This is a wonderful, easy thai recipe I received when I did a Thai cooking course. Be warned - it is hot but it is truly wonderful. You would never go back to bought satay sauce again. What's more it freezes well so make a big batch!!

1 tablespoon oil
2 -3 teaspoons crushed dried chili pepper flakes
1/2 cup finely sliced spring onion
1 tablespoon red curry paste
2 kaffir lime leaves, vein removed,chopped finely
1 -1 1/2 cup coconut milk
3/4 cup crunchy peanut butter
2 tablespoons palm sugar (or white will do)
1 lime, juice of

Steps:

  • Heat the oil and carefully fry the dried chilli flakes on low heat.
  • Add the spring onion, red curry paste and lime leaves and cook until fragrant.
  • Stir in 1 cup of coconut milk, the peanut butter and sugar.
  • Bring to the boil, stirring, and add the lime juice.
  • Thin to desired consistency with remaining coconut milk.

This sauce is great for marinating chunks of chicken or beef or veggies. Thread on a stick and bbq. Or use as a dipping sauce for the same.

1/3 cup creamy peanut butter
1 tablespoon soy sauce
1 cup beef stock or 1 cup chicken stock, use 1 cube and 1 cup water if necessary
1 tablespoon grated ginger
1 garlic clove, minced
2 teaspoons cornstarch

Steps:

  • In a large pan, combine peanut butter, soy, broth, ginger, garlic and water. Mix well and heat through. Add the cornstarch to thicken slightly.

A satay sauce without coconut milk and using raw peanuts to make your own peanut butter base.

Number Of Ingredients 12

100ml/3½fl oz vegetable oil
225g/8oz peanuts
4 shallots, chopped
2 cloves garlic, chopped
1 tsp shrimp paste (blachan)
1 small red chilli, chopped
pinch chilli powder
1 tsp brown sugar
1 tbsp dark soy sauce
400ml/14½fl oz water
1 lemon, juice only
salt, to taste

Steps:

  • To make the sauce, heat the oil in a pan or wok and stir fry the peanuts until golden. Place in a food processor and blend until smooth.
  • Fry the shallot, garlic and shrimp paste for a few seconds. Add the chopped chilli, the chilli powder, sugar, soy and water. Bring to the boil.
  • Add the blended peanuts and simmer for 8-10 minutes until thickened. Add the lemon juice and salt, to taste, if required.

While most Western versions of satay sauce are made with peanut butter, our Thai version starts with real peanuts-and you'll taste the difference.

1 cup fresh dry roasted peanuts (unsalted)
1/3 cup water
1 to 2 cloves garlic (minced)
1/2 teaspoon dark soy sauce
2 teaspoons sesame oil
2 tablespoons brown sugar
1 to 2 tablespoons fish sauce (or 1 1/2 to 2 1/2 tablespoons soy sauce)
1/2 teaspoon tamarind paste (or 1/2 tablespoon lime juice)
1/2 teaspoon cayenne pepper (or 1 teaspoon Thai chili sauce; more or less, to taste)
1/3 cup coconut milk

Steps:

  • Gather the ingredients.
  • Place all ingredients in a blender or food processor.
  • Blend or process until the sauce is smooth. If you prefer a runnier peanut sauce, add a little more water or coconut milk. Taste and then adjust as needed.
  • Serve warm or at room temperature with chicken, pork, beef, or vegetarian satay, or your favorite recipe. Enjoy.

This differs from my other peanut sauce. I like this one because it's pureed until smooth in the food processor and it doesn't contain coconut milk like my other one.

2 tablespoons peanut butter
2 tablespoons tamari soy sauce
1 tablespoon soy sauce
1 tablespoon sesame oil
1 tablespoon lime juice or 1 tablespoon lemon juice
1/4 teaspoon garlic powder
1 garlic clove, minced
2 green onions, sliced
2 tablespoons flat leaf parsley, chopped
1 pinch salt

Steps:

  • Blend all ingredients until nice and smooth in food processor. If mixture it too thick, thin out with a bit more tamari sauce or water to taste.
  • Can be made ahead of time, store in fridge until ready to use. Serve with chicken or beef satay.

½ lime, juiced
1 tsp clear honey
1 tbsp soy sauce
1 tbsp curry powder
3 tbsp smooth peanut butter
165ml can coconut milk

Steps:

  • Mix the lime juice, honey, soy sauce, curry powder and peanut butter in a small bowl. Add a splash of water if it's too stiff. Transfer to a small pan with the coconut milk, and heat gently for 5 mins stirring continually, until combined.
