This is a very good cube steak recipe if your looking for something a little different from chicken fried.

2 lbs pork cube steaks
1 bunch green onion
1 red onion, chopped
1 white onion, chopped
1 (12 ounce) can tomato paste
2 tablespoons lemon juice
1/2 teaspoon rosemary
1 pinch salt
1 pinch pepper

Steps:

  • In a teaspoon of oil of choice, (I prefer vegetable) sauté all of the onions until they are slightly limp on high heat.
  • Add all other ingredients except steak and turn to medium heat and let thicken.
  • Cook steaks in separate pan until they are no longer pink.
  • Once sauce is thick, serve on top of steaks.

Grilled Cube Steaks With Red Onion Sauce image

This was something I threw together for dinner tonight. I was tired of the same old cube steak recipes. This was a little different. To make the steaks a little more tender, I let them marinate in Italian dressing all day. When I came home they were ready to pop on the grill. While they grilled, I made the sauce. It's super easy. I'll give you the ingredients I used, but you can experiment to adjust to your tastes. This recipe is for 2 servings, but you can change to allow more. Steak fries, baked potato, steamed broccoli, corn, pasta salad or tossed salad would be some great sides to serve with this dish.

2 beef cube steaks
2 tablespoons bottled Italian dressing (homemade or lite Italian is fine, also)
1 tablespoon McCormick's Montreal Brand steak seasoning
1 tablespoon olive oil
1 red onion, very thinly sliced
1/2 teaspoon dried basil
1/2 teaspoon dried rosemary
2 tablespoons flour
1 tablespoon sugar
1/2 cup Chardonnay wine
1 cup stock (veg or chicken or beef.. I used veg)
salt and pepper

Steps:

  • Place steaks and 2 Tbsp of Italian dressing in freezer zip bags to marinate for a couple hours or all day.
  • When ready to grill lightly coat both sides of each steak with Montreal Steak Seasoning.
  • Heat grill to med-hi.
  • Cook steaks about 10 minutes for each side.
  • For the sauce:.
  • Heat the oil in a large heavy frying pan and add the onions.
  • Cook on a low heat for about 10-15 minutes until soft. Stir in the basil/rosemary and cook for another 5 minutes.
  • Turn the heat up and add the sugar, let the onions caramelize slightly by stirring over a medium high flame for 3 minutes, add the flour and cook for a few minutes before adding the stock and wine.
  • Taste and then add salt and pepper.
  • Serve over steaks.

PORK WITH SWEET & SOUR ONION SAUCE

This healthy, meaty main uses lean pork fillets and is on the table in just 30 minutes - serve with your choice of grain

250g mixed basmati rice and wild rice
600g pork fillet , cut into 4cm-thick slices
2 tbsp coarse black pepper (freshly ground)
2 tbsp olive oil
1 large red onion , halved and sliced
150ml cider vinegar
75ml maple syrup
small bunch parsley , chopped

Steps:

  • Boil the rice in plenty of water, following pack instructions, until cooked. Drain, return to the pot and cover to keep warm.
  • Meanwhile, sprinkle the meat on all sides with the black pepper and some salt. Heat 1 tbsp of the oil in a large frying pan. Sear the meat on both sides until nicely browned. Remove from the pan.
  • Add the remaining oil and the onion to the pan. Cook for 5 mins, then pour in the vinegar and let reduce for 1 min. Stir in the maple syrup, then return the pork to the pan and heat for 5 mins until cooked through. Serve the pork and sauce spooned over the rice and scattered with the parsley.

2 tablespoons butter
3 medium onions, coarsely chopped
1 teaspoon white sugar
½ teaspoon paprika
1 tablespoon white vinegar
1 cup chicken broth
1 slice dark rye bread, torn into pieces
salt and pepper to taste

Steps:

  • Melt the butter in a large skillet over medium heat. Add onions, cook and stir until lightly browned. Sprinkle in the sugar, and continue cooking until onions are deep golden brown, about 10 minutes. Stir in the chicken broth and vinegar and season with paprika. Mix in the bread until dissolved. Bring to a boil, then simmer over low heat for 3 minutes.
  • Transfer the mixture to a blender or food processor, and blend until smooth. Serve with pork or beef.

