HUNGARIAN GOULASH

Hungarian Goulash image

Goulash is a stew or soup filled with meat and vegetables, and this Hungarian Goulash gets its flavor punch from paprika - a spice made from ground sweet peppers, that ranges in flavor from sweet to mild or hot. Our version is served over a plate of freshly cooked egg noodles for a hearty comfort food dinner that can be served any night of the week.

HUNGARIAN BEEF GOULASH - AUTHENTIC HUNGARIAN GOULASH RECIPE

Hungarian Beef Goulash - Authentic Hungarian Goulash Recipe image

An authentic Hungarian goulash recipe for one of Hungary's most famous dishes. Tender beef pieces in a rich delicious sauce made with lots of paprika and with caraway seeds.

Provided by Adina

Categories     Meat Recipes

Time 2h45m

Number Of Ingredients 13

1 kg/ 2.2 lbs stewing beef (beef chuck for instance)
2 tablespoons lard (or vegetable oil - you might need more in this case, divided)
2 onions (about 300 g/ 10.6 oz)
3 large garlic cloves
1 red bell pepper (about 100 g/ 3.5 oz)
2 to matoes (about 200 g/ 7 oz)
2 bay leaves
2 tablespoons Hungarian sweet paprika powder
¼ - ½ teaspoon Hungarian hot paprika powder ((to taste, the goulash should not be too hot))
¾ teaspoon ground caraway seeds
1 ½ tablespoons tomato paste
500 ml/ 17 fl.oz/ 2 cups beef broth or water
fine sea salt and freshly ground black pepper

Steps:

  • Cut the beef chuck into small cubes, about 2 cm/ 0.7 inches. Place them onto paper towels and pat them dry with more paper towels. Chop the onions very finely. Chop the pepper and the tomatoes as well.
  • Melt some of the lard (or oil) in a Dutch oven or heavy-bottomed stewing pot. Fry the beef cubes in 2 or 3 batches, depending on the size of your Dutch oven. Fry for about 5 minutes per batch or until nicely browned on all sides. Add more of the lard before each batch. Transfer the fried beef cubes to a plate and set them aside.
  • Add about 1 teaspoon more lard to the pot and fry the chopped onions until very lightly colored, about 5 minutes, stirring often and keeping an eye on them. If they threaten to catch, add a splash of water and continue cooking.
  • Add the garlic, chopped peppers, tomatoes, and bay leaves and cook for about 3-4 minutes, stirring a few times in between.
  • Add the paprika and caraway. Stir well for about 1 minute, add the tomato paste and stir well again. Add the meat cubes and the beef broth, stir well.
  • Cover the pot, bring to a boil, lower the heat and simmer the Hungarian beef goulash until the meat is very tender about 1 ½ - 2 hours. Check to make sure that the meat is really tender.
  • Uncover the pot and continue cooking the goulash for another 10-15 minutes until the sauce reduces and thickens slightly. Adjust the taste with salt and pepper.

HUNGARIAN GOULASH I

Hungarian Goulash I image

A spicy way to dress up stew beef. My mom made this when we were kids, and we loved it. It is spicy while not mouth-burning! Can be made with cheaper cuts of beef, and comes out very tender. If it gets too thick, add a little water while it's cooking. Garnish with sour cream.

HUNGARIAN GOULASH STEW

Hungarian Goulash Stew image

a family recipe

Provided by lnguyen

Time 2h

Yield Serves 4

Number Of Ingredients 22

2 lb. beef chuck / gravy beef / stewing beef
1 tsp. salt
2 white onions
2 Tbsp. olive oil
4-5 Tbsp. sweet paprika (use real hungarian paprika ie. Szeged brand)
2 bay leaves
1 clove garlic minced
1 tomato (chopped)
1 Tbsp Worcestershire Sauce (optional)
1 Tbsp Brown Sugar
1 Qt. water
4 peeled and diced potatoes
1/4 tsp. black pepper
3 tbsp sourcream
1 tsp. creamed horseradish
1 tsp. chopped parsley
2 eggs
1/2 cup water
9 Tbsp. flour
1/4 tsp. salt
1 tsp. parsley
salted butter

Steps:

