Time 12h20m

Yield 6

Number Of Ingredients 10

1 pound dry white beans
2 smoked turkey legs
½ onion, diced
2 bay leaves
2 stalks celery, diced
4 large carrots, sliced
1 (14.5 ounce) can petite diced tomatoes, undrained
2 tablespoons Italian seasoning
salt and ground black pepper to taste
2 tablespoons grated Parmesan cheese, divided

Steps:

  • Place the beans into a large bowl, fill the bowl with water, and cover the bowl with a cloth. Allow to soak overnight. Drain and rinse the beans.
  • Place the soaked beans, turkey legs, onion, and bay leaves into a large soup pot, cover with water, then bring to a boil over medium heat. Reduce heat to medium-low, and simmer for 3 hours. Remove bay leaves, and discard. Remove the turkey legs from the broth, separate the meat from the bones and tendons, and return the meat to the broth. Stir in celery, carrots, diced tomatoes, Italian seasoning, and salt and pepper; simmer until the celery and carrots are tender, about 1 hour. Serve in bowls and sprinkle each serving with about 1 teaspoon of Parmesan cheese.

TASTY BEAN SOUP

Tasty Bean Soup image

I created this bean soup using part of another recipe but I added a few spices in varying amounts with smoked turkey wings for an awesome flavor enhancer. It is a bit spicy but it is really high in fiber and protein, while being low in fat and sodium. I prepared this recipe in a crockpot but it could be cooked on the stovetop as well. Cook times may vary but I let mine cook for a total of 10 hours, which is why I recommend the crockpot.

Provided by Fit Cook

Categories     Beans

Time 10h25m

Yield 4 quarts, 6-8 serving(s)

Number Of Ingredients 16

1 (16 ounce) package 15 bean soup mix (discard the flavor packet)
4 cups chicken stock or 4 cups vegetable stock
2 smoked turkey legs
3 tablespoons extra virgin olive oil
2 large onions, chopped (I used yellow)
10 garlic cloves, peeled and smashed
2 large carrots, chopped
2 celery ribs, chopped
1/2 teaspoon clove
15 peppercorns
3 bay leaves
1/2 teaspoon coriander
1/2 teaspoon ground cumin
1/4 teaspoon red pepper flakes (or more to taste)
1/4 teaspoon cayenne (or more to taste)
1/2 teaspoon paprika

Steps:

  • Soak beans overnight in about 3 quarts of water. Drain and either set aside or if you are using a crockpot put on the lowest setting and add chicken stock with the beans.
  • Heat olive oil in a large pan. Score smoked turkey legs or thighs and place in hot pan. Allow the turkey to heat and release flavor into the oil while prepping the other ingredients.
  • Remove turkey from the pan and place into crockpot or set aside.
  • Put onions, garlic, carrots, and celery in pan and cook until just tender.
  • Add all spices and allow to cook for 3-5 minutes to allow dry spices to open up.
  • Add vegetable mixture into crockpot or put the turkey, beans, and stock into the large pan. If you are using a pan bring to a boil then reduce to a simmer and allow to cook for as long you can stand! (The smell is so good you will not be able to resist tasting) I recommend at least 4-6 hours.
  • Enjoy!

  • Dissolve 3 tablespoons sea salt in 4 quarts of water in a large (8-quart) pot. Stir in 2 cups dry cannellini beans and soak at room temperature overnight or for at least 8 hours. Drain and rinse well.
  • Chop 1 large onion, 2-3 large carrots, 2-3 celery stalks, and mince 2 cloves garlic. Heat oil in a large soup pot or pressure cooker over medium heat and cook onion, carrot, and celery caramelized, about 8 minutes. Mix in garlic and cook until fragrant. (If using a slow cooker, transfer softened vegetables to the cooker at this point and continue with remaining instructions.)
  • Stir in soaked and rinsed beans, 1 cup rinsed lentils, turkey thighs or drumsticks, 2 tablespoons homemade beef bouillon (or 2 teaspoons store-bought), 2 teaspoons Meat Magic, 2 teaspoons dry Italian herb seasoning, 2 teaspoons cumin, and bay leaf to the pot. Add enough broth/stock/water to cover 2 to 3-inches above ingredients to allow beans to absorb enough liquid - about 4 quarts. NOTE: The exact amount of broth will depend on the amount of meat added. Additional water may be needed. *See Recipe Notes for pressure cooker method.
  • Bring soup to a boil then reduce heat and simmer for 2-3 hours on the stove or 4-6 hours in a crockpot set on low.
