CONTEST-WINNING BLACK BEAN SOUP
Black bean soup recipes are among my favorite because they're light and it most of the time don't contain meat. For this recipe, you could add lean beef or chicken for a variation. -Angee Owens, Lufkin, Texas

- In a small bowl, mash 1 can black beans; set aside. In a large saucepan, saute the celery, onion, red pepper and jalapeno in oil until tender. Add garlic; cook 1 minute longer. , Stir in the broth, tomatoes, cumin, coriander, hot sauce, pepper, bay leaf, mashed black beans and remaining whole beans. Bring to a boil. Reduce heat; cover and simmer for 15 minutes. , Discard bay leaf. Stir in lime juice. Garnish each serving with 1 tablespoon sour cream and 1-1/2 teaspoons green onion.

BLACK BEAN SOUP
Back in college, a great local cafe stayed opened into the wee hours ladling up their version of this stuff. The first time I slurped some of it down after midnight, I decided to make black bean soup my own tradition. Mine is hearty and smoky, and if it's lying around, I'll also throw in a can of beer for good taste and in keeping with the spirit of a good night on the town. Like the onion soup, you'll want to make this ahead of time so you're not faced with the prep-work when you and your friends just want to kick back and chow down after a long night. Using smoked bacon makes all the difference in the world because those beans are just begging for that rich, smoky flavor.

- Put the bacon into a large heavy pot and place it over medium heat. Cook until it starts to give up its fat, about 4 minutes. Stir in the onions and cook, stirring, until they start to turn translucent, about 4 minutes. Stir in the garlic and cook until you can smell it, about 1 minute. Add the broth, tomatoes, ketchup, Worcestershire, and chili powder. Stir in the beans, turn the heat to high and bring to a boil. Adjust the heat so the soup is bubbling gently and cook 10 minutes. Season with salt and pepper.
- Meanwhile, pick off all the thick stems from the cilantro. Wash it and shake dry. Chop the cilantro coarsely and stir it into the soup when it has been simmering 10 minutes. cook until the soup is thickened, about 5 minutes. Stir in the lime juice. Serve with the garnishes.

- Reduce heat to low, cover and simmer for 10 minutes.

- Set a multi-cooker to the saute function. Add the lard or butter and melt. Add the garlic, onion, bell pepper and jalapeno. Cook until the vegetables are softened, about 3 minutes. Sprinkle over the chili powder, cumin and salt. Stir and cook for about a minute. Add the beans and pour in the broth.
- Put on the lid and set the valve to sealing. Set to pressure cook on manual for 50 minutes.
- Once the pressure-cook cycle is complete, allow the pressure to release naturally for 10 minutes, then release the rest of the steam using quick release.
- Remove the lid and add the lime juice. Using an immersion blender, puree the soup until it is a good mix of smooth and textured. Taste and adjust the seasoning if needed. If the soup is too thick, add some additional broth to thin it.
- Ladle into bowls and garnish with the red onion, cilantro, tomato, sour cream, avocado and lime wedges.
CHILI'S BLACK BEAN SOUP
This recipe is in response to Debbie Thorn's request for a black bean soup in the recipes requested forum. The recipe was originally published in the VJJE recipe weekly archives in 2001.

Steps:
- In a medium stock pot, place the olive oil, onion, carrot and bell pepper and saute the vegetables till they are tender.
- Bring 1 cup of water to boil, add the bouillon cubes, and allow to dissolve.
- Add the bouillon, cooked beans, and remaining ingredients (except cornstarch and 2 tablespoons water) to sauteed vegetables.
- Bring mixture to a simmer and cook approximately 15 minutes.
- In a blender, puree 1 quart of the soup, and put back into the pot.
- In a separate bowl, combine the cornstarch and 2 tablespoons water.
- Add the cornstarch mix to the soup and bring to a boil for 1 minute.
- Serve with cornbread, white rice, or your favorite side dish.

THE COACH HOUSE'S BLACK BEAN SOUP
The Coach House Restaurant on Waverly Place in New York City was legendary. It was owned by a Greek, the beloved Leon Lianides, and dedicated to serving classic American food in an era when fine dining spoke French. After suffering ups and downs in its later years, it closed for good in 1993, and Mr. Lianides died in 1998. But there are plenty of New Yorkers who still grow misty-eyed at the thought of the Coach House corn sticks, the black bean soup with Madeira and -- sweetest memory of all -- the mocha dacquoise. I had acquired the black bean soup recipe back in the early 80's, and decided to post it here for posterity, and for those who might remember it fondly. Beware, though, that there is nothing quick about making this soup.

- Wash beans in a colander. Put in a bowl. Cover with cold water and let soak overnight, refrigerated.
- Drain and wash again.
- In a large casserole, combine drained beans with the 3 quarts of water. Cover and simmer for 90 minutes.
- In a heavy kettle, saute bacon a few minutes, then add celery and onion and cook until tender. Do not brown.
- Add beef bones, ham shank, remaining herbs and vegetables and pepper. Add beans and their cooking liquid. Cover and simmer for 3-4 hours, until beans are very tender. Add more water if necessary.
- Remove bones and ham. Puree soup in a food mill. Return to pot, add Madeira and chopped eggs. Mix well and serve.

- In a large saucepan over medium-high heat add the beans, ham, bay leaves, water, and baking soda. Bring to a boil. Stir in salt, reduce heat to low, cover, and simmer briskly until beans are tender, 75 to 90 minutes (if necessary, add another 1 cup water and continue to simmer until beans are tender); do not drain beans. Remove and discard bay leaves. Remove ham steak, cut into 1/4-inch cubes, and set aside.
- Over medium-high heat, add oil to a large heavy-bottomed pot over until shimmering but not smoking. Add onions, carrot, celery, and salt and cook, stirring occasionally, until vegetables are soft and lightly browned, 8-10 minutes. Reduce heat to medium-low and add garlic and cumin; constantly stir until fragrant, about 1-2 minutes. Stir in cooked beans, bean cooking liquid, chipotle sauce, and chicken stock. Increase heat to medium-high and bring to a boil. Reduce heat to low and simmer, uncovered, stirring occasionally, to blend flavors, about 30 minutes.
- Ladle 3 ½ cups of soup into food processor or blender, process until smooth, and return to pot. Stir together cornstarch and water in small bowl until combined. Gradually stir in cornstarch mixture into soup; bring to boil over medium-high heat, stirring occasionally, to fully thicken. Off heat, stir in lime juice and reserved ham. Top with garnishes and serve immediately.
