MINCED SOY PORK WITH RICE NOODLES
This recipe uses two types of soy - light for seasoning, dark for its rich caramel colour

Steps:
- Bring a pan of water to the boil and add the noodles. Cook for 4 mins, then drain well and set aside.
- Heat a wok over high heat and add the groundnut oil. When it starts to smoke, add the garlic, ginger, finely chopped mushrooms and shrimps. Stir well for a few secs, add the mince and stir-fry. When the meat starts to turn brown, add the rice wine and mix well. Season with the dark and light soy sauce, pour in the stock and bring to the bubble.
- After 1 min, season the pork with the toasted sesame oil, sprinkle over the spring onions and coriander, then stir in. Add the rice noodles and mix well. Serve in bowls and eat immediately, seasoned with a little more soy sauce, if you like.

SOYA MINCE AND GREEN PEPPER CHILLI
Resembling the traditional 'con carne' dish somewhat, this is a serious chilli when prepared exactly as described. The green peppers provide a diversionary edge, but the habanero heat tells - be warned! (or should that be 'be warmed!'?) Designed to suit both chillihedz and the Scoville-shy!

Steps:
- Heat 2 tbsp of the oil in a large pan and sauté the onion till translucent.
- Add the garlic and all peppers and sauté till cooked, then add all the herbs and spices.
- Stir briefly, then add the passata and the TVP mince and heat through.
- Drain the habaneros, adding the soaking water to the chilli, then finely chop and sauté in the remaining oil with the chopped chilli seeds until the aroma catches in the throat.
- Serve the heat-haters first then stir the sauté mix into the TVP for the chillihedz.
- Serve with garlic bread.

MINCHI (MINCE WITH SOY SAUCE )
A Macanese 'everyday' kind of dish. As with a lot of food from Macau, it uses a blend of both Chinese and European ingredients. Very simple and easy to throw together

Steps:
- Dice potatoes into 1cm (1/2 inch) cubes and fry in olive oil until golden brown. Drain and set aside.
- Heat a little olive oil in another pan, add onion and bay leaves,sauté until onion is soft and golden. Set onion aside.
- Add crushed garlic and a teaspoon of olive oil to the same and continue to heat. Press garlic and circulate it around the pan to free out the aroma. Discard garlic once it is golden brown.
- Increase heat to high, add minced meat to the pan with a pinch of salt and press meat constantly to break it down.
- Cook for about 4 minutes and when the minced meat is nearly broken up add onion and bay leaves. Test for seasoning and add salt and pepper. Stir for 2 minutes.
- Combine soy sauce, sugar and Worcestershire sauce and pour this mixture on to the meat. Stir well for 3-5 minutes until the meat is broken up and the mixture is becoming dry.
- Add potatoes, mix well and serve with rice.
