A light lunch or dinner party starter of puff pastry topped with mustard crème fraîche, flaked salmon fillets, and baby spinach

320g sheet ready-rolled puff pastry
1 egg yolk , to glaze
2 skinless salmon fillets
3 tbsp crème fraîche
1 tbsp wholegrain mustard
large handful baby spinach
mixed leaves tossed with your favourite dressing, to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6 and line a large baking sheet with baking parchment. Unroll the pastry sheet and score a border about 1cm from the edge. Prick the middle area with a fork all over and glaze the border with the egg yolk. Bake the pastry for 15 mins until puffed up and almost cooked.
  • Meanwhile, put the salmon fillets in a microwaveable dish and cover with cling film. Cook in the microwave on High for 2 mins until just cooked. Set aside to cool for 1-2 mins, then flake into chunky pieces. Mix the crème fraîche with the mustard in a small bowl and season.
  • Take the pastry out of the oven and flatten the middle area with the back of a spoon. Cover the base with the crème fraîche sauce, then scatter the spinach and salmon flakes over. Bake in the oven for a further 5 mins or until the pastry is cooked and golden. Serve with dressed mixed leaves.

This is a classic combination for a quiche, but it's lighter, with a whole-wheat and olive oil crust. If you don't have the time to make the crust, store bought will work just fine.

1 yeasted olive oil pastry (1/2 recipe)
1 1/2 pounds fresh spinach, stemmed and washed in 2 changes of water, or 3/4 pound baby spinach, rinsed
1 tablespoon extra virgin olive oil
1 medium onion, finely chopped
Salt and freshly ground pepper to taste
1 teaspoon fresh thyme leaves, coarsely chopped, or 1/2 teaspoon dried thyme
4 eggs
3/4 cup low-fat milk
2 ounces Gruyere cheese, grated (1/2 cup)
1 ounce freshly grated Parmesan (1/4 cup)

Steps:

  • Preheat the oven to 350 degrees. Oil a 10-inch tart pan and line it with the pastry. Keep it in the refrigerator while you prepare the filling.
  • Steam the spinach above an inch of boiling water for 2 to 3 minutes, until wilted. You will probably have to do this in batches. I like to use a pasta pot with an insert for steaming spinach, as I can get a lot of it into the insert. Rinse briefly with cold water, squeeze out excess water and chop medium-fine.
  • Heat the olive oil over medium heat in a large, heavy skillet and add the onion. Cook, stirring often, until it is tender and beginning to color, about 8 minutes. Add the spinach, thyme and salt and pepper to taste, and stir together. Remove from the heat.
  • Whisk the eggs in a large bowl. Add salt to taste (I use about 1/2 teaspoon) and whisk in the milk. Stir in the onion and spinach mixture and the cheeses. Scrape into the pastry-lined tart pan. Place in the oven and bake 40 to 45 minutes, until tart is set and beginning to color on the top. Remove from the heat and allow to cool for at least 15 minutes before cutting. Serve warm or room temperature.

A Kraft tart which I've so substantially adapted that I've pretty much de-Krafted it, but I have left in the Philadelphia cheese as an echo of its culinary ancestry. If you haven't used leek, onion and garlic together, they offer a subtle blend of flavours when combined. If time isn't a factor and you want to make a healthier crust, you could try a rice crust either from my Recipe #147043 or my Recipe #147047. Some conversions: 220g = 7oz; 100g = 31/2 oz; 210g = approximately 61/2 oz.

1 (220 g) frozen shortcrust pastry, case thawed
20 g unsalted butter
1 leek, thinly sliced
1 small onion, minced
1 -3 garlic clove, minced (depending on your relationship with garlic)
1/2 teaspoon cumin (optional) or 1/2 teaspoon cumin, to taste (optional)
1/4 teaspoon nutmeg (optional) or 1/4 teaspoon nutmeg, to taste (optional)
100 g baby spinach leaves
1 (210 g) can red salmon, drained, bones removed, broken into chunks (it is not essential to remove the bones -- you can simply crush them, they are, after all, an excell)
1/2 lemon, zest of, finely grated (OMIT if you're not fond of lemony flavours)
100 g philadelphia light spreadable smoked salmon or 100 g cream cheese
2 eggs
salt, to taste
fresh ground black pepper, to taste
1/2-1 cup grated parmesan cheese (optional)
dill sprigs (to garnish) or parsley sprig, for garish
mixed salad green, to serve

Steps:

  • Pierce the pastry well with a fork and bake in a hot oven 200°C/400°F/gas mark 6 for 8 minutes; remove it from the oven and allow it to cool slightly.
  • Heat the butter in a medium-sized (preferably non-stick) pan and sauté the leek for 3-4 minutes until softened, then add the onion and garlic, and cumin and nutmeg (if using), making sure that all the ingredients are well-combined and sauté for an additional 1-2 minutes; stir in the baby spinach leaves, allow them to wilt, add the salmon and lemon zest (if using) and stir all the ingredients thoroughly to ensure that they are well-combined.
  • Spoon the salmon mixture evenly into the pastry case.
  • Whisk together the Philadelphia cheese, eggs and salt and pepper, to taste; then pour this mixture over the salmon and vegetables; sprinkle with the parmesan (if using).
  • Bake the tart in a moderate oven at 180°C/350°-375°F/4-5 gas mark for 20-25 minutes or until the filling is set; garnish with sprigs of dill or parsley and serve with a green salad.

  • Preheat oven to 375 F. Combine water and vinegar in a small bowl. Combine flour and salt in another bowl. Using a pastry cutter or your fingers, cut butter and cream cheese into flour mixture until mixture resembles coarse crumbs with some larger pieces remaining.
  • Add water mixture to dough in a slow, steady stream, stirring, until mixture just begins to hold together. (Alternatively, pulse ingredients in a food processor.) Turn out onto a piece of plastic wrap. Press dough into a disk. Refrigerate until firm, about 1 hour or overnight.
  • Filling Directions: Add olive oil to frying pan on medium-high heat. Add the onion and cook until soft and lightly colored (about 7 minutes). Be sure to stir the onions occasionally. Add the potatoes, and taragon(or thyme) salt, and some crushed pepper. Towards end of the cooking, add in the cooked salmon and spinach. Cook for about another 2 minutes.
  • While this cooks, in a medium sized bowl whisk eggs with cream and milk. Stir in the cooled salmon mixture.
