LAYERED PEAR-CREAM CHEESE MOLD



Layered Pear-Cream Cheese Mold image

This pretty lime gelatin mold has two layers. Both are studded with pears and one is made with cream cheese and pecans. Serve as a salad or dessert.

Number Of Ingredients 6

1 can (16 oz.) pear halves, undrained
1 pkg. (8-serving size) JELL-O Lime Flavor Gelatin
1-1/2 cups cold ginger ale
2 Tbsp. fresh lemon juice
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1/4 cup chopped pecans

Steps:

  • Drain pears, reserving liquid. Add enough water to liquid to measure 1-1/2 cups; bring to boil in small saucepan. Chop pears; set aside.
  • Stir boiling liquid into gelatin in large bowl at least 2 minutes until completely dissolved. Stir in cold ginger ale and lemon juice. Pour 1 cup of the gelatin into 5-cup mold. Refrigerate about 30 minutes or until slightly thickened (spoon drawn through leaves definite impression). Arrange some of the pears in mold, pushing into gelatin in mold.
  • Meanwhile, gradually add remaining gelatin to cream cheese in large bowl, mixing with wire whisk until well blended. Refrigerate about 30 minutes or until slightly thickened (consistency of unbeaten egg whites). Stir in remaining pears and pecans. Spoon over gelatin layer in mold.
  • Refrigerate 4 hours or until firm. Unmold. Store leftover gelatin mold in refrigerator.

1 can (20 ounces) pineapple tidbits
1 package (6 ounces) lime gelatin
1-1/2 cups boiling water
1 cup ginger ale, chilled
1/4 teaspoon ground ginger

Steps:

  • Drain pineapple, reserving juice; set the pineapple aside. In a bowl, dissolve the gelatin in water. Stir in ginger ale, ginger and the reserved juice. Chill until syrupy, about 45 minutes. Fold in pineapple. Transfer to a 6-cup mold coated with cooking spray. Refrigerate until firm. Unmold onto a serving platter.

PLUM, RED PEAR, AND GINGER JELLY

This is a great tasting jelly, that just came to be because I had this in my refrigerator at the time. It is very good, especially on biscuits or even scones.

3 plums
3 red pears
1/2 ginger root
2 c sugar
1 qt water
3-5 envelopes of knox unflavored gelatin

Steps:

  • 1. Peel plums, pears, and ginger. Then slice paper thin or as small as possible.
  • 2. Then boil in water. Reduce to a simmer and cover. Cook for 30-45min.
  • 3. Place in food processor. Puree/liquefy.
  • 4. Return to pot. Add sugar and whisk.
  • 5. Cook on medium heat for 10 minutes.
  • 6. Then while whisking, add the envelopes of gelatin, one at a time.
  • 7. Make sure to not leave any clumps.
  • 8. Pour into sterilized jars, leaving 1/2in gap.
  • 9. Can using water bath process.

GINGER PEAR CAKE

1/4 cup unsalted butter
2 ripe Bosc pears, peeled, cored, and cut into 1-inch chunks
1/2 cup dark brown sugar
2 teaspoons pumpkin pie spice
1 1/2 cups all-purpose flour
1 1/2 teaspoons ground ginger
3/4 teaspoon baking soda
1/2 teaspoons baking powder
1/4 teaspoon fine salt
1/4 cup milk
1/2 cup dark molasses
2 large eggs
1/4 cup water
Confectioners' sugar, for dusting, optional

Steps:

  • Position a rack in the center of the oven and preheat to 325 degrees F. Lightly spray a 9 by 13 by 2-inch baking dish with vegetable cooking spray. Line the pan with parchment or waxed paper.
  • Melt 2 tablespoons of the butter in a medium skillet over medium-high heat. Add the pears and cook, stirring occasionally, until golden brown, about 7 minutes. Stir in 1 tablespoon of the brown sugar and 1 teaspoon of the pumpkin pie spice and remove pan from the heat.
  • Whisk the flour, ginger, the remaining 1 teaspoon of pumpkin pie spice, baking soda, baking powder, and salt in a large bowl.
  • In another bowl, whisk the milk, molasses, and remaining brown sugar. Add the eggs and whisk until smooth. Use a spatula to stir the molasses mixture into the dry ingredients to make a thick liquid batter.
  • Heat the water and remaining 2 tablespoons butter in a small saucepan until just boiling. Whisk the hot water into to the batter until just combined. Stir in the pears. Pour the batter into the prepared pan. Bake in the center of the oven, until a toothpick inserted into the center comes out clean, about 40 minutes.
  • Cool cake in the pan on a rack. Cut into 12 squares. Dust with confectioners' sugar before serving, if desired.

I got this recipe out of a 2001 issue of Taste of Home magazine. It has been a summer favorite since. Try substituting your favorite gelatin flavor in place of the lime gelatin.

