S'MORES CUPS
Steps:
- Put the marshmallow creme and 2 tablespoons of the heavy cream in a large chilled bowl. Use a hand mixer to beat until the creme is loosened, smooth and shiny. Add the remaining 1/2 cup heavy cream to the bowl and whip to medium peaks, starting on low and then changing to medium speed.
- Put 2 tablespoons of crushed graham crackers in the bottom of each of four 9-ounce plastic tumbler cups. Top with 3 tablespoons marshmallow whipped cream, then 3 tablespoons chocolate pudding. Repeat so you have another layer of each ingredient. Refrigerate until ready to serve.
- When ready to serve, place the marshmallows onto skewers. Toast the marshmallows over a hot grill (or on the stove top).
- Place a toasted marshmallow on top of each s'mores cup. Garnish each with a piece of chocolate bar and graham cracker.

This is a variation of an extremely classic recipe. Please only use the large Reese cups, if you feel like they are not melting properly, you may cut the cups crosswise in half. Also, if you do not have homemade marshmallows, obviously you can use store bought ones.

- If using a campfire/fire-pit: Prepare the graham cracker in an area near your fire, and using a utensil (such as a tree branch or your marshmallow roasting sticks) roast the marshmallows until golden brown and toasted. Place the marshmallow on 1/2 of the graham cracker, place a Reese's cup on top, and the other 1/2 of graham, light press down to flatten the marshmallows.
- If using a gas stove-top or grill: Prepare graham crackers near the stove top, place a marshmallow on a fork (you can use your tree branch or marshmallow roasting sticks) turn on flame to highest setting and let the marshmallow brown, being careful not to let it catch fire. place the browned marshmallow on 1/2 graham cracker and place Reese's cup on top, with the other 1/2 of graham. Lightly push down on to flatten the marshmallow.

- In a stand mixer, combine the butter and sugars and mix until fluffy. Mix in the eggs and vanilla until combined. Add the flour, graham crackers, salt and baking soda and mix well. Stir in the peanut butter chips then cover and refrigerate the dough for about one hour.
- Preheat oven to 375°F Take a tablespoon of the dough, roll into a ball, and drop onto a greased baking sheet. Repeat with the rest of dough, leaving about 2 inches between each to allow it to spread. Bake for 6 minutes, then remove from the oven.
- Push 3 - 5 marshmallows and a few pieces of the chopped Reese's Cups into each cookie. Return to oven and bake for another 2 - 3 minutes until golden brown and the marshmallows are a bit toasted. Cool on a wire rack and enjoy!

REESES CUP COOKIES
The most decadent candy bar-like cookie you will ever come across. They taste the best when fresh out of the oven or warmed in the microwave just so the Reeses cup on top is slightly gooey. A definite child OR adult pleaser!

- Preheat oven to 350 degrees F. Place parchment paper on the cookie sheets you plan on using.
- Combine chocolate chips and chocolate squares in a microwave-safe bowl. Microwave until melted (you will need to stop the microwave and stir the chips every two minutes to prevent the chocolate from burning). Cool slightly.
- Combine sugar and 1/2 cup shortening in a large bowl. Beat at medium speed until blended and crumbly. Beat in the eggs, one at a time, then add salt and vanilla. Reduce the speed of the mixer. Add chocolate slowly. Mix well. Stir in the flour and baking soda with a spoon until well blended. Shape dough into 1 1/4 inch balls and place a couple of inches apart on an ungreased parchment covered baking sheet.
- Bake at 350 degrees F for 8-10 minutes or until set. Don't overbake! Press the peanut butter cup into the center of each cookie immediately after removing from oven. Cool for a few minutes on the baking sheet and then transfer the cookies to another surface.
- Place the peanut butter chips in a microwave-safe dish. Microwave until smooth (you will need to stir after every minute needed in the microwave to prevent burning). Scrape the melted peanut butter chips into a frosting piping bag with a round, small tip. Squeeze the frosting in a drizzled zig-zag pattern. Enjoy!

- Adjust the oven rack to the center position of the oven. You want an even heat all around the skillet. Place the cast iron skillet on the rack, and preheat the oven to 450ºF. Once the oven is hot, use a pot holder or towel to remove the hot skillet from the oven.
- Place oil in the skillet and, using a pot holder to hold the handle, swirl the oil in a layer on the bottom of the skillet to coat evenly. Place skillet on a pot holder and pour chocolate chips in an even layer. Carefully arrange peanut butter cups in one even layer over the chocolate chips. Arrange marshmallow halves over the peanut butter cups, uncut side up, until the skillet is covered completely.
- Bake for 5-7 minutes or until the marshmallows are toasted to your preference. Watch closely. Use a pot holder or oven mitt to remove the skillet from the oven and allow to rest for 5 minutes before serving.
- Serve immediately with graham cracker squares or sticks, but be careful because the dip and the skillet will be hot.

- Preheat the oven to 350 degrees. Line an 9-inch square baking pan with foil (let the foil hang over all the edges so that you can use it to pull the bars out of the pan later) and grease the foil well.
- To make the dough combine the butter and sugar in a large bowl and beat until light in color and fluffy, about 3 minutes. Add the egg and vanilla and beat to combine. Add the flour and stir until well combined. Stir in the graham cracker crumbs.
- Press 2/3 of the dough into the bottom of the baking dish. unwrap and place Reese’s Cups evenly over the dough, sprinkle the chocolate chips evenly over the Reese’s (letting them fall into the cracks), and then carefully spread the whole container of marshmallow creme over the chocolate. Then gently press the remaining dough evenly over the marshmallow creme.
- Bake for 25 minutes until the crust starts to turn golden brown. Remove from the oven and allow the bars to cook for an hour in the pan. After an hour use the edges of the foil to remove the bars from the pan. Let the bars cool on a wire rack (in the foil) out of the pan until set (this will take a couple of hours).