  • Cut beef into 1 inch squares, add 1/2 tsp. salt and lightly dust with plain flour.
  • Chop onions and brown in oil, add beef and paprika. Add garlic and chopped tomato.
  • Let beef simmer in its own juice along with salt and paprika for 1 hr on very low heat.
  • Add water, diced potatoes and remaining salt. Cover and simmer until potatoes are done and meat is tender.
  • Add more paprika if required towards the end, sauce should be thick and flavorsome. You can also add a tablespoon of flour at end to thicken slightly.
  • Prepare the nokedli to accompany the goulash:
  • Hand-beat eggs with fork for 30 secs and add water. Add flour to beaten eggs and add salt.
  • Mix well until it forms a ball. Let it stand for 1/2 hour for flour to mellow.
  • Take a teaspoonful of the mix and drop into boiling water. Repeat until mix is finished. Once dumplings rise to surface they are ready (normally takes about 1 min).
  • Once you have removed all the nokedli, mix it in with a bit of salted butter and chopped parley.
  • Mix the sourcream and horseradish cream. Top the goulash with the cream. Garnish with parsley and serve it with the nokedli.

Provided by Kimberly Killebrew

Categories     Main Course

Time 1h50m

Number Of Ingredients 15

3 tablespoons pork lard (, or butter or bacon grease (pork lard is traditionally used and imparts a great flavor))
1 1/2 pounds yellow onions (chopped)
1/4 cup quality genuine imported Hungarian sweet paprika
1 1/2 pounds stewing beef ( , cut into 1/2 inch pieces )
5 cloves garlic (,minced)
2 red bell peppers (,seeded/membranes removed, cut into 1/2 inch chunks)
1 yellow bell pepper (,seeded/membranes removed, cut into 1/2 inch chunks)
2 tomatoes (,diced)
2 carrots (,diced)
2 medium potatoes (,cut into 1/2 inch chunks)
5 cups beef broth ((traditionally just water is used but beef broth adds so much more flavor))
1 bay leaf
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon crushed caraway seeds ((optional, not traditional in all regions))

Steps:

  • Melt the pork lard or butter/oil in a Dutch oven or other heavy soup pot over medium high heat and cook the onions until beginning to brown, about 7-10 minutes. Add the beef and cook until the beef is just starting to brown, 7-10 minutes. Add the bell peppers, tomatoes, and garlic and cook for another 6-8 minutes. Remove the pot from the heat and stir in the paprika, salt, pepper and caraway (if using) (note: paprika becomes bitter if at all scorched). Return to a boil, reduce the heat to medium, cover, and simmer for another 30-40 minutes or until the beef is nice and tender. Add salt to taste. Remove the bay leaf.

AUTHENTIC HUNGARIAN GOULASH

Authentic Hungarian Goulash image

Here is a recipe for authentic Hungarian Goulash I learned to make from my grandmother and mother who were from Austria-Hungary. We would NEVER consider tomatoes or green peppers or other spices in Goulash. Slow cooking is the secret and you can never use too much paprika. Note: my grandmother made the biscuits from scratch, but I find the Bisquick ones are easier and tastier.

HUNGARIAN GOULASH

Hungarian Goulash image

Provided by Food Network

Categories     main-dish

Time 2h45m

Yield 4 to 6 servings

Number Of Ingredients 24

1 strip bacon
2 onions, medium dice
1 tablespoon olive oil
2 1/2 pounds stewing beef, cut into 1/2-inch cubes
1 garlic clove
Pinch caraway seeds
2 tablespoons good quality sweet paprika (see Cook's Note)
2 cups warm water
2 cubes beef bouillon
2 whole canned tomatoes, chopped
1 green bell pepper
4 or 5 potatoes
2 tablespoons sour cream, plus more for plating
1 pound prepared spaetzle, as an accompaniment
Cucumber Salad, as an accompaniment, recipe follows
2 cucumbers
Seasoned salt
1/2 onion
1/2 cup white vinegar
1/4 cup water
2 teaspoons sugar
1/8 teaspoon sweet paprika
Pinch dill, dried or fresh (optional)
Dollop sour cream (optional)

Steps:

