SUGAR CURE FOR PORK, BACON, HAM



Sugar Cure for Pork, Bacon, Ham image

Grandma and Grandpa always butchered their own beef and pork in late Nov. to the middle of Feb. It was a family affair, everyone pitching in to make sausages, head cheese, and wrapping all the meat!

Number Of Ingredients 6

2 1/2 lbs salt
2 gallons water
1 ounce saltpeter
1 ounce baking soda
1 lb brown sugar
1 ounce black pepper

Steps:

  • Double this mix as much as you have meat.
  • Weigh down meat so that it remains covered.
  • Be sure to boil plent of water day before so it is good and cold.
  • Put your meat in wood barrels or vinegar stone crocks.
  • Leave small boned meat chunks submerged for 2 days.
  • Bacon submerged for 4 days.
  • Cut hams and shoulders 14 days.
  • Whole hams 21 days.
  • Storage area must be extremely cold, but not freezing to prevent fermentation.
  • After submersion, run thick thread through corner of meats and hang in smokehouse.

18 lbs kosher salt
36 ounces fresh coarse ground black pepper
13 ounces red pepper flakes
28 ounces fennel seeds
5 bunches dill

Steps:

  • Combine everything in a large bowl. Mix well. Apply generously to a whole salmon side. Refrigerate salmon overnight. The sugar will melt into the fish.

This grilled and smoked salmon recipe by the food writer Betty Fussell calls for curing the fish for several hours with salt, brown sugar and spices before smoking it over indirect heat on your grill. While the fatty fish absorbs the smoke beautifully, the fish can also be successfully cooked in a grill pan, or under the broiler. The salt and sugar cure, laced with sweet spices, both flavors the fish and firms up its flesh, giving it a meaty, silky texture. Serve it with a crisp salad for a light supper, or with rice for something more substantial.

4 skin-on, center-cut wild king or other salmon fillets (2 1/2 pounds total)
1/4 cup light brown sugar
2 teaspoons coarse kosher salt
1 teaspoon ground black pepper
1/4 teaspoon ground allspice
1/4 teaspoon ground mace
Finely grated zest of 1 lemon, plus lemon wedges for serving
Olive oil
1 1/2 cups hickory chips, soaked for 30 minutes and drained

Steps:

  • Pat fish dry with paper towels. In a small bowl, combine sugar, salt, pepper, spices and zest. Rub mixture all over fish. Place in a dish, cover and let cure in the fridge for at least 4 hours and preferably 8 hours. Rinse fillets and pat dry. Generously oil salmon.
  • Light the grill. Once coals are hot, scatter drained hickory chips over coals. (If you're using a gas grill, place them in a disposable metal pan on the grill next to the salmon.)
  • Place salmon flesh-side down on grill and cover, closing top vent so not much smoke is released. Smoke salmon, covered, for about 5 to 6 minutes, then flip. (If the fish is sticking to the grill grate, then it's not ready to flip. Cook for another 3 to 10 minutes, depending upon how hot your fire is. The fish is done when the interior is medium pink and exterior crisp and smoky. Serve with lemon wedges.

1 whole pork loin
1 lb hickory chips
1 1/2 cups tender quick, cure mortons
1 cup brown sugar
1/8 cup cracked black pepper
2 ziploc bags

Steps:

  • rinse pork loin, then place one of the garbage bags in the other open them both as wide as possible place the loin inside the bags, mix the cure rub together pour over the loin making sure to get a even coat on the whole loin, then tie the bags in a knot and place in the fridge for 5 days, after the 5 day period is up then wash the loin clean, place in a smoker or pit with chips poored over the fire source cook at 220 degrees for 4 hours or the desired internal temperture of 150-160 degrees, remove from heat source wrap in foil or cover for at least 30 minutes before serving slice to desired portions it will never be dry if you follow these directions and it is even better on a roll or bread the next day.

1 (12 lb) turkey
1/4 cup light brown sugar, firmly packed
2 tablespoons kosher salt or 2 tablespoons coarse-grain sea salt
1 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon ground allspice
1/2 teaspoon ground cloves
1/2 teaspoon ground mace
1 large onion, quartered
2 (14 ounce) cans low sodium chicken broth
additional chicken broth, as required
2 tablespoons all-purpose flour

Steps:

  • Remove giblets and neck; rinse turkey with cold water.
  • Pat dry.
  • Tie legs together with string; tuck wingtips under.
  • Combine brown sugar and next 6 ingredients.
  • Rub over turkey.
  • Cover with plastic wrap; chill 8 hours.
  • Place turkey on a rack in a roasting pan, breast side up.
  • Arrange onion quarters round turkey.
  • Pour 2 cans broth in bottom of pan.
  • Bake, loosely covered with foil, at 325°F for 1 1/2 hours.
  • Uncover and bake 1 1/2 more hours or until meat thermometer registers 180°F.
  • (Cover with foil to prevent excessive browning, if necessary.) Remove onion; discard, reserving pan drippings.
  • Let turkey stand 15 minutes before carving.
  • Combine pan drippings and enough additional chicken broth to equal 2 cups in a saucepan over medium heat.
  • Whisk in flour, and cook, whisking constantly, 5 minutes or until thickened.
  • Serve with turkey.
