An easy red beans over rice recipe straight out of New Orleans

Yield Makes 6 servings

Number Of Ingredients 13

1 lb. red kidney beans
2 qt. water
1 large onion (chopped)
1/4 cup vegetable oil
1 lb. smoked ham (cubed)
1 lb. smoked sausages (in 1/2-inch slices)
1 cup water
1 tbsp. chopped garlic
1 bay leaf
1 tbsp. black pepper
2 tbsp. chopped parsley
1 tsp. whole thyme leaves
2 level tbsp. salt

Steps:

  • Pick through beans, removing all bad beans or any other particles. Wash beans well. Place beans in a 5-quart pot. Add the 2 quarts of water. Add onions; bring to a boil. Lower heat and let beans boil slowly for 1 hour. When beans are soft, stir well, mashing some against the side of the pot.
  • Heat oil in frying pan; add ham and sausage. Sauté in oil for 5 mintues. Then add the sausage, ham, and oil to beans. Deglaze pan with the cup of water, then pour into beans. Add all other ingredients. Let simmer for 30 minutes. Beans should be nice and creamy. Serve over rice.

Red Kidney beans by Camellia in LA are far superior beans to anything else on the market. I get them from Cajungrocer.com since I can't find them in my area. Additionally, They stay good for a very long time. Some beans get too old, too hard - these are always perfect. Tonight I found a bag that was previously opened and put in a zip loc that is at least four years old. I cooked them and still top quality. This is so delicious with lard, you don't even need to add meat - hence Poor Holler Style. You'll never eat better - more delicious beans!

1 (16 ounce) bag red kidney beans, Cameilla's, preferred brand
8 cups water
1/3 cup lard
1 tablespoon sea salt (to taste)

Steps:

  • Rinse and pick beans, do not soak.
  • Put beans in large pot and add cold tap water.
  • Cover, bring to a boil on high, reduce heat to a simmer.
  • After 1 hour, add lard and salt.
  • Bring back to a boil, reduce to simmer and cook for 2 - 3 hours or until done.
  • You may or may not need to add a little water halfway through cooking time. It depends on how much water the been need.
  • TIP: You can put pork fat in your crock pot on low and render the fat off, refrigerate and you have lard. You can also use your fat from a pork butt.

This is a hearty Southern dish, easy to make and full of flavor and quite spicy! I sometimes add in cooked ground beef, you can add in some chopped cooked bacon or use spicy dryed smoked sausage to the beans for smokey flavor --- I also like to add in some Creole seasoning -- see my recipe#186029

3 -4 tablespoons oil
1 medium onion, chopped
1 -2 tablespoon chopped fresh garlic
1 green bell pepper, chopped
1 -2 teaspoon crushed red pepper flakes
1 -2 tablespoon chili powder (or use chipotle chili powder or to taste)
1 teaspoon paprika (or to taste)
2 cups tomato sauce (can add in more)
1 (13 ounce) can stewed tomatoes (with juice)
salt
1 -2 teaspoon sugar
1 -2 teaspoon louisianna hot sauce (add in only if you like extreme spicy!)
2 (15 ounce) cans red kidney beans, drained and rinsed under cold water
5 -8 slices bacon, cooked and finely chopped (optional, or use dryed smoked sausage, sliced)
4 cups cooked rice

Steps:

  • Heat oil in a large skillet over medium heat.
  • Add in onions, garlic green bell pepper and crushed chili flakes; saute until veggies are soft (about 8 minutes).
  • Sprinkle with chili powder and paprika, cook about 1 minute.
  • Add in tomato sauce, stewed tomatoes and hot sauce (if using) season with salt and add in sugar to taste if needed.
  • Add in beans, cooked ground beef and bacon if using; mix to combine and simmer for about 1 hour.
  • Serve mixed or over rice topped with a dollup of sour cream if desired.

I was browsing through my copycat recipes book and found one for Popeye's Red Beans & Rice which was the base for this recipe. I didn't know what a "16-oz can red chili beans in chili gravy" was so I figured a regular can of kidney beans oughta do it...and healthy brown rice! I had a few green onions so I added them for pleasing color and flavor, made a nice burrito base with queso blanco, spinach, and tofu!

1 cup brown rice
2 cups water
1 dash salt
1 (16 ounce) can red kidney beans, rinsed and drained
1 tablespoon olive oil
1 teaspoon chili powder
1/4 teaspoon ground cumin
1 dash garlic salt (I used a little salt and a little garlic powder)
1/2 cup green onion, chopped

Steps:

  • Bring 2 cup lightly salted water in a heavy-bottomed saucepan to a boil, and immerse the brown rice in it. Loosely cover, lower the heat to medium-low and let simmer for 40 minutes or until the rice has absorbed all the water. Fluff it up and put it into another bowl for now.
  • Put the rinsed and drained beans into a small bowl and mix with the olive oil.
  • In the same pot you cooked the rice in, lightly heat the oiled beans but don't boil them.
  • Add the dry spices and let cook for about 5 minutes to incorporate the flavors.
  • Remove from heat, mix with the warm rice and fresh green onions if you have them, and serve immediately.