4 beef cube steaks (1 1/2 lbs)
2 large onions (cut in half and thin sliced)
2 leeks (white and some green thin sliced)
1 teaspoon garlic, minced
1 1/2 teaspoons roasted garlic, minced
2 eggs, lightly beaten
1 teaspoon Worcestershire sauce
25 saltine crackers, munched
1/2 teaspoon paprika
1 teaspoon dried thyme
salt
pepper
1 tablespoon olive to saute beef and vegetables
2 cups beef broth
1 tablespoon tomato paste
1/2 cup water
1 tablespoon cornstarch
2 tablespoons fresh parsley

Steps:

  • Breading -- First I take my saltines in a large baggie and close and then pound with my mallet, rolling pin, heavy pan, roll with your rolling pin. Anything you want to crunch them up. You can use your food processor too, but then you need to clean it. The baggie is the easy method.
  • Pour the crumbs into a small pie pan or small bowl and add the paprika, thyme, salt and pepper and mix well.
  • Steak -- In a small bowl or dish, add the eggs and worcestershire sauce, mix and then dredge each piece of meat into the egg mixture and then into the saltine crackers. and set on a plate to the side as you heat up the pan.
  • Saute -- Heat a large non stick pan to medium high heat and add the oil and then saute until brown on each side. Just a couple of minutes. Then add in the onions, leeks, fresh and roasted garlic and the tomato paste mixed with the cup of water. Cover and reduce to low and cook 40 minutes until the beef is tender. Once the beef is tender remove the beef to a plate and cover. Keep remaining tomato sauce, onions and leeks in the pan.
  • Sauce -- In the same pan mix the corn starch and broth and stir well. Add it to the sauce and bring to a boil to make a nice sauce. Add in the parsley and cook another 3-4 minute on medium high to slightly reduce. Season with salt and pepper if necessary and add the steak back in to heat up.
  • Serve -- Each plate gets a steak and top with any additional gravy if desired and then a spoon of the onions and leeks. This is wonderful served over buttered noodles. ENJOY!

This recipe sounds like a lot of work, but it just the old fashion method of braising. The meat is so tender, and the onions, are sweet in taste. A really large electric fry pan, works the best. I sometimes add sour cream to the liquid, the last 10 minutes or so, for an even richer taste.

3 -4 pork steaks, bone in
3 large onions, sliced wedge style
salt
pepper
garlic powder
water

Steps:

  • Season both sides of pork steaks with salt, pepper and garlic powder to taste.
  • Spray electric fry pan or very large skillet with cooking spray.
  • Heat to 375 degrees.
  • Brown both sides of steak.
  • When meat has been browned and starts to stick a bit, add two cups water.
  • Cover.
  • Cook for 15 minutes.
  • Turn.
  • Add water as it slowly cooks down.
  • Always scraping up browned bits.
  • Cook another 15 minutes, turning if necessary.
  • Cover all the meat with onions.
  • Add water again to keep level at 1/2 inch or so.
  • Cook 15 minutes, turn meat, poke onions into liquid.
  • Add more water if necessary.
  • Keep cooking until onions are cooked all the way down, almost carmelized.
  • Let liquid cook almost all the way down, again.
  • Add just a cup of water.
  • Scrap all bits and remove from pan.
  • Serve with onions and juice on top.

  • Preheat the grill to high. Heat 1 tablespoon of oil in a large, lidded frying pan. Add the sliced onions with 50ml of the beef stock, cover and cook over a fairly high heat for 5 minutes, until softened. Stir in the thyme leaves or dried thyme, sugar and bicarbonate of soda (this is a trick that helps the onions caramelise more quickly) and continue to cook at the same heat, stirring every now and then, until completely softened and caramelised; around 10-15 minutes.
  • Meanwhile, rub the remaining 1 teaspoon oil onto the pork steaks and season. Heat a separate frying pan and cook the pork steaks over a medium-high heat for 3 minutes on each side, or until cooked to your liking. Set aside on a plate. Prepare a medium saucepan of salted boiling water, or wipe out the same pan and use it again.
  • Stir the flour into the onions and cook for 1-2 minutes. Gradually stir in the rest of the stock to thicken into a sauce. Add the browned pork to the pan, spoon over some of the saucy onions and top with slices of Gruyère. Briefly grill until the cheese is melted (protect the pan handle if necessary).
  • Plunge the Tenderstem into the boiling water and cook for 3 minutes, or until just tender, then drain. Top the French onion pork steaks with a few extra thyme leaves and serve with the Tenderstem. Serve with thinly sliced crusty baguette for mopping up the sauce.
