I came up with this recipe while my son was home from the Navy. He loves Thai food, and I wanted to make something special but simple. There wasn't a noodle left in the bowl. -Jana Rippee, Casa Grande, Arizona

8 ounces thin flat rice noodles
1 tablespoon curry powder
1 pound uncooked shrimp (31-40 per pound), peeled and deveined
1 can (13.66 ounces) light coconut milk
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup minced fresh cilantro
Lime wedges, optional

Steps:

  • Soak noodles according to package directions. Meanwhile, in a large dry skillet over medium heat, toast curry powder until aromatic, about 1-2 minutes. Stir in shrimp, coconut milk, salt and pepper. Bring to a boil. Reduce heat; simmer, uncovered, 5-6 minutes or until shrimp turn pink., Drain noodles. Add noodles and cilantro to pan; heat through. If desired, serve with lime wedges.

This delicious dish will look and taste like it is professionally done, but actually is so simple to make! The flavors are rich and delicate, like all great Thai cuisine. It is slightly sweet and slightly spicy, harmonizing wonderfully with the shrimp. Eat it by itself or serve it over your favorite pasta.

1 1/2 lbs shrimp
1 tablespoon rice wine or 1 tablespoon dry sherry
1 teaspoon brown sugar
2 teaspoons soy sauce
1 green onion, washed and chopped
pepper, to taste
salt, to taste
1/4 cup unsweetened coconut milk
2 tablespoons Chinese white rice vinegar (OR white wine vinegar)
1 tablespoon honey
1/4 teaspoon crushed red pepper flakes
1 tablespoon minced gingerroot (OR 1 teasp. ground ginger)
1 cup chopped plum tomato
3 tablespoons oil, for stir-frying (preferably wok oil)
1/4 teaspoon chili paste with garlic or 2 minced garlic cloves
1 1/2 tablespoons chopped fresh cilantro (OR 1tsp. dry cilantro)
6 ounces thin whole wheat spaghetti

Steps:

  • Rinse the shrimp under warm running water. Cut in half lengthwise. Add to the marinade ingredients and marinate the shrimp for 25 minutes in the refrigerator. Whisk together the coconut milk, vinegar, honey, and the crushed red pepper. Set aside. Prepare the ginger and tomatoes.
  • Heat the wok over medium-high to high heat. Add 2 tablespoons oil. When the oil is hot, add the shrimp. Stir-fry until they turn pink. Remove from the pan.
  • Add 1 tablespoon oil to the wok. When the oil is hot, add the minced ginger. Stir-fry until aromatic (about 30 seconds). If using ground ginger, simply mix it into the tomatoes and add the tomatoes to the wok. Stir-fry for 2 minutes. Add the sauce. When the sauce is bubbling, add the shrimp. Stir in the chili paste or garlic. Let simmer for 5 minutes.
  • Cook the pasta separately as directed. Serve over the cooked spaghetti or stir the cooked pasta right into the shrimp mixture. Garnish with cilantro and enjoy!

1 large tomato, diced
4 green onions, diced
2 pounds cooked shrimp, peeled and deveined
1 ½ cups prepared Thai peanut sauce

Steps:

  • Bring a large pot of water to a boil. Add rice vermicelli, and cook 3 to 5 minutes or until al dente; drain.
  • In a medium bowl, toss together rice vermicelli, tomato, green onions, shrimp, and peanut sauce. Cover, and chill in the refrigerator 8 hours or overnight.

