This No-Peek Chicken Casserole has just 5-ingredients. With chicken breast, rice, cream of mushroom soup, and cream of celery soup, you can have this one-pan meal ready in 10 minutes!

1 (6 oz.) package Uncle Ben's long grain wild rice
1 (10.25 oz.) can cream of mushroom soup
1 (10.25 oz.) can cream of celery soup
1 1/2 cans water (use empty soup can)
1 1/2 pounds boneless, skinless chicken breasts or thighs
kosher salt and freshly ground pepper (to taste)

Steps:

  • Preheat oven to 350 degrees F.
  • Lightly grease a 9x13-inch baking dish with non-stick cooking spray.
  • Combine rice, soups, and water in baking dish and mix together until combined.
  • Place chicken on top of rice and season with salt and pepper.
  • Cover the dish with aluminum foil and seal tightly.
  • Bake for 1 hour and 30 minutes, or until rice has absorbed all liquid.
  • No peeking! Keep the dish covered while baking. I know it's tempting but I promise it's worth it.
  • Serve and enjoy!

1 c uncooked long-grain rice
1 can(s) (10 3/4 oz.) cream of mushroom soup
1 can(s) (10-3/4 ounce) can cream of celery soup
1 pkg onion soup mix (from a 2-ounce box)
1 soup can cold water
1 clove garlic, crushed
1 tsp chopped fresh parsley
1 tsp worcestershire sauce
1 chicken (3-1/2 to 4 pounds), cut into 8 pieces
paprika for sprinkling

Steps:

  • 1. Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking dish with cooking spray.
  • 2. In a large bowl, mix together rice, soups, soup mix, water, garlic, parsley, and Worcestershire sauce.
  • 3. Pour mixture into prepared pan. Press chicken into mixture. Sprinkle with paprika, then cover tightly with aluminum foil.
  • 4. Bake 1-1/4 hours. Do NOT open cover (not even to peek) during baking.

Steps:

  • (You can add another can of water for moister rice.).
  • Chicken breasts or tenders.
  • In a greased 9 x 13 pan, mix the box of rice, cans of celery and mushroom soup and.
  • one can of water. I always add the extra can of water because I like moist rice.
  • Arrange the raw chicken on top of the rice mixture....
  • Cover and seal with foil.......
  • Bake at 350 degrees for 2 1/2 hours and "Don't Peek!".

  • Pre cook rice 10-15 minutes.
  • Spray 9x13 pan with Pam.
  • Place chicken in pan. Mix soups, wine, rice, curry and mushrooms. Pour over chicken. Sprinkle Lipton onion soup mix on top. Cover with foil.
  • Bake 350 for 2 1/2 hours-no peeking;).

1 (10 ounce) package frozen baby carrots
4 boneless skinless chicken breast halves
1 (4 ounce) can whole mushrooms, drained
1 small sweet red pepper, cut in bite-size strips
3 tablespoons hoisin sauce
2 cloves garlic, minced
1 teaspoon grated gingerroot
1 dash ground red pepper
1/4 cup sliced green onion
hot cooked rice (optional)

Steps:

  • Heat oven to 425 degrees.
  • Run carrots under cold water to thaw.
  • Drain well.
  • Rinse chicken; pat dry.
  • Place one chicken breast half in the center of an 18x12” piece of heavy foil.
  • Repeat with remaining chicken and three additional foil pieces.
  • Divide carrots, mushrooms, and sweet pepper strips evenly among foil pieces.
  • Stir together hoisin sauce, garlic, ginger, and ground red pepper.
  • Drizzle over chicken and vegetables.
  • Bring up two opposite sides of foil and seal with a double fold.
  • Fold remaining ends to completely enclose the chicken and vegetables, leaving space for steam to build.
  • Repeat with each foil packet.
  • Place on a 15x10x1” baking pan.
  • Bake for 30 minutes or till chicken is tender and no longer pink.
  • To serve, carefully open foil packets.
  • Sprinkle with green onion.
  • If desired,serve over rice.
  • Spoon some of the cooking juices over all.
  • This recipe can also be placed on your grill.
  • Cook for 20- 30 minutes depending on how hot your grill is.
