I stole this from a friend who is doing weight watchers. I didn't find much veggie inspiration in her books but this looked great. She told me I have to add this sentence in "3 weight watchers POINTS values per serving" whatever that means...

low-fat cooking spray, for frying
1 onion, chopped
2 garlic cloves, crushed
2 tablespoons curry powder
1 aubergine, diced
175 g dried red lentils
600 ml vegetable stock
1 pinch salt
100 ml low-fat coconut milk
2 tablespoons chopped fresh coriander

Steps:

  • Spray pan with oil and cook the onion and garlic until soft.
  • Stir in curry powder and cook for a further minute.
  • Add aubergine, lentils and stock to the pan.
  • Bring to the boil and simmer uncovered for 30 mins - stir frequently.
  • If the lentils are not tender and mushy, boil the curry vigorously for 5 minutes.
  • Add salt, coconut milk and coriander.
  • Stir and serve.

An Indian dish that is so full of flavor. Serve over rice or with Roti. If not using baby eggplant just cut into large pieces and coat but being careful when cooking so they don't dissolve into the sauce. Tofu can be used in addition or substitution. 1 small yellow onion, coarsely chopped
2 inches fresh ginger, coarsely chopped
6 garlic cloves, peeled and chopped
1 tablespoon garam masala
1 tablespoon brown sugar
1 tablespoon canola oil
6 eggplants (baby or Indian)
15 ounces diced tomatoes (canned or 2 large tomatoes)
1 medium yellow onion, diced
chopped cilantro leaf (to garnish)
2 tablespoons canola oil
1/2 tablespoon ground coriander
1 teaspoon paprika (Hot smoked or sweet your choice)
1/2 teaspoon turmeric
1 teaspoon ground cayenne pepper
1 tablespoon brown sugar

Steps:

  • In a blender, combine the ingredients for the masala paste blend it to a smooth paste; set this masala paste aside.
  • Cut into the baby eggplants up to about 1/4 inch from the stem, without breaking up the stem, into roughly lengthwise quarters gently separate at the slits, while holding the stem tight, and slather on the masala paste into the slits of the eggplant, in a thin layer, taking care not to break apart the eggplant; set aside. Or use the long thin eggplant cut into 1 inch slices and make a cut halfway through to slather the masala into and on the slices.
  • Heat 2 Tbsp of oil in a pan, add the diced onions and a pinch of salt and any remaining marsala paste left over after coating the eggplants; saute till onion turns translucent about 4-5 minutes.
  • Add the diced tomatoes and the rest of the spices, stir till well-incorporated.
  • Season with salt to taste.
  • Gently place the 'stuffed and coated' eggplants into the sauce so they are mostly submerged, cover and let it simmer over medium low heat till eggplant changes color and is cooked through but not mushy about 20 minutes.
  • Add a little water if there is not enough moisture for cooking, try not to stir at this point as the eggplants might fall apart.
  • When tender stir gently, garnish with cilantro and serve warm with roti or naan or over basmati rice.

This is the recipe I came up for very flavorful, rich, and mild eggplant curry. It's one of my favorite comfort foods. :)

2 large eggplants
cooking spray
1 tablespoon butter
1 teaspoon olive oil
1 cup chopped yellow onion
2 garlic cloves, minced
1 green onion, in 1/2 to 1 inch slices
14 -16 ounces extra firm tofu, drained in colander then cubed (use fresh tofu rather than packaged, if possible)
1 1/4 teaspoons of your favorite curry powder, to taste
1/4 teaspoon ground cumin, to taste
3 tablespoons thick coconut milk (or if it's not thick, at least 1/2 cup, to taste)
1 teaspoon lemon juice
1 dash cayenne, to taste

Steps:

  • Preheat oven to 350 degrees F.
  • Cut the eggplants lengthwise and lay cut-side down on a cooking-sprayed pan; bake eggplant halves for 20 to 30 minutes until very soft.
  • Meanwhile, in a skillet heat the butter and olive oil over medium high and sauté the onion and garlic together until soft.
  • When the eggplant is done, scoop the insides out of the peel and place in a food processor together with the sautéed onion and garlic; whir for 1 minute.
  • Place whirred eggplant mixture in a saucepan and add remaining ingredients; stir well and heat over medium high for about 3 to 5 minutes or until tofu is heated through (don't heat for too long or the coconut milk will lose its taste).
  • I eat it just as is, but you can serve it over cooked rice; some people like to add chickpeas.
  • Note: I highly recommend you use fresh tofu, if you can get it; I purchase it at my local Asian market.

  • Preheat the oven to 190°C/fan170°C/gas 5. Place 1 large aubergine, cut into chunks, and 1 green pepper, deseeded and sliced, in a shallow roasting tin. Drizzle with 3 tbsp vegetable oil and sprinkle with 1 tsp mild chilli powder. Stir well to coat, then bake for 20-25 minutes, until golden brown.
  • Meanwhile, in a pan, gently fry 1 onion, chopped, for 5 minutes, until soft. Add 1 tsp black mustard seeds and cook until they pop, then stir in 2 tbsp your favourite medium curry paste.
  • Stir in 150g dried red lentils and 450ml vegetable stock and simmer for 15-20 minutes, until the lentils are tender.
  • Stir in a handful chopped fresh coriander and the pepper and aubergine. Serve with warm naan bread.
