2 tablespoon olive oil

Steps:

  • Cut Pizza Dough in half. Form one piece in to a round disk / or square. Use a floured rolling pin or stretch with your hands.
  • Place disk of dough on a parchment lined pan or greased pizza pan. Sprinkle half the cheese on top, leaving a 1inch boarder around the edges Next top with the meat, then the drained kraut. Top with the remaining cheese.
  • Roll out the second piece of dough and place on top over the filling. Tightly crimp together the edges to seal. Brush the top with olive oil .
  • Bake on lower third of oven at 450 degrees for 20-25 mins .
  • Cut Pizza into slices. Dip in thousand Island Dressing. Yummmm!

2 cups Miracle Whip

2 quarts sauerkraut
1 slice bacon, diced
1/2 cup diced yellow onion
1/8 cup vegetable oil
1/8 teaspoon whole caraway seeds
1/2 cup sugar
1/2 cup sweetened applesauce
1 whole bay leaf
2 cups mayonnaise
4 ounces sweet relish
4 ounces ketchup
Butter, room temperature
2 slices rye bread
1 slice Swiss cheese
4 ounces thinly sliced corned beef

Steps:

  • Drain the sauerkraut in colander. Rinse the sauerkraut with water and squeeze out the extra moisture. In a small skillet, over medium heat, saute the bacon and onion until the onions become translucent. Pour the vegetable oil into a 4-quart saucepan. Add 1 quart of the sauerkraut, the caraway seeds, another 1 quart of sauerkraut, the bacon and onion mixture, the sugar, applesauce, and bay leaf. Cover and simmer on low heat for 15 to 20 minutes, stirring frequently. Transfer the sauerkraut mixture to a container and refrigerate until cool.
  • Thousand Island dressing:
  • Add all the ingredients to a bowl and stir to combine. Cover and refrigerate until ready to use.
  • Reuben:
  • Butter 2 slices of fresh rye bread and put them on the flat top grill. Put a slice of Swiss cheese to each piece of bread. Apply the desired amount of Thousand Island dressing and sauerkraut on each slice. Heat 4 ounces of thinly sliced corned beef on the flat top. Arrange the hot corned beef on top of 1 slice of bread. Transfer the bread slices to a cutting board and make a sandwich. Slice in half and serve.

This was on the menu tonight -- it did not disappoint! It's quick, easy, and delicious. My husband says he'd definitely like to see it on the table again :) Perfect Sunday night supper.

1 pizza dough, medium*
1 tsp ground caraway seed
1/2 c thousand island dressing, approx
8 oz corned beef slices
2 c sauerkraut, drained, dry
2 c shredded swiss cheese, or several slices

Steps:

  • 1. Put the sauerkraut into a colander to drain while you roll out your pizza crust.
  • 2. Roll out the pizza dough, for a medium size (11") pizza. Sprinkle the caraway over the unbaked crust. Use more or less, to your taste.
  • 3. Following the package instructions, pre-cook the pizza dough for about 3/4 of the recommended time. Mine took about 12 minutes at 400*.
  • 4. While your crust bakes, roll up your corned beef slices (like a cigar), and cut them into strips (1/2" cuts down the length). Set aside.
  • 5. Shred the cheese, or cut the slices into strips. Set aside.
  • 6. Remove par-cooked crust from the oven, and spread the dressing over the top of the crust. Use as much or as little as you like.
  • 7. Layer the corned beef strips on top of the dressing.
  • 8. Pat dry the sauerkraut, making sure it's not too wet, then layer it over the corned beef. You can add more caraway here, if you like.
  • 9. Sprinkle the cheese evenly over the top of the pizza. Garnish with whole caraway seed, if desired.
  • 10. Return the pizza to the oven and bake an additional 10 minutes, at 350* Remove from the oven and allow to rest a few minutes before cutting.
  • 11. Serve, and enjoy with a nice green salad or coleslaw.
  • 12. NOTES: If you prefer, use a ready-made pizza crust (like Boboli). Just sprinkle the caraway over the dressing. This recipe is very flexible, and easy to increase for a larger pizza, or decrease if you want a small one. I made this again for the SuperBowl adding pickle relish and topped with french-fried onions -- YUM! *We are gluten intolerant, so I used Pillsbury GF Pizza Dough.