  • In a cold, heavy 6 to 8-quart stewing pot, fry bacon over low-medium heat until fat is rendered, and then discard bacon slice.
  • Saute onions in the bacon fat for a few minutes, do not allow the onions to brown. If bacon does not provide enough fat, add a little olive oil to prevent the onions from sticking. When onions become glossy, add the beef, sauteing with the onions for about 10 minutes, covered, until the meat is browned.
  • Meanwhile, chop and crush the garlic with the caraway seeds; add to meat and onions. Remove pot from heat. Stir in paprika rapidly with a wooden spoon. Immediately after paprika is absorbed, add the warm water. The water should just cover the meat, leaving room for potatoes.
  • Add beef bouillon cubes. Cover pot and cook over low heat for about 1 hour.
  • While stew is braising, prepare the tomatoes by cutting into 1-inch pieces. Core green peppers and cut into strips. After 1 hour of braising, add the tomatoes and green pepper. Add a little more water, if necessary and a little more salt if you need it. Simmer slowly for another 30 minutes.
  • Peel potatoes and cut into bite-sized cubes and set aside in a bowl of water. Add potatoes, and cook another 30 minutes until the potatoes are fork tender and the goulash is done.
  • Once goulash is finished, dissolve sour cream and a little of the goulash sauce in a cup. Add to goulash, it should give a creamy consistency. Serve goulash with spaetzle and Cucumber Salad on the side, adding an extra dollop of sour cream to each plate.
  • Peel and slice cucumbers very thinly. The side of a metal grater with the wide slots works best here, or you can use a mandoline. Place cucumbers in a flat dish and sprinkle throughout with salt, making sure that all the slices are salted. Leave to rest for 30 minutes. The salt will draw the moisture out of the cucumbers. Cut the onion into paper-thin slices and place in a container. Once the cucumbers have released water, use your hands to squeeze out the excess water and add to the onions. The cucumbers are supposed to be limp, but still crisp.
  • In a measuring cup mix vinegar, water, sugar and paprika to create a vinaigrette. Pour over the cucumbers and onions and marinate in the refrigerator for at least 1 1/2 hours.
  • Serve with a sprinkle of dill and a little dollop of sour cream if desired.

HUNGARIAN GOULASH

Hungarian Goulash image

Hungarian goulash is a traditional beef stew or soup cooked with lots of onions, Hungarian paprika, tomatoes and sweet peppers. Very popular in Hungary but also in other parts of Eastern Europe, this dish can be served with bread, pasta, spaetzle, boiled or roasted potatoes, carrots and pickles.

Provided by The Bossy Kitchen

Categories     Meat and Poultry

Time 2h20m

Number Of Ingredients 12

3 pounds beef stew meat(or pork) cut into 1-inch cubes
2 tablespoons lard or 6 tablespoons vegetable oil (I used sunflower oil)
4 large onions diced
5 cloves of garlic minced
1 sweet bell pepper- Red or any other color(wax pepper or banana pepper are perfectly acceptable) seeds and ribs removed, then diced
4 tablespoons sweet Hungarian paprika powder
2 bay leaves
3 big fresh tomatoes chopped or 1 1/2 cups tomato sauce
1 teaspoon ground caraway seeds
1 cup beef stock or water
Salt to taste
Optional: sour cream for serving

Steps:

  • In a large pot, brown the meat in vegetable oil or pork lard over low heat, stirring frequently.
  • Add the onions, garlic, and pepper and saute until translucent. The onions should be cut into very small pieces. This is essential in order to achieve the "stew consistency". Add a small amount of water or broth, if necessary, to keep the vegetables sticking to the pan.
  • Add the Hungarian paprika, ground caraway, bay leaves and salt. Mix well.
  • Add the chopped tomatoes or the tomato sauce. Also add the beef stock or water.
  • Cover and cook over low heat for 2 hours or until tender.
  • Re-taste for seasoning.
  • Place lard or oil in the Instant Pot and press "Saute" button.
  • Brown the meat stirring frequently.
  • Add onions, garlic, peppers and continue stirring until onions are translucent.
  • Add paprika, ground caraway, bay leaves, salt, tomato sauce or chopped tomatoes and the liquid.
  • Cancel the "Saute", close the pot and set it on "Stew". (For tender and juicy meat, I recommend cooking it about 20 minutes per pound(you have 3 pounds of meat in this recipe) of high pressure (the manual setting), plus 15 minutes of natural release.

