HOMEMADE HOT CHOCOLATE WITH OLD-FASHIONED DOUGHNUT STICKS



Homemade Hot Chocolate with Old-Fashioned Doughnut Sticks image

8 cups whole milk
16 ounces semisweet chocolate, chopped small or chips
1/4 cup sugar
6 cinnamon sticks
1 teaspoon vanilla extract
Old-Fashioned Doughnut Sticks, recipe follows
Nonstick spray, for pan
1 1/2 cups all-purpose flour
1/2 cup granulated sugar
1 teaspoon baking powder
1/4 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup milk
1 egg, lightly beaten
1/2 teaspoon pure vanilla extract
3 tablespoons unsalted butter, melted
2 cups confectioners' sugar
2 to 3 tablespoons milk, more as needed

Steps:

  • Bring the milk, chocolate, sugar, cinnamon and vanilla extract to a simmer in a medium saucepan. Whisk until completely melted and smooth.
  • Serve with the Old-Fashioned Doughnut Sticks.
  • For the dougnuts: Preheat the oven to 375 degrees F. Spray two 6-well eclair pans with nonstick spray.
  • In a large mixing bowl, whisk together the flour, sugar, baking powder, cinnamon and salt to combine. Add the milk, egg, vanilla and butter, and mix gently until combined.
  • Fill the wells of the prepared eclair pans about halfway with the batter.
  • Bake until the doughnuts spring back when touched and a toothpick comes out clean, 10 minutes. Transfer the pans to a rack set over a baking sheet; let cool for 3 to 5 minutes. Remove the doughnuts from the pans and let cool completely on the rack.
  • For the glaze: Whisk the confectioners' sugar and milk together until smooth.
  • Dunk the doughnuts in the glaze to coat completely. Transfer to a rack and let set for 10 minutes before serving.

½ cup dark chocolate
¾ cup butter
½ cup cocoa powder
¾ cup sugar
1 tablespoon vanilla extract
5 eggs
½ cup chocolate, melted
¼ cup sprinkles

Steps:

  • Melt the chocolate and butter together in a saucepan over a medium heat.
  • Stir in the cocoa powder, sugar, and vanilla extract.
  • Take off the heat and whisk in the eggs one at a time.
  • Tear off a piece of greaseproof paper and scrunch into a small ball.
  • Pre-heat the oven to 350°F (180°C).
  • Place the the paper balls in the centre of each hole in a muffin tin. Pour the chocolate doughnut mixture in the muffin tin holes, circling around the paper balls and being careful not to cover them.
  • Bake in the oven for 8-10 minutes.
  • Carefully take the doughnuts out of the muffin tin. Take out the paper balls with your fingers. You should have a circle-shaped hole in each doughnut.
  • Dip in some melted chocolate, followed by some sprinkles.
  • Enjoy!

3 tablespoons cooking oil
1 cup granulated sugar
2 eggs
1 cup milk
1 teaspoon vanilla
3 3/4 cups all-purpose flour
4 teaspoons baking powder
1/2 teaspoon salt
1/3 cup cocoa

Steps:

  • Cooking Oil 3tbsp. 50 ml.
  • Lard or oil for deep frying.
  • Put oil, sugar, eggs, milk and vanilla in mixing bowl. Mix together well.
  • Add flour, baking powder, salt and cocoa. Stir to blend. Heat lard or oil to 375f
  • On floured surface roll dough 1/4 inch (5/8) thick. cut with doughtnut cutter. Drop carefullly into hot fat(lard)or oil a few at a time so as not to crowd. When light brown turn to cook other side. Cook center "holes" too. Drain standing on edge on paper towles of tray. Glaze for speical effects.( I will post Glaze Later).

Although I live in Florida now, this is still a favorite on a chilly night. After shoveling snow on those cold New England winter days, this is the way Mama made it and had waiting for my brothers and me. We would line up our boots outside the door and run to the kitchen table in our stocking feet. Sometimes, instead of whipped cream, we would put a spoonful of "Marshmallow Fluff" on top. Oh, those were the days!!!

115 g chocolate (with more than 60% cocoa solids)
1 2/3 cups milk
1 3/4 cups plain flour
2/3 cup milk
2/3 cup water
2 eggs, beaten
vegetable oil, for deep frying
caster sugar or icing sugar, for dusting

Steps:

  • To make the doughnuts, sift the flour on to a small sheet of baking paper. Bring the water and milk to the boil in a pan. Tip in the flour and beat vigorously with a wooden spoon, stirring until the dough forms a ball and no longer sticks to the sides of the pan.
  • Remove the pan from the heat and let the dough cool a little. Gradually beat in the eggs, adding just enough to give a piping consistency. Spoon the mixture into a piping bag fitted with a large fluted nozzle.
  • Preheat the oven to 150°C/300°F.
  • To cook the doughnuts, heat the oil in a deep fat fryer or a wok until a piece of bread sizzles as soon as it hits the oil.
  • Squeeze the piping bag over the pan, snipping off 10cm/4in lengths with kitchen scissors. Fry the donuts in batches of 4-6 til golden, then remove them with a slotted spoon, drain on paper towel and keep warm in the oven while making the hot chocolate.
  • To make the Hot Chocolate:.
  • Break up the chocolate into small pieces, and put in a heat-proof bowl set over a pan of barely simmering water. Leave alone for 10 minutes, until it has completely melted.
  • Bring the milk to the boil in a small pan. When the chocolate has melted, remove it from the heat and stir in a little milk. Now whisk in the remaining milk (a hand held blender is good for this) until frothy.
  • Pour into mugs and serve hot. Remove the doughnuts from oven, roll in the sugar and eat immediately, dipping them into the hot chocolate.
  • Enjoy!

Steps:

  • To make the basic hot chocolate, combine the milk with the half-and-half in a small saucepan. Warm over medium-low heat, and then stir in the chocolate chips. Stir until melted (though there will still be lovely particles of chocolate throughout). If it's too chocolaty for you, splash in a little more milk. Add a splash of vanilla extract. If it's not quite sweet enough for you, add 1 teaspoon or so of sugar. Serve in mugs with whipped cream.

1 1/2 cups granulated beet sugar (you can use unrefined brown, too)
3 teaspoons Ener-G Egg Substitute, mixed with 4 tbsp water (equivalent of 2 eggs)
4 tablespoons non-hydrogenated vegan margarine or 4 tablespoons light vegetable oil
4 ounces unsweetened baking chocolate
1 1/2 teaspoons pure vanilla extract
1 cup soymilk, mixed with
1 teaspoon white vinegar
3 1/2 cups unbleached flour
3 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • Beat the egg replacer and sugar together until creamy in consistency.
  • Melt the margarine and chocolate together in a small saucepan over low heat.
  • Beat into the sugar mixture until well combined.
  • Combine the soy milk, vinegar and vanilla.
  • Stir this into the sugar/chocolate mixture.
  • In another bowl, combine the flour, baking powder, baking soda and salt.
  • Stir this into the liquid mixture until it forms a dough.
  • Chill this for about 1/2 hour to make it easier to handle.
  • Roll 1/2 the dough out onto a lightly floured board to a 1/2" thickness.
  • Cut out the doughnuts with a 3" diameter doughnut cutter (or regular, round cookie cutter).
  • Let them rest for about 10 minutes before frying.
  • Repeat with the rest of the dough.
  • Deep fry in hot oil for about 90 seconds each, turning every 15 seconds.
  • Remove from the hot oil and allow them to drain on paper towels.
  • Cool, and ice, glaze or sprinkle with powdered sugar as per your desires.