1/2 lb thin rice noodles
1 1/2 tablespoons sesame oil
2 tablespoons vegetable oil
2 tablespoons honey
3 tablespoons soy sauce
2 tablespoons balsamic vinegar
1 1/2 tablespoons rice wine vinegar
1/2 teaspoon cayenne pepper
1/2 tablespoon ginger, grated
1 orange bell pepper, sliced into thin strips
3 cups chicken breasts, fully cooked and sliced into thin strips
1 cup peas
8 green onions, chopped
3/4 cup chopped walnuts
1/2 cup whole cashews
3/4 cup cilantro, chopped
1 lemon, sliced for garnish

Steps:

  • Cook pasta according to package directions. Drain well. Set aside.
  • In a bowl add sesame oil, vegetable oil, honey, soy sauce, balsamic, rice wine vinegar, cayenne and ginger. Whisk mixture well.
  • In a skillet over medium high heat add 4 tbsp of sesame oil mixture. Add sliced bell peppers and cook for 2 minutes or until lightly soft. Add chicken, peas, green onions, walnuts and cashews. Heat until warmed through.
  • On a serving platter add cooked rice noodles. Top noodles with bell pepper and chicken mixture. Drizzle with remaining sesame oil mixture and chopped cilantro. Garnish with lemon wedges.

8 cups water
1 (8 ounce) package dry flat rice noodles
½ cup fish sauce
⅔ cup fresh lime juice
2 teaspoons white sugar
⅓ cup oyster sauce
¼ cup chile-garlic sauce (such as Sriracha®)
⅔ cup chicken stock
2 cloves garlic, minced
2 skinless, boneless chicken breast halves, cubed
⅔ cup vegetable oil
12 ounces edamame in the pod - thawed if frozen, shelled
12 green onions, sliced
1 cup finely diced eggplant
4 cloves garlic, minced
6 ounces mushrooms, diced
1 (4 ounce) can sliced water chestnuts, drained
1 pound fresh bean sprouts
¼ cup chopped fresh cilantro
½ cup shredded carrot

Steps:

  • Bring 8 cups water to a boil in a large saucepan. Turn off heat.
  • Place rice noodles into the hot water and soak for 20 minutes. Drain noodles and set aside.
  • Whisk fish sauce, lime juice, sugar, oyster sauce, chile-garlic sauce, chicken stock, and 2 cloves minced garlic together in a saucepan.
  • Bring to a boil; reduce heat to low, and simmer sauce while you prepare other ingredients.
  • Cook and stir chicken in a skillet with vegetable oil until no longer pink in the center and juices run clear, 5 to 10 minutes. Remove chicken with a slotted spoon, and set aside.
  • Stir shelled edamame, green onions, eggplant, 4 cloves minced garlic, mushrooms, water chestnuts, bean sprouts, cilantro, carrots, and cooked chicken into the same skillet, and cook and stir until eggplant and edamame are tender and the sauce has thickened slightly, about 15 minutes.
  • Serve over rice noodles.

1 cup minced fresh basil
3 tablespoons lime juice
4 teaspoons Thai red chili paste
1 garlic clove, minced
1 teaspoon minced fresh gingerroot
1-1/2 pounds uncooked shrimp (26-30 per pound), peeled and deveined
12 ounces uncooked angel hair pasta
4 teaspoons olive oil, divided
1 can (14-1/2 ounces) chicken broth
1 can (13.66 ounces) coconut milk
1 teaspoon salt
1 tablespoon cornstarch
2 tablespoons cold water
2 tablespoons grated lime zest

Steps:

  • Place the first five ingredients in a blender; cover and process until blended. Remove 1 tablespoon mixture; toss with shrimp., Cook pasta according to package directions. Meanwhile, in a large nonstick skillet, heat 2 teaspoons oil over medium-high heat. Add half of the shrimp mixture; stir-fry 2-4 minutes or until shrimp turn pink. Remove from pan; keep warm. Repeat with remaining oil and shrimp mixture., Add broth, coconut milk, salt and remaining basil mixture to same pan. In a small bowl, mix cornstarch and water until smooth. Stir into broth mixture. Bring to a boil; cook and stir 1-2 minutes or until slightly thickened. Stir in lime zest., Drain pasta; add pasta and shrimp to sauce, tossing to coat.

1 pound large shrimp, peeled and deveined

Steps:

  • Bring a large pot of salted water to a boil. Add pasta and cook 4 minutes less than package instructions. Add green beans and cook until crisp-tender, about 3 more minutes. Reserve 1/2 cup pasta water, then drain.