Categories     Dinner     Lunch (or Dinner)     Meat Dish

Time 1h10m

Number Of Ingredients 15

1 kg beef or pork for stew
800 g onions (diced)
2 bell peppers (washed, cleaned out and diced)
1 tsp tomato paste
4 cloves garlic
some marjoram
some caraway seeds
4 tbsp. ground paprika spice
1 tsp. white wine vinegar
some salt & pepper
100 ml red wine
100 ml broth
some oil for frying
some tbsp sour cream
some Tabasco, optional

Steps:

  • Heat the oil in a large pot.
  • Dice the onion and the bell peppers.
  • Add onion to the oil and fry for 9 minutes while stirring.
  • Add the garlic and tomato paste and continue to fry it for one minute.
  • Now add the wine, broth, paprika, marjoram, salt, and pepper and stir.
  • Next, add the meat, cover the pot with a lid and reduce the heat of the stove so it only slightly boils.
  • Cook now for an overall time of 2 to 3 hours but check frequently if there is enough liquid and also stir. If needed, add a little more broth.
  • After ½ hour: add the caraway seeds and the white wine vinegar. I add them a little later so the meat doesn't get to much of that taste.
  • After 2 hours or 30 minutes before the goulash is ready: Add the bell peppers and continue to cook.
  • When the meat is cooked through, spice with salt and pepper.
  • Optionally add some tabasco and / or sour cream.
  • Serve with potatoes or pasta or dumplings or rice.

HUNGARIAN GOULASH

Hungarian Goulash image

This is my mother's recipe for goulash but I've made a couple of alterations to improve it, such as using beef broth instead of water and real Hungarian paprika instead of Spanish paprika. You can use Spanish paprika if Hungarian is unavailable, but it tastes much better with Hungarian paprika. It is also nice made with stewing veal. When I was a child, I liked this so much that I used to eat it for breakfast if there was any left over from supper!

Steps:

  • Heat up the oil or lard in a pot and braise the chopped onions in it until they get a nice golden brown colour
  • Sprinkle the braised onions with paprika powder while strirring them to prevent the paprika from burning.
  • Add the beef cubes and and sautee them till they turn white and get a bit of brownish colour as well.
  • The meat will probably let out its own juice, let the beef-cubes simmer in it while adding the grated or crushed and chopped garlic (grated garlic has stronger flavour), the ground caraway seed, some salt and ground black pepper, the bayleaf, pour water enough to cover the content of the pan and let it simmer on low heat for a while.
  • When the meat is half-cooked (approx. in 1,5 hour, but it can take longer depending on the type and quality of the beef) add the diced carrots and the potatoes, the cellery leaf and some more salt if necessary (vegetables tend to call for more salt). You'll probably have to add some more (2-3 cups) water too.
  • When the vegetables and the meat are almost done add the tomatoe cubes and the sliced green peppers. Let it cook on low heat for another few minutes. You can remove the lid of the pan if you want the soup to thicken.
  • Hungarian goulash is neither a soup nor a stew, its somewhere in between. Though in Hungary its considered rather to be a soup than a stew.
  • The soup is hearty enough without any pasta just serve with some fresh bread

INSTANT POT BEST HUNGARIAN GOULASH

Instant Pot Best Hungarian Goulash image

One of my all-time favorite comfort foods, this sweet and incredibly tender Hungarian Goulash is just superb over a bowl of egg noodles.

Provided by Jeffrey

Categories     Meat

Time 52m

Number Of Ingredients 16

4 tbsp (1/2 stick) of salted butter, divided in half
1 large Spanish onion, cut length-wise into strands
2 tbsp of paprika (regular, smoked or Hungarian is fine - since paprika is a key ingredient of this dish and if you wish to go heavier on it, add 1/4 cup instead)
1 tsp of caraway seeds
2-3 lbs of chuck roast, cut into bite-sized pieces (use this cut of meat for the best results and make sure it's marbled - meaning strands of fat are visible)
1.5 cups of beef broth (I used 1.5 tsp of Beef Better Than Bouillon + 1.5 cups of water)
1/2 cup of a dry red wine, like a Pinot Noir or Cabernet Sauvignon (if you don't wish to use wine, use another 1/2 cup of broth)
1 tbsp of white vinegar
14.5 oz can of diced tomatoes
1/4 cup of ketchup
3 tbsp of dark brown sugar
1 tbsp of seasoned salt
1 tsp of pepper
2 cups of baby carrots
2 tbsp of cornstarch + 2 tbsp of water to form a slurry (I think it's perfect this way, but use 1/4 cup of each if you want the gravy very thick)
Egg noodles, to serve the Goulash over (optional, but cook separately on the stove according to package)

