OVEN BAKED RED SNAPPER

One 1-pound red snapper, cleaned
3 cloves garlic, minced
1 jalapeno, minced
Kosher salt and freshly ground black pepper
All-purpose seasoning, for seasoning the fish
5 tablespoons butter, plus more for greasing foil
1/4 pound okra, chopped
1 red bell pepper, diced
2 tablespoons chopped fresh parsley leaves
2 tablespoons white wine

Steps:

  • Preheat oven to 450 degrees F.
  • Wash the fish thoroughly and dry on paper towels. Score both sides of fish 3 times. Combine the minced garlic and jalapeno and stuff mixture into each of the 6 slits. Rub the fish with salt, pepper and all-purpose seasoning. Let fish marinate for 30 minutes (or overnight in the refrigerator for more intense flavor.)
  • In a medium skillet over medium heat, melt 1 tablespoon butter. Add the okra and bell pepper and cook until just tender, about 5 minutes. Make a slit down the center of the fish's belly. Stuff the belly of the fish with the okra and peppers and the chopped parsley. Place the fish on a rectangular piece of buttered foil. Place the remaining butter on top of the fish and drizzle with with the white wine.
  • Seal the fish in the foil, but leave a slight opening to allow the steam to escape. Place the fish on a baking sheet and bake until cooked through, about 10 to 15 minutes.
  • Remove from the oven, and transfer from foil to a serving dish, along with the juices collected in the foil.

2 egg whites
2 tablespoons chopped fresh parsley
Dijon mustard
1 teaspoon dried tarragon
3 tablespoons fresh breadcrumbs

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Spread butter into the bottom of a 9x13 inch baking dish.
  • Arrange fish fillets in a single layer over the bottom of the pan, and sprinkle with salt and pepper.
  • 2 Bake for about 12 minutes in the preheated oven.
  • Meanwhile, whip egg whites in a clean dry bowl until stiff peaks form.
  • Fold in the parsley, mustard and tarragon.
  • Spread the egg white mixture over the fish in a layer about 1 inch thick.
  • Sprinkle bread crumbs over the top.
  • 3 Return to the oven, and bake for about 6 more minutes, or until meringue is golden, and fish flakes with a fork.

1 (3 to 4 pound) red snapper or 2 (1 1/2 to 2 pound), gutted, gills removed and scales left on
2 tablespoons olive oil
Salt and pepper
Extra virgin olive oil and lemon wedges, for garnish

Steps:

  • Preheat oven to 400 degrees F. Rub the fish with olive oil and place it in an oiled oval pan, gratin dish, or sheet pan. Bake for about 15 minutes per inch of thickness at the thickest part of the fish. Check for doneness by carefully sliding a paring knife into the back at the thickest part, gently lifting the top fillet, and peeking inside to make sure the fish pulls away from the bone and the flesh is opaque (but still moist) rather than translucent and raw. Season with salt, pepper, olive oil and lemon.;

2 (6 ounce) red snapper filets, scaled but skin on
1 large tomato, or 2 plum tomatoes, cut into 1/4inch thick slices
Salt and pepper
Fresh basil, mint or dill leaves

Steps:

  • Preheat the oven to 450 degrees. Tear 2 pieces of parchment or aluminum foil, about 12-inch square.
  • Drizzle some olive oil in center of each square and spread with your fingers. Set the filets, skin side down, over the olive oil in the foil and season with salt and pepper. Drizzle more olive oil over fish, then top with tomatoes and then fresh herbs. Drizzle drops more olive oil and season with salt and pepper.
  • Wrap, deli style. Set package on a baking dish or sheet and bake for 30 minutes or until tender. While snapper is cooking, make orange rice.

2 pickled jalapeno chilies, minced
2 cloves garlic, minced
1 cup coarsely chopped cilantro
salt and pepper, to taste
thinly sliced green onion, and top as garnish
6 lime wedges

Steps:

  • Arrange fish in glass baking dish.
  • Combine lime juice, jalapeno juice, and cumin; pour over fish.
  • Arrange onion, jalapeno chilies, garlic, and cilantro over fish.
  • Refrigerate, covered, 2 hours, turning fish once.
  • Bake, uncovered, at 400 degrees until fish is tender and flakes with a fork, about 10 minutes.
  • Sprinkle fish lightly with salt and pepper.
  • Arrange fish on serving platter; sprinkle with green onion and serve with lime wedges.

1 medium onion, chopped
1/2 green pepper, chopped
2 -3 garlic cloves
16 ounces whole tomatoes, sliced up
1/2 cup white wine

10 -12 Greek olives, pitted

Steps:

  • Saute onion, pepper, and garlic in hot oil. Add tomatoes; simmer 15 minutes.

  • Dot with a little butter.
