CRISPY GARLIC BUTTER PARMESAN SMASHED POTATOES
Crispy Garlic Butter Parmesan Smashed Potatoes are fluffy on the inside and crispy on the outside, smothered in garlic butter and melted parmesan cheese! Much like buttery and garlicky French fries or crispy hot chips. Those crispy edges that send you over the edge!

Steps:
- Pre-heat your oven to broil (or grill) settings to medium-high heat (about 200°C | 400°F).
- Place potatoes in a large pot of salted water. Bring to the boil; cook, covered for 30-35 minutes or until just fork-tender. Drain well.
- Lightly grease a large baking sheet or tray with cooking oil spray. Arrange potatoes onto the sheet and use a potato masher to LIGHTLY flatten the potatoes in one piece (not too hard or they will end up mashed).
- Mix together the butter, garlic and parsley. Pour the mixture over each potato. Sprinkle with salt and pepper and lightly spray with olive oil spray.
- Broil (or grill) until they are golden and crispy (about 10-15 minutes). Remove from oven, sprinkle over the parmesan cheese and return to the oven until the cheese is melted.
- To serve, season with a little extra salt and parsley, and serve immediately.

- Preheat oven to 425.
- Poke holes in the red potatoes with a fork for proper ventilation.
- Place potatoes on a microwave safe plate or bowl and microwave for 5 minutes.
- Flip potatoes over and microwave for an additional 5 minutes or until soft - depending on your microwave, this could be less.
- Place potatoes onto a baking sheet lined with parchment paper.
- Use a potato masher or the bottom of a cup to mash the potatoes so they are about 1/2" thick.
- Use a pastry brush to brush each side of the potato with olive oil, which will help crisp up the skin.
- Season potato with salt and pepper ( you could also add other seasonings that you love at this stage)
- Bake smashed red potatoes for 14 minutes. Remember that timing in an oven largely depends on your oven - additionally gas ovens tend to run a bit hotter, so you may want to check potatoes for doneness around 10 minutes.
- Sprinkle with Parmesan cheese and return to oven for 1-2 minutes or until cheese is melted.
- Remove potatoes from oven and sprinkle with fresh parsley before serving.

Steps:
- Fill a large pot halfway with water and a few pinches of salt, bring to boil.
- Once boiling, add potatoes and cook for 25-30 minutes or until fork tender.
- Drain potatoes and let cool slightly.
- While cooling, mix together softened butter, garlic, parsley, salt, and pepper.
- Turn oven on to broil (550F).
- Add potatoes to parchment lined baking sheet. Using the back of a glass, press down to 'smash'
- Brush each potato with butter mixture. Broil in oven for 10 minutes, keeping an eye on them as you may have to move your tray around.
- Take out of oven and add parmesan cheese on top of potatoes. Broil for another 4-5 minutes.
- Enjoy!

SMASHED PARMESAN POTATOES

- Combine the potatoes in a large pot of water. Cover and bring the water to a boil. Continue boiling until the potatoes are tender, about 15 minutes. Drain, reserving 3/4 cup of the cooking liquid. Return the potatoes to the pot. Coarsely mash the potatoes, adding enough reserved cooking liquid to moisten. Using a large fork, stir in the Parmesan and the oil. Season the potatoes, to taste, with salt and pepper and serve.
SMASHED RED-SKINNED POTATOES WITH HERB OIL
Steps:
- Put the potatoes in a large pot and cover with 2 inches of water; stir in 1 tablespoon of salt. Bring to a boil over medium-high heat, then reduce the heat slightly and simmer until tender, about 12 minutes.
- While the potatoes are cooking, combine the parsley, olive oil, chives, oregano, garlic and 1/4 teaspoon salt in a blender and puree until almost smooth. If it needs more liquid, add a little water, 1 tablespoon at a time, until the mixture blends easily.
- Drain the potatoes and return to the pot. Pour in the warm milk and melted butter and coarsely mash with a potato masher. Transfer the mashed potatoes to a serving bowl and top with the herb oil.
PARMESAN SMASHED POTATOES
Steps:
- Place the potatoes and 1 tablespoon of salt in a 4-quart saucepan with cold water to cover. Bring to a boil, lower the heat, and simmer covered for 25 to 35 minutes, until the potatoes are completely tender. Drain.
- In a small saucepan, heat the half-and-half and butter. Transfer the potatoes to an electric mixer fitted with the paddle attachment and mix them for a few seconds on low speed to break them up. Slowly add the hot cream and butter to the potatoes, mixing on the lowest speed (the last quarter of cream and butter should be folded in by hand). Fold in the sour cream, Parmesan, the remaining salt, and pepper; season, to taste, and serve immediately. If the potatoes are too thick, add more hot cream and butter.
- Keep the smashed potatoes hot in a heat-proof bowl set over simmering water.

- 1. Cut your potatoes in half or quarters, depending on size, & put in a Dutch Oven w/ enough water to cover. I like to add to the water to cook with the pots: some lemons or onion(if I have any leftover from something else); Kosher salt, a chicken bouillon cube, & minced garlic to cook throughout in the potatoes for added flavor.
- 2. Cook about 15 mins. on high. You don't need them as soft as for regular mashed/whipped potatoes. Drain & discard the onions or lemons, if you cooked them w/ it.
- 3. When done, simply smash them w/ a potato masher. Add butter, parm, parsley torn up, white pepper (or black), & see if you want more salt. I add garlic powder, always. Add more of whatever to your taste. I always add green onions diced to mine, & like the (scallions) green portion on top for garnish. I don't add milk or cream to this but some of you may want to do that. Also, sometimes I add fried bacon bits, if I have leftover bacon from something else. Enjoy!
