1 1/2 cups blended tomatoes (2-3 medium tomatoes)
1/2 cup fresh lemon juice
2 tablespoons nama shoyu
2 tablespoons chopped yellow onions
3 garlic cloves, peeled (I only used two as I was afraid the taste would be too strong)
1 cup sun-dried tomato
1 pinch sea salt

Steps:

  • Combine all of the ingredients in a high-speed blender and blend until smooth.

No oil, salt, allium family, none of the extra stuff! Straight deliciousness!! You can also try cucumber "noodles" or even some prefer celery noodles!! Celery is easier if you don't have a spiralizer - just follow around the curve with the veggie peeler.

3/4 cup sun-dried tomato (soaked)
1 (10 ounce) package sweet grape tomatoes
1 stalk celery, chopped
1 cup fresh basil
1/2 lime, juice of
3 zucchini (spiralized or cut into strips with veggie peeler)

Steps:

  • Blend the first 5 ingredients until smooth!
  • Pour the sauce over the "noodles" and garnish with basil or even chopped tomatoes if you like.

2 tomatoes (about 1 cup chopped)
1 cup sun-dried tomato (soaked in water for at least 10 minutes)
1 red bell pepper
2 tablespoons fresh basil
2 teaspoons oregano
3/4 teaspoon salt
1/2 teaspoon black pepper
1 dash cayenne

Steps:

  • Place all the ingredients in a food processor fitted with the S blade and blend until smooth.

  • Soak sun-dried tomatoes: Start with softening the sun-dried tomatoes. Do this by placing them in a small bowl of warm, not boiling, water, and let soak for about 20 minutes. Drain water.
  • Make the sauce: Once tomatoes are ready, place all the ingredients into a food processor or blender, and blend until mixture is fairly smooth. You can also leave it a little chunky if you like. Taste for flavor adding more of anything you like.
  • Store: Leftovers sauce can be stored in an airtight container in the refrigerator for up to 5 – 6 days.
