CINNAMON, SPICE AND EVERYTHING NICE COOKIES
Cookies.....soft, chewy, with a burst of cinnamon.

Steps:
- Preheat oven to 350 degrees F (175 degrees F).
- In a large bowl, cream together the shortening and 2 cups sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla and molasses. Combine the flour, baking soda, salt, nutmeg and ginger; stir into the sugar mixture until well blended. Mix in cinnamon chips. Dough will be stiff. Roll into walnut sized balls and roll each ball in remaining sugar. Place cookies 2 inches apart onto an ungreased cookie sheet and flatten slightly.
- Bake for 8 to 10 minutes in the preheated oven, or until tops are crackled. Let cool on the baking sheet for a few minutes before removing to a wire rack to cool completely.

Steps:
- 1. In a large bowl, cream butter and sugars until light and fluffy. Beat in eggs and vanilla. Combine the flour, baking soda, salt and nutmeg; gradually add to creamed mixture and mix well. Fold in cinnamon chips.
- 2. Drop by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 350° for 10-12 minutes or until golden brown. Remove to wire racks to cool.
CREAMY CINNAMON CHIPS CHEESECAKE
Steps:
- 1. Preheat oven to 325�F. Combine graham cracker crumbs, 2 tablespoons sugar and melted butter in medium bowl. Press crumb mixture evenly onto bottom and about 1-1/2 inches up side of 9-inch springform pan. Bake 8 minutes. Remove from oven.
- 2. Increase oven temperature to 350�F. Beat cream cheese, remaining 1 cup sugar and vanilla on medium speed of mixer until well blended. Add sour cream; beat on low speed until blended. Add eggs; beat on low speed just until blended. Do not overbeat.
- 3. Pour half of filling into prepared crust. Reserve 1/3 cup cinnamon chips for drizzle. Sprinkle remaining 1-1/3 cups chips evenly over filling in pan. Carefully spoon remaining filling over chips. Place on shallow baking pan.
- 4. Bake about 1 hour or until center is almost set. Remove from oven; cool 10 minutes on wire rack. Using knife or narrow metal spatula, loosen cheesecake from side of pan. Cool on wire rack additional 30 minutes. Remove side of pan; cool 1 hour.
- 5. Combine shortening and reserved 1/3 cup chips in small microwave-safe bowl. Microwave at MEDIUM (50%) 30 seconds; stir until chips are melted. Drizzle over cheesecake; cover and refrigerate at least 4 hours. Cover; refrigerate leftover cheesecake.

CINNAMON CHIP APPLE COOKIES
This recipe is from Hershey's. Yummy! I also made a glaze for them with 1 cup Powdered sugar and enough Butterscotch schnapps to spread on the cookies.

- Heat oven to 350°F.
- Lightly grease cookie sheet.
- Beat butter, brown sugar, egg, apple juice and vanilla in large bowl until creamy.
- Stir together flour, baking powder, baking soda and salt.
- Add to butter mixture; beat until blended.
- Stir in oats.
- Add cinnamon chips, apple and raisins; stir until blended.
- Drop by teaspoons onto prepared cookie sheet.
- Bake 10 minutes or until edges are lightly browned.
- Cool 1 minute; remove from cookie sheet to wire rack.
- Cool completely.

OATMEAL CINNAMON CHIPS COOKIES
I made these for the first time and they are real tasty so I thought I would share them. I got this recipe from the bag of Hersheys cinnamon chips. Times are approximate.

- Heat oven to 350°F
- Beat butter, brown sugar and granulated sugar until creamy.
- Add eggs and vanilla; beat well.
- Combine flour and baking soda; add to butter mixture, beat well.
- Stir in oats, cinnamon chips and raisins (batter will be stiff).
- Drop by heaping teaspoons onto ungreased cookie sheet.
- Bake 10-12 minutes or until lightly browned.
- Cool 1 minute; remove from cookie sheet and place on rack to cool compleetly makes about 4 dozen.
CINNAMON CHIP CREAM CHEESE BREAD
This bread if fantastic. I couldn't find the cinnamon chips in the store for the past month, so was going to order some online. - 1. Make the cream cheese filling first. Beat all of the ingredients until smooth. Set aside.
- 2. Make the glaze. Mix all ingredients and set aside.
- 3. Preheat oven to 350 degree F. Grease and flour a loaf pan.
- 4. In a large bowl, cream the butter and sugar together until light and fluffy. Add the vanilla and mix. Add the egg yolks (the whites will be used later so save them!) and mix well. Whisk flour, salt and baking powder together. Alternate adding the flour mixture and the milk. Mix after each addition.
- 5. In another bowl, beat the egg whites until soft peaks form. Add the 1/4 cup sugar, 1 Tbsp. at a time, until egg whites are stiff.
- 6. Fold the egg whites into the batter mixture. All but about 1/2 cup of the cinnamon chips. Stir.
- 7. Add the 1/2 cup of cinnamon chips to the cream cheese mixture (if you want.) Pour half of the batter into a greased and floured loaf pan. Top with the cream cheese layer and spread to make it even. Add the rest of the batter and spread it out.
- 8. Pour the glaze over the uncooked batter. Bake for 55 - 60 minutes or until pick in the center comes out clean.