1 (29 ounce) can pear halves in natural juice
1 (3 ounce) package lime gelatin
1 (3 ounce) package cream cheese, cubed
1 cup whipped topping

Steps:

  • Drain the pears, reserving juice.
  • Set the pears aside and measure juice, adding water if necessary to equal 1 1/2 cups.
  • Pour juice into a medium saucepan; bring to a boil.
  • Add gelatin and stir until completely dissolved.
  • Gradually add cream cheese, whisking until smooth.
  • Cover and refrigerate until cool.
  • Mash reserved pears; fold into gelatin mixture.
  • Fold in whipped topping.
  • Pour into a 6 cup serving bowl, and chill until set.
  • Cooking time includes refrigeration time.

GINGER-SPICED PEARS

Number Of Ingredients 7

500g granulated sugar
500ml white wine vinegar
pared zest (use a vegetable peeler) and juice 1 orange
5cm piece ginger , thinly sliced (no need to peel)
3 bay leaves
1 tsp black peppercorn
1 ½kg small ripe pear

Steps:

  • Put the sugar, vinegar, orange zest and juice, ginger, bay leaves and peppercorns in a large pan. Bring slowly to the boil, stirring constantly to dissolve the sugar, then boil for 5 mins.
  • Meanwhile, peel, core and halve or quarter the pears, depending on size. Add the pears to the pan and poach gently for 10-15 mins until they are just tender. Remove with a slotted spoon and pack into warm sterilised Kilner jars with rubber seals (see tip below).
  • Boil the vinegar mixture hard to reduce by a third, then pour over the pears, including the spices. The pears need to be completely covered with the liquid. Fit the rubber seal and clamp the jar tightly closed. Reserve any leftover syrup for topping up the jars later, as the pears will absorb the syrup over time. Store for up to 2 months.

STICKY GINGER PEAR PUDDING

A great last-minute alternative to a traditional Christmas pudding - plus it reheats in only five minutes

85g golden syrup
175g dark muscovado sugar , plus 1 tsp extra
150ml milk
100g butter , plus lots extra for greasing
175g self-raising flour
1 tsp bicarbonate of soda
2 tsp ground ginger
1 tsp cinnamon
6 balls stem ginger from a jar
2 ripe pears , peeled
1 egg
custard , to serve
50ml syrup from the ginger jar
100ml brandy
85g dark muscovado sugar

Steps:

  • Put the syrup, sugar and milk into a saucepan, then bring to a simmer to dissolve. Leave to cool almost completely while you get on with everything else. Heat oven to 180C/fan 160C/gas 4.
  • Put the butter, flour, bicarb, ground ginger and cinnamon into a food processor, then pulse until it forms fine crumbs. Generously butter a 1.4-litre pudding basin and sprinkle 1 tsp sugar into the bottom. Cut 3 of the ginger balls in half and put 5 halves, rounded-side down, into the bottom, like the points of a star. Cut one cheek from a pear, then slice through about 10 times, without cutting through the stalk end. Put this into the bottom of the bowl amongst the ginger, then press gently so that the pear fans out. Core, then thinly slice the remaining pear. Finely chop the rest of the ginger.
  • Tip the cooled syrup mix and egg into a food processor, then quickly whizz with the dry ingredients to a batter. Take out the blade, then stir in the chopped ginger and sliced pear. Scrape the mix into the basin, then bake for 1 hr 20 mins until risen and dark golden, and a skewer comes out clean. Whatever you do, don't open the oven before 45 mins is up.
  • To finish, gently melt the syrup ingredients in a pan together until the sugar dissolves, then boil briefly. Turn the pudding out of its basin just before serving, spoon over the syrup and serve with custard.

200g unsalted butter , plus extra for greasing
100g caster sugar
100g soft brown sugar
2 large eggs , beaten
1 tsp vanilla extract
200g self-raising flour
1 tsp baking powder
2 balls stem ginger in syrup, drained and chopped
2 pears , peeled, cored and roughly chopped
3 tbsp syrup from the ginger jar
3 tbsp granulated sugar

Steps:

  • Heat oven to 160C/140C fan/gas 3. Grease and line the base and sides of a 900g/2lb loaf tin with baking parchment, ensuring the parchment comes 2cm above the top of the tin. Beat the butter and sugars together until pale, then gradually stir in the eggs and vanilla extract. Fold the flour, baking powder and a pinch of salt into the mix, then quickly stir through the stem ginger and pears. Pour the mixture into the loaf tin, smooth the surface, then bake for 1 hr - 1 hr 10 mins or until a skewer inserted in the centre comes out clean. Allow to cool in the tin.
  • To make the glaze, mix the syrup with 1 tsp water and the sugar. Poke the surface of the loaf all over with a skewer, then pour on the syrup. Serve warm with cream, or allow to cool completely.
