Strawberry-Quinoa Spinach Salad image

We make quinoa with spinach and strawberries year-round, but it's most fun when we go to the farmers market to get the season's first berries. -Sarah Johnson, Indianapolis, Indiana

2 cups water
1 cup quinoa, rinsed
6 cups torn fresh spinach (about 5 ounces)
2 cups sliced fresh strawberries
1/2 cup chopped walnuts, toasted
1/2 cup reduced-fat red wine vinaigrette
1/4 cup shredded Dubliner or Parmesan cheese
1/4 teaspoon freshly ground pepper

Steps:

  • In a small saucepan, bring water to a boil. Add quinoa. Reduce heat; simmer, covered, 12-15 minutes or until water is absorbed. Remove from heat; fluff with a fork. Cool slightly., In a large bowl, combine spinach, strawberries, walnuts and quinoa. Drizzle with vinaigrette; toss to coat. Sprinkle with cheese and pepper.

Make a delicious and refreshing quinoa salad with strawberries, cucumber and feta

1 cup dry quinoa
1 cup chopped cucumber
1 cup chopped strawberries
1 cup crumbled feta
1/2 cup almond slices
1/4 cup chopped fresh mint
1/4 cup extra virgin olive oil
2 tbsp white balsamic vinegar
Pinch of coarse sea salt

Steps:

  • Prepare quinoa according to package instructions. Cool and fluff with a fork.
  • While the quinoa cooks and cools, chop the cucumbers and strawberries and slice the mint. Mix together the olive oil and the white balsamic in a small mixing bowl.
  • Pour the cucumbers, strawberries, feta, almonds, mint and vinaigrette over the cooled quinoa. Sprinkle a pinch of salt on top and toss to combine thoroughly. Serve chilled or at room temperature.

This side dish brings all the flavors from a classic strawberry and spinach salad with poppy seed dressing into a light but filling grain salad. The mildly creamy dressing keeps the salad moist without weighing it down. Soaking the shallot in ice water cuts some of its sharp bite and prevents the entire dish from tasting like onion.

  • Cook 1 cup quinoa; let cool. Soak 1 thinly sliced shallot in ice water, 10 minutes. Drain and toss with the quinoa along with 2 cups baby spinach, 1 cup diced strawberries and 1/4 cup chopped salted almonds. Whisk 2 tablespoons each sour cream, olive oil and cider vinegar with 1 teaspoon each sugar, poppy seeds and kosher salt; season with pepper. Toss the quinoa salad with the dressing. Let stand 10 minutes.

Once the liquid starts simmering, turn the temperature down to low and place the lid on, cooking for about 15 minutes. Remove the saucepan from heat and allow it to sit for 10-15 minutes before removing to a large salad bowl and allowing it to cool.
  • Once cooled, add the cooked (or crispy) chickpeas, cucumber, bell pepper, fresh strawberries, pepitas, sunflower seeds, candied nuts and goat cheese.
