Inspired by this recipe in Bon Appetit Original recipe hails from Tazzaria Notes: • If you don't have millet, make these oatmeal muffins, the recipe that inspired this one and one of my all-time favorites. • This muffin batter can be made ahead of time and baked off as you wish: the muffins taste as good on day 8 as on day 1. • If you do want to bake off the whole recipe in one go, use a quarter cup measuring cup to fill your standard pan. You'll have some leftover batter, likely enough for 1 jumbo muffin or a few small muffins. Try to refrain from dividing that leftover batter among the filled cups - the muffins bake more evenly when they are not over filled, and you can always bake off the remaining batter in a greased or lined ramekin. • You can make your own liners by cutting sheets of parchment paper approximately into 5×5-inch squares. It's kind of a pain to do this, but they look pretty, and they work remarkably well. As noted in the photo above, it's helpful to make the liners before you mix up the batter and to weigh down each one with anything that will fill in the cup. I also love these liners.

2 1/3 cups (230g) quick-cooking oats*
1 cup (136g) all-purpose flour or gluten-free flour if you are making gluten-free muffins
1/2 cup (114g) packed, dark brown sugar (light would probably be just fine)
1/2 cup (116g) sugar
1 1/2 teaspoons baking soda
1 teaspoon kosher salt
1 cup buttermilk
1/2 cup canola oil
1 large egg
1 teaspoon vanilla extract
1 cup millet
1/3 cup boiling water

Steps:

  • Preheat oven to 375°F. Spray a standard muffin pan (12-cup) with nonstick spray or line them with paper muffin liners. Whisk oats, flour, sugars, baking soda and salt together. Add buttermilk, oil, egg, vanilla and millet. Whisk to blend. Stir in 1/3 cup boiling water and let stand 5 minutes. Batter will be on the wet side. Divide batter among prepared muffin cups, filling each one no more than 3/4 full.
  • Bake muffins until tester inserted into center comes out clean, 25 to 30 (maybe as many as five minutes longer) minutes. Cool 10 minutes. Turn muffins out onto rack; cool. Serve warm or at room temperature.

Nonstick vegetable oil spray or paper muffin liners
2 1/3 cups quick-cooking oats (I have had success with all varieties of oats including using as much as a cup of steel cut oats)
1 cup whole wheat or white flour
1/2 cup (packed) dark brown sugar
1/2 cup sugar
2 tablespoons natural oat bran (if you have it)
2 tablespoons wheat germ (if you have it)
2 teaspoons ground cinnamon
1 1/2 teaspoons baking soda
1 teaspoon kosher salt
1 cup buttermilk
1/2 cup canola oil
1 large egg
1 teaspoon vanilla extract
1/3 cup boiling water

Steps:

  • Preheat oven to 375°F. Spray 8 large muffin cups (1-cup capacity) or 18 standard muffin cups (1/3-cup capacity) with nonstick spray, or line them with paper muffin liners. (Note: I baked off these muffins in paper-lined ramekins. It worked beautifully.)
  • Whisk oats and next 9 ingredients in large bowl. Add buttermilk, oil, egg, and vanilla; whisk to blend. Stir in 1/3 cup boiling water and let stand 5 minutes. Divide batter among prepared muffin cups.
  • Bake muffins until tester inserted into center comes out clean, about 28 minutes for large muffins and 20 minutes for standard muffins. Cool 10 minutes. Turn muffins out onto rack; cool. Serve warm or at room temperature.

⅓ cup millet
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 cup buttermilk
1 egg, lightly beaten
½ cup vegetable oil
½ cup honey

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease 16 muffin cups.
  • In a large bowl, mix the whole wheat flour, millet flour, baking powder, baking soda, and salt. In a separate bowl, mix the buttermilk, egg, vegetable oil, and honey. Stir buttermilk mixture into the flour mixture just until evenly moist. Transfer batter to the prepared muffin cups.
  • Bake 15 minutes in the preheated oven, or until a toothpick inserted in the center of a muffin comes out clean.

1/4 cup sugar
1/4 cup brown sugar, packed
2 tablespoons wheat germ, untoasted

1 1/2 teaspoons baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 1/2 cups quick-cooking oats
1/3 cup pitted dates, chopped
1/3 cup raisins
1/3 cup dried cranberries
1 cup low-fat buttermilk
1/4 cup canola oil
1 teaspoon vanilla extract
1 large egg, lightly beaten
1/2 cup boiling water
cooking spray

Steps:

  • Lightly spoon flour into a dry measuring cup; level with a knife.
  • Combine flour and next 7 ingredients (through salt) in a large bowl, stirring with a whisk.
  • Stir in oats, dates, raisins, and cranberries. Make a well in center of mixture.
  • Combine buttermilk, oil, vanilla, and egg; add to flour mixture, stirring just until moist.
  • Stir in boiling water. Let batter stand 15 minutes.
  • Preheat oven to 375°.
  • Spoon batter into 12 muffin cups coated with cooking spray.
  • Bake at 375° for 20 minutes or until muffins spring back when touched lightly in center.
  • Remove muffins from pans immediately; place on a wire rack.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a 12-cup muffin tin with paper liners.
  • Cream butter and brown sugar together with an electric mixer in a large bowl. Add yogurt, egg, and vanilla; beat until smooth.
  • Mix flour, cinnamon, baking powder, baking soda, and salt together in a separate bowl. Gradually beat dry ingredients into the creamed mixture until well mixed. Stir in oats and chocolate chips. Distribute the batter evenly between the 12 muffin cups, filling each at least 3/4 full.
  • Bake in the preheated oven until a toothpick inserted in the center of one of the muffins comes out clean, about 20 minutes. Cool the muffins in the pan on a wire rack for 5 minutes before removing the muffins to cool on the rack completely.

3/4 cup rolled oats (not instant or quick)
1 1/4 cups whole wheat pastry flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

2 tablespoons Splenda Sugar Blend for Baking
2/3 cup walnuts, chopped
1 egg
1/3 cup canola oil
1 tablespoon molasses
1/4 cup milk (optional)

Steps:

  • Mix oats and buttermilk. Let stand for 20 minutes.
  • Preheat oven to 400 degrees and spray a 12-cup muffin tin with cooking oil.
  • Place whole wheat pastry flour, baking powder, baking soda, salt, cinnamon, and Splenda in a mixing bowl. Whisk until well combined. Stir in walnuts.
  • In a separate bowl, mix together egg, canola oil, and molasses. Add this mixture to flour mixture and stir well. The batter will be very thick. If it's too thick, add 1/4 cup milk.
  • Spoon batter into muffin tin. Bake for 15 minutes. Cool on wire rack for 5 minutes before turning muffins out of pan.
