Posted in response to a request, taken from The New Canadian Basics Cookbook. The cookbook states this is a wonderful side dish to serve with pork, poultry and sausages, and I'd have to agree.

2 tablespoons vegetable oil
1 1/2 cups chopped red onions
8 cups thinly sliced red cabbage
2 cloves garlic, minced
2 apples, peeled & cored & chopped
1 cup chicken stock
1/4 cup red wine vinegar
2 tablespoons brown sugar
1 bay leaf
salt and pepper

Steps:

  • In a large heavy saucepan, over medium heat, heat the oil then add onion and cook for 5 minutes or until softened.
  • Stir in cabbage, garlic and apples.
  • Cook, stirring frequently, for 5 minutes or until cabbage begins to wilt.
  • Stir in stock, vinegar, sugar and bay leaf.
  • Reduce heat, cover, and simmer, stirring occasionally, for 45 minutes or until cabbage is soft and liquid has evaporated.
  • Remove bay leaf and season with salt and pepper to taste.

This recipe came about because I had leftover cabbage from our St.Patrick's Day dinner. Its a fairly common recipe but this is a little sweet & spicy, everyone who tastes this asks me for the recipe and it is sooo easy.

4 cups savoy cabbage, - shredded (this equals about 1/2 a large cabbage)
1 medium onion, - diced
1/4 teaspoon salt
1/8 teaspoon cinnamon
1/8 teaspoon allspice
1/2 teaspoon sugar
1/8 teaspoon white pepper
1/4 teaspoon dried chipotle powder (I use Hot Today Chili Tomorrow)
6 tablespoons butter, - no substitutes

Steps:

  • Core and shred your cabbage, I do a rough chop, and put aside in a bowl. Then dice your onion, making the pieces medium size.
  • Take a 10"skillet and place about 2-3 tablespoons butter, melt the butter and saute the onions until they just start to turn brown around the edges. Add the cabbage and gently fold with the onions, add the remaining butter (just put it in on top of the cabbage,it will melt). Place lid on skillet and simmer at medium heat for 5 minutes. Then uncover, stir the mix and add all your spices. Stir again and place the cover back on and simmer for another 5-7 minutes.
  • We like a little body to ours, if you like your cabbage soft just simmer a little longer.
  • This is easy, quick and yummy. You can add caraway seeds or other spices to alter to your own tastes.

2 Tbsp. Olive oil
1 Tbsp real butter
1 medium onion - pared and sliced
1 Tbsp. Garlic - minced
1 medium to large head of cabbage - chopped into ½ inch strips
1 Tsp. Sea salt
¼ Tsp. black pepper
1/2 Tsp. red pepper flakes

Steps:

  • In a large skillet or pot warm olive oil and butter on medium heat.
  • Add onion and garlic - sauté until they become soft and slightly lucid.
  • Now add half of the cabbage, salt, pepper, and red pepper flakes, and stir.
  • Add remaining cabbage stir, cover, reduce heat to low and simmer for 20 to 25 minutes.
  • Cook until tender but not so much that it becomes easily mashed. The fork should penetrate large cabbage veins easy.
  • I like to caramelize the dish a bit by cooking with a lid for half the cooking time then stick around and watch and stir a couple of times until the edges of the cabbage turn a little brown. The flavor will be sweet and savory.

3 tablespoons fresh thyme leaves
1/2 pound (2 sticks) unsalted butter, cut in small pieces
1/4 to 1/2 cup ice water
2 tablespoons olive oil
2 red onions, sliced 1/4 inch thick
1/4 head red cabbage, shredded
2 tablespoons red-wine vinegar
1 teaspoon sugar
1/4 pound Gruyere or Swiss cheese, cubed

Steps:

  • Combine flour, 1 teaspoon salt, and 1 tablespoon thyme in a food processor. Add butter, and process until mixture resembles coarse meal, about 10 minutes. With the motor running, slowly pour in ice water until mixture holds together when squeezed. Wrap in plastic, and press into a flat disk. Chill until firm.
  • Heat oil in a large saute pan over medium heat. Add onions, and cook until soft. Add cabbage; reduce heat. Add 1/2 cup water, 2 tablespoons thyme, vinegar, sugar, and salt and pepper to taste. Cover; cook 10 minutes. Uncover, turn heat up, and cook until liquid is gone.
  • Heat oven to 425 degrees. Quarter dough, and roll into 5-inch circles. Fit into 4-inch flan rings. Add filling, and scatter cheese on top. Fold over pastry edges. Chill until firm. Bake 15 to 20 minutes; serve hot.

2 tbsp olive oil
1 onion, finely sliced or chopped
1 tsp ground cinnamon
½ tsp ground nutmeg (optional)
1 x 600g/1lb 5oz red cabbage, shredded finely, white core discarded
3 tbsp soft brown sugar
3 eating apples, peeled, cored and diced
100ml/3½fl oz red wine vinegar
2 tsp redcurrant jelly or cranberry sauce (optional)

Steps:

  • Heat the butter and oil in a large lidded saucepan. When hot, add the onion and fry gently until softened. Stir in the spices. Add the cabbage and fry for 3-4 minutes, stirring occasionally, until glossy.
  • Stir in the sugar, apples and red wine vinegar. Cover with a lid and let it cook gently for 30 minutes.
  • Stir in the redcurrant or cranberry sauce (if using) and cook for a further 10 minutes. If you aren't using the sauce, taste the cabbage and add a little more sugar if it's too tart for your taste.

1 pound (500 grams) red cabbage (Core and outer leaves removed and finely sliced )
1 large Granny Smith apple (Peeled and roughly chopped)
1 large red or white onion (Peeled and finely sliced)
2 tablespoons brown sugar
1 teaspoon Chinese 5-spice powder
3 tablespoons balsamic vinegar
1 vegetable stock cube (Dissolved in one cup of boiling water)
½ teaspoon salt

Steps:

  • Place the chopped cabbage and onions into a large saucepan.
  • Dissolve the stock cube in one cup of boiling water and add the brown sugar, balsamic vinegar, 5-spice powder and salt. Stir to dissolve the sugar and then add it to the cabbage and onions in the saucepan.
  • Cover the pan with a lid and bring to the boil. As soon as it starts to boil, turn down the heat to a simmer and leave for about 30 minutes until the cabbage has softened and most of the liquid has been absorbed.
  • Add the chopped apple to the cabbage in the saucepan.
  • Replace the lid and simmer for about 10 minutes until the apple has disintegrated into the cabbage.
  • Taste for seasoning and add more salt if you think it needs it.