Steps:

  • Add 2 tbsp of the butter to the Instant Pot. Hit "Sauté" and adjust so it's on the "More" or "High" setting
  • Once the butter's melted and sizzlin', add the onion to the pot and sauté for 3 minutes in the butter.
  • Then, add the caraway seed and paprika followed immediately by the other 2 tbsp of butter, stirring constantly so the paprika doesn't stick to the bottom of the pot too much. As the butter's melting, we will also deglaze (scrape) the bottom of the pot to make sure it's free and clear of any caked-on paprika
  • Add the meat and sauté/sear for only for 2-3 minutes, constantly stirring in the pot (it shouldn't be fully cooked at all, just lightly browned/seared on the edges)
  • Add all the other ingredients except for the cornstarch slurry and egg noodles (if using, you'll cook the noodles on the stove separately while the Goulash is pressure cooking)
  • Hit "Keep Warm/Cancel" and then hit "Manual" or "Pressure Cook" for 30 minutes at high pressure. Once done, allow a 10 min natural pressure release (also known as a "NPR" which means you do nothing for 10 minutes) and then follow it up with a quick release
  • Once the lid's off, hit "Keep Warm/Cancel" again and then hit the "Sauté" button again and adjust so it's on the "More" or "High" setting. Once it comes to a bubble, stir in the corn cornstarch slurry and let bubble for a minute and the sauce will have thickened to the perfect consistency
  • Serve over egg noodles (boiled on the stove separately), if desired
  • Enjoy!

REAL HUNGARIAN GOULASH - COOK'S ILLUSTRATED

Real Hungarian Goulash - Cook's Illustrated image

From Cook's Illustrated, Dec 2008. Use a chuck eye roast (RZ doesn't recognize this cut). Do not use hot, half-sharp or Spanish paprika; if you can, mail-order your sweet paprika and use a fresh container. Cook's Illustrated prefers The Spice House. The stew can be prepared up to 2 days ahead; do not add the optional sour cream until after reheating. Remove the hardened fat and add water to thin it. (I like to add about 1/2 lb of button mushrooms, quartered, with the carrots and beef, but that wasn't in the original CI recipe.)

Provided by DrGaellon

Categories     Roast Beef

Time 3h55m

Yield 8 serving(s)

Number Of Ingredients 16

1 (3 1/2 lb) boneless beef chuck roast, trimmed of excess fat and cut into 1 1/2-inch cubes
table salt
1/3 cup sweet paprika
12 ounces roasted red peppers, drained and rinsed (about 1 cup)
2 tablespoons tomato paste
3 teaspoons white vinegar, divided
2 tablespoons vegetable oil
4 large onions, diced small
4 large carrots, peeled and cut into 1-inch thick rounds
1 bay leaf
1 cup beef broth, warmed
1 lb small potato, peeled
1/2 cup beef broth
1 cup water
1/4 cup sour cream (optional)
ground black pepper

Steps:

  • Place rack in lower-middle position of oven and heat to 325°F.
  • Sprinkle meat with 1 tsp salt and let stand 15 minute.
  • In a food processor, combine paprika, peppers, tomato paste and 2 tsp vinegar until smooth, 1-2 minutes.
  • Heat oil in Dutch oven until shimmering. Add onions and 1 tsp salt. Cover and reduce heat to medium. Cook, stirring occasionally, until onions soften but are not brown, 8-10 minutes.
  • Stir in paprika paste and cook until onions begin to stick to bottom of pan, 2 minutes.
  • Add beef, carrots and bay leaf. Stir until everything is well coated. Scrape down sides of pot, cover and place in oven. Cook, stirring every 30 minutes, until meat is tender, and liquid is 1/2" below top of meat, 2 to 2 1/2 hours.
  • Remove pot from oven and add enough warmed beef broth to bring liquid level up to 1/4" below top of meat. Do not cover meat in liquid! Replace pot cover and return to oven about 30 minutes more, until a fork slides in and out of beef easily.
  • Meanwhile, put potatoes, 1/2 cup beef broth and water in a saucepan. Bring to a boil, reduce to a rapid simmer, cover, and cook until potatoes are tender, 20-30 minutes.
  • Skim fat off surface of stew. Stir in 1 tsp vinegar and sour cream, if using. Remove bay leaf and adjust seasonings. Serve over boiled potatoes.
