GRANDMA'S PEANUT BUTTER COOKIES
My Grandma and Mom made these cookies often when I was growing up and I have been making them for my kids for 20 years! I have tried many other peanut butter cookie recipes, but this one is still our favorite. Crispy, but a light texture . . . they almost melt in your mouth!

Steps:
- Cream butter and peanut together in a large bowl.
- Add sugars and eggs, mix well.
- Sift together dry milk, flour, baking powder, baking soda and salt, stir into butter mixture.
- Let dough stand 15 minutes.
- Roll into balls, about the size of a walnut and place on a slightly greased baking sheet.
- Flatten with a fork, dipped in flour, criss-cross fashion.
- Bake at 375 degress for 10-12 minutes.
- Watch closely and remove when tops just start to brown.
- Wait about 5 minutes before removing from baking sheet. Cool on racks.

Steps:
- Place butter and vanilla extract in a mixing bowl; beat with a stand mixer or electric mixer at medium speed until fluffy, about 2 minutes. While continuing to beat, gradually add brown sugar and granulated sugar; beat until well combined.
- Add eggs, one at a time, beating after each addition until incorporated. Add peanut butter and beat until combined.
- Add flour, baking powder, and salt; mix on low speed until just combined.
- Roll dough into 1-inch balls; place on a cookie sheet. Flatten with a fork dipped in granulated sugar; repeat with the fork turned perpendicular to the first marks to create a cross-hatch pattern.
- Bake at 375 degrees for about 9 minutes, or until very lightly browned.
- I like my peanut butter cookies soft, so I watch them closely while baking and take them out of the oven as soon as they are lightly browned.
GRANNIE'S PEANUT BUTTER COOKIES (OVEN VERSION)

- 1. Preheat oven to 350 degrees F.
- 2. Melt butter.
- 3. Beat together with the sugars, vanilla, peanut butter and eggs.
- 4. In a separate bowl, combine the flour, bran, oats and baking soda.

OLD FASHIONED PEANUT BUTTER COOKIES
Steps:
- Preheat the oven to 375 degrees. Butter cookie sheets and set aside. With an electric mixer beat the butter until soft. Add the sugars and beat until creamy. Add the egg, peanut butter, salt, baking soda and vanilla.
- With a rubber spatula fold the flour into the egg mixture but do not overmix. Roll the dough into small balls and place them on prepared cookie sheet. With a fork press the balls into flat cookies and bake for 15 to 17 minutes or until crisp and golden.
- For added touch melt some bittersweet chocolate in a double boiler remove and cool down a bit. When still pliable dip one edge of cookies into chocolate.

- Heat oven to 180C/160C fan/ gas 4 and line two baking sheets with parchment. Cream the butter, peanut butter and sugars together until very light and fluffy, then beat in the egg and vanilla. Once combined, stir in the flour, chopped peanuts, bicarb and ¼ tsp salt.
- Scoop 10 large tbsps of the mixture onto the trays, leaving enough space between each to allow for spreading. Make a thumbprint in the centre of the cookies and fill each with 1 heaped tsp raspberry jam (you could make your own jam for this). Bake for 10-12 mins or until firm at the edges but still soft in the middle - they will harden a little as they cool. Leave to cool on the tray for a few mins before eating warm, or transfer to a wire rack to cool completely. Will keep for three days in an airtight container.

Steps:
- Heat oven to 180C/160C fan/gas 4 and line 2 large baking trays with baking parchment.
- Measure the peanut butter and sugar into a bowl. Add ¼ tsp fine table salt and mix well with a wooden spoon. Add the egg and mix again until the mixture forms a dough.
- Break off cherry tomato sized chunks of dough and place, well spaced apart, on the trays. Press the cookies down with the back of a fork to squash them a little. The cookies can now be frozen for 2 months, cook from frozen adding an extra min or 2 to the cooking time.
- Bake for 12 mins, until golden around the edges and paler in the centre. Cool on the trays for 10 mins, then transfer to a wire rack and cool completely. Store in a cookie jar for up to 3 days.
