- Combine pork strips, cumin, and garlic pepper blend in a large resealable plastic bag. Shake until pork is coated.
- Heat vegetable oil in a large skillet over medium heat. Add pork; cook and stir until browned, 4 to 5 minutes. Add onion, red bell pepper, and green bell pepper; cook until fragrant, about 2 minutes. Stir in barbeque sauce; simmer until flavors combine, about 2 minutes.
- Serve pork mixture over flour tortillas.

TEX-MEX PORK FAJITAS WITH PEPPERS AND ONIONS
Spiced pork chops are grilled and thinly sliced and served with charred peppers and onions in tortillas and toppings.

- Mix together the paprika, brown sugar, chili powder, cumin, chipotle chile powder, garlic powder and 1 teaspoon salt in a small bowl. Toss the pork chops in a container with the oil and lime juice, then rub with the spice mixture. Refrigerate, covered, for at least 30 minutes up to 2 hours before cooking.
- Heat a cast-iron skillet over medium-high heat until hot. Toss the peppers and onions in a bowl with the oil, lime juice and 1 teaspoon salt. Add the pepper-onion mixture to the hot skillet and cook, stirring occasionally, until the vegetables are tender and the edges are charred, 8 to 10 minutes. Set aside.
- Prepare an outdoor grill for medium-high heat.
- Lightly brush the grill grates with oil and grill the pork chops until marked and cooked through, 4 to 5 minutes per side. Transfer to a cutting board, let rest for 10 minutes and then thinly slice.
- Serve with the warm tortillas peppers and onions, guacamole, sliced pickled jalapenos, lime wedges, shredded pepper jack cheese, salsa, chopped scallions, sour cream.

- Heat olive oil in a large skillet over medium heat. Season pork chops on both sides with salt and pepper. Add pork chops to hot oil in the skillet in a single layer and cook until golden, 2 to 3 minutes per side.
- Meanwhile, whisk barbecue sauce, brown sugar, lime juice, and garlic powder together in a bowl for the 'crack' sauce. Pour sauce over golden pork chops and bring to a boil. Reduce heat to medium, cover, and simmer until pork shops are cooked through, 4 to 5 minutes. Garnish with parsley.

- Heat the oil in a large skillet over high heat.
- Add pork, sprinkle with the salt and pepper.
- Cook, and stir constantly for 2 minutes.
- Add peppers, onion, garlic, cumin and fajita seasoning, continue to cook until the vegetables are crips-tender, about 3-4 minutes.
- Stir in the lime juice, and saute for about 2 more minutes.
- To serve, roll 3/4 cup meat mixture in each tortilla and garnish as desired.
- I like to put the meat and tortillas in a platter and bring it to the table, and let everyone make up their own.

SAUCY OVEN PORK CHOPS
This is one for those of us that like things quick and EZ, but yet not sacrificing taste...I remember coming up with this recipe years ago, and then tucking it away in a "safe spot". I recently found it again and do remember that it was very good(or else I would not have written down the recipe) I hope someone gives it a try.... (all amounts are approximate as I was just fooling around in the kitchen that day)

- Mix garlic and mustard together. Spread over chops.
- Dredge chops in flour.
- Put in greased baking pan (no need to brown chops).
- Mix soups together with approx 1/2 cup water. Pour over chops.
- Sprinkle with tyme, salt and pepper (if desired).
- Cover tightly with foil. Bake at 350 approx 45 min.(or until chops are done.I probably used thin chops).
- Remove and keep warm. Use flour to thicken sauce on stovetop if desired.
- Serve with mashed potato and veggie of choice.

GRILLED PORK CHOPS WITH CLASSIC BARBECUE SAUCE

- Make the barbecue sause:
- heat the oil in a frying pan and sauté the onion and garlic until soft and lightly browned, 4-5 minutes. Grate the zest from the lemon and squeeze the juice. Add the lemon zest, half the lemon juice, the sugar, vinegar, ketchup, Worcestershire sauce, Tabasco sauce and chili powder to the onion and simmer gently, 5 minutes. Taste, adjust the seasoning and let cool.
- Light the grill. Season the pork chops with salt and pepper and brush with the cooled barbecue sauce. Grill them, basting often, 5-7 minutes. Turn over and continue grilling and basting until the chops are done, 5-7 minutes longer.
