This is a simple flavorful rice that I came up with to as a compromise for my picky eater daughter. It closely resembles the rice served at the local Mexican restaurants in San Diego.

Number Of Ingredients 10

1 teaspoon olive oil
1 teaspoon butter
1/2 sweet onion, diced
1 cup rice
2 cups water
1 chicken bouillon cube
1/2 teaspoon kosher salt (less if regular salt)
1/4 cup mild canned enchilada sauce (not salsa)
1 -2 tablespoon grated carrot
1 -2 green onion, for garnish

Steps:

  • Saute onion in oil until translucent.
  • Add rice and saute a few more minutes.
  • Add remaining ingredients and bring to a boil.
  • Stir, cover and reduce heat to simmer.
  • Simmer for twenty minutes without removing lid.
  • Fluff with a fork and serve with chopped green onions on top.
  • Note: The mild enchilada sauce adds flavor without adding spiciness. If using hot enchilada sauce, I would cut the amount in half at least.

This Mexican Rice rivals any restaurant, is so easy to make at home and the perfect addicting side for all your Mexican dishes! It's light, fluffy, infused with flavor. This rice is already easy but I've also included alternate "lazy day" instructions in the NOTES with zero chopping for the easiest and tastiest Mexican rice! Also check out the notes for options to make Mexican Rice with black beans, peas, carrots and corn.

3 tablespoons olive oil
1/2 medium onion (chopped)
2 cups basmati rice ( well rinsed and drained*)
3 garlic cloves (minced)
1-3 jalapeno peppers (seeded, deveined, minced)
2 3/4 cups low sodium chicken broth
1 cup (8 oz.) tomato sauce
1 14 oz. can fire-roasted tomatoes (well drained)
2 teaspoons (or 2 chopped cubes) TOMATO bouillon with chicken flavor (see notes**)
3 tablespoons mild chopped green chiles
1/2 tsp EACH ground cumin, chili powder, dried oregano
1/4 tsp EACH ground coriander, smoked paprika, salt
finely chopped cilantro
lime juice

Steps:

  • Heat oil in a Dutch oven or large heavy pot over medium-high heat. Once hot, add onions and rice and sauté for 3 minutes then add jalapenos and sauté until rice is toasted, approximately 2-3 more minutes. Add garlic and sauté 30 seconds.
  • Stir in all remaining Rice ingredients (except for cilantro and lime juice garnish). Bring to a boil, cover, and reduce heat to LOW. Simmer 12-15 minutes, or until water is evaporated and rice is tender, stirring once at 8 minutes and replacing lid.
  • Once water is evaporated, remove from heat, stir, cover and let sit undisturbed for 10 minutes.
  • Add cilantro and lime juice if desired and fluff with a fork. Taste and season with additional salt or lime juice if desired.

1 c long grain rice I use quick cook jasmine rice
2 1/2 c water
2 chicken bouillon cube
2 tbsp canola oil
2 tbsp tomato paste
2 tbsp cilantro (fresh minced)
1 tsp garlic powder
1/2 tsp cumin
1/2 tsp chili powder
1/4 tsp salt
Scallions to garnish

Steps:

  • To a skillet, coat the rice, with the oil, chicken bouillon cubes, tomato paste, and spices. Set the heat to medium-low and allow the seasoned rice to warm through for 2 minutes stirring constantly.
  • Stir in the water and bring the pot to boil. Turn the heat to simmer and allow the rice to cook according to the rice package instructions. Once the water is absorbed, add the cilantro and fluffy the rice to blend. Top with sliced scallion.

1 1/2 cups long grain white rice
2 garlic cloves, minced
2 tablespoons vegetable oil
1/4 cup onion, finely diced
4 ounces el pato salsa fresca (or tomato sauce if you cant find el pato sauce)
2 1/2 cups chicken broth
1 teaspoon cumin
1 tablespoon chili powder
1/2 teaspoon sea salt
pepper

Steps:

  • in a bowl combine broth, cumin, chili powder, salt & half a can of el pato sauce (if you can't find el pato use regular tomato sauce).
  • brown rice, in hot oil, in a large skillet for approximately 5 minutes flipping occasionally.
  • add diced onion, minced garlic, sauté for 1 minute.
  • add seasoned broth, bring to a boil.
  • reduce heat to low, cover and simmer for 15 minutes. do not check on the rice before the 15 minutes is up, this will allow steam to escape and may make your rice turn out undercooked.
  • most of the water will absorb before the 15 minute time limit but keep covered and continue to steam for the entire 15 minutes. this will make for perfect rice that isnt crunchy.
  • after 15 minutes turn heat off, uncover & flip rice over. recover & let sit until everything else is ready. you can let the rice sit covered for up to 25 minutes which will cook out most of the moisture & leave perfect fluffy rice.
