1 medium apple, peeled and chopped
1 medium onion, chopped
1/2 cup chopped celery
3 cups cooked long grain rice

1/3 cup minced fresh parsley
1 tablespoon brown sugar
1/2 teaspoon salt
1/4 teaspoon ground allspice
1/4 teaspoon ground cinnamon
1/8 teaspoon pepper

Steps:

  • Preheat oven to 350°. In a large skillet, cook sausage, apple, onion and celery over medium heat until meat is no longer pink; drain. Stir in the remaining ingredients. , Transfer to a greased 2-qt. baking dish. Cover and bake 25-30 minutes or until heated through.

1 large red bell pepper, chopped
1 large orange bell pepper, chopped
1 large yellow bell pepper, chopped
1 large onion, diced
½ cup ketchup
¾ cup hot water
salt and pepper to taste

Steps:

  • In a large skillet, brown sausage on medium heat. Remove from heat and cut into thirds.
  • In a 2-quart casserole dish, combine the sausages, red bell pepper, orange bell pepper, yellow bell pepper, onion, ketchup and hot water. Mix together until well combined, and season with salt and ground black pepper.

1/4 teaspoon salt
1/4 teaspoon pepper
2 cups shredded cheddar cheese

  • Fold two 18-in.-long pieces of foil into two 18x4-in. strips. 3 tbsp vegetable, olive or rapeseed oil
8 sausages
500g bag frozen mixed Mediterranean veg
2 x 400g cartons tomatoes with garlic and onions
2 x 400g cans butter beans , drained
2 thick slices good, crusty bread

Steps:

  • Heat oven to 200C/180C fan/gas 6. Heat 2 tbsp oil in a flameproof casserole dish with a lid. Add the sausages and brown until golden all over, then transfer to a plate.
  • Put the frozen veg in the pan and cook for a few mins to thaw. Add the tomatoes, then half-fill one of the cans with water and pour into the dish. Add the beans, season well and bring the mixture to a simmer. Place the sausages on top of the veg, cover with a lid and cook in the oven for 40 mins.
  • Heat 1 tbsp oil in a frying pan. Tear the bread into small chunks or coarsley grate it, making chunky crumbs. Fry in the hot oil until crisp. Serve the casserole in bowls and top with the breadcrumbs.

2 large potatoes
1 large onion
1 (10 3/4 ounce) can condensed golden mushroom soup or 1 (10 3/4 ounce) can tomato sauce
salt and pepper (optional)

Steps:

  • Slice the sausage and partially cook to eliminate fat, drain.
  • Cut the potato in half and boil, drain, and slice.
  • Slice onion thinly and dry fry to soften and eliminate the "bite" that often accompanies fresh onion.
  • Place sausage rounds in a baking dish.
  • Place a layer of sliced potatoes over the sausage.
  • Add the onion rings over the potatoes.
  • Continue to layer.
  • Pour undiluted soup or tomato sauce over this mixture.

This recipe is easy, turns out well every time, can be quickly made the morning of, and is easily tailored to your tastes. Plus, my husband loves it!

1 (16 ounce) bag frozen hash browns (Seasoned or unseasoned to your taste)
1/4 cup melted butter
1 lb sausage (we prefer homemade or Jimmy Dean's sage)
1/2 yellow onion, chopped
6 jumbo eggs
12 ounces shredded cheddar cheese
16 ounces small curd cottage cheese

Steps:

  • Brown sausage. Drain.
  • Grease a 13x9 pan. In the pan, mix together the melted butter and frozen hash browns. Smooth into bottom layer.
  • In another bowl, mix together the sausage, eggs, onion, cheddar and cottage cheese.
  • Pour mixture over the hashbrowns.
  • Bake for an hour at 375 degrees. It's done when a toothpick comes out clean.
