GRILLED TURKEY, BRIE, AND APPLE BUTTER SANDWICH WITH ARUGULA

Steps:
- Spread each of 4 slices of bread with 1/2 tablespoon of butter. Now spread each with 1 tablespoon of the apple butter. Top each slice of bread with a couple of slices of turkey, cover that with 2 to 3 slices of brie (enough to cover the turkey), and finally, arrange 2 to 3 arugula leaves on top. Spread the remaining 4 bread slices with 1/2 tablespoon of butter and lay them, buttered sides down, over the cheese; press gently.
- Heat a large cast-iron or other heavy skillet over medium-low heat. Add the remaining 1 tablespoon butter and let it melt to evenly coat the bottom of the pan. Add as many sandwiches as will comfortably fit (either 2 or 4) and cook 2 to 3 minutes until the bread is golden brown and the cheese begins to melt. Flip and cook 2 to 3 more minutes to brown the bread. (Add another tablespoon of butter and cook the remaining sandwiches, if you need to.) Cut the sandwiches in half and serve hot.

Anybody can make a turkey sandwich but this French inspired dish is something really special. Crusty French bread, mild creamy Brie, tart apple and peppery watercress bring sophistication and a quick trip through the oven makes the cheese melty, the bread toasty, and everything nice and warm. - Preheat oven to 350°F.
- Combine honey (mixed with a pinch of red pepper flakes) and mustard in a small bowl.
- Cut bread in half lengthwise; place on a baking sheet.
- Spread honey mixture on bottom half of loaf; top with turkey and cheese.
- Bake at 350°F for 5 minutes or until cheese begins to melt.
- Arrange watercress and apple slices onto melted cheese; sprinkle with pepper.
- Cover with top half of loaf, and cut into 4 portions.

SMOKED TURKEY SANDWICHES
These sandwiches are really good - my dh said about them "I usually don't like turkey sandwiches but these are really good". I used some light products when I made these (light mayo and light whole wheat bread) without anyone being the wiser. We served these with fruit salad and pickels for a no-work dinner. - In a large skillet over medium high heat, heat oil and then add in onions, cooking until llight browned, breaking up into rings. (8-10 minutes). Remove from heat and stir in vinegar and salt and pepper. Set aside.
- Chop enough argula to measure 1 cup and place it in a small bowl. Mix in the mayonnaisse, salt and pepper.
- To make sandwiches: spread 1 1/2 tablespoons (I used less) of the argual/mayo over the cut sides of 4 slices of bread. Divide the turkey slices among the 4 bread slilces and then top with the blue cheese, red onion slices and argula leaves and the remaining slices of bread.

- Combine the mustard, vinegar, parsley, and oil.
- In another bowl, combine the walnuts and onions; stir in 2 Tbsp of the mustard mixture.
- Remove bread from the center of each roll half, leaving 1/2" thick shells.
- Spread each roll half with 1 tsp of the mustard mixture.
- Dividing evenly, line each sandwich half with spinach and turkey; place 2 Brie slices on each bottom half of the rolls.
- Top the cheese with the walnut mixture.
- Carefully place the filled roll tops over the walnut mixture; slice sandwiches in half and serve.

Make these when you have some beautiful fresh herbs. This is different and delicious because of the fresh herbs, garlic and pepperoni in the mayo mix. It makes a very special sandwich. - Cut 6 small (one-person size) baguettes in half.
- Mix together mayo, cilantro, oregano, garlic and pepperoni.
- Spread evenly over the baguette halves.
- On 6 halves, now layer the brie first, spread a bit to fill in gaps, then turkey, tomatoes, avocado, and season with s&p.
- Top with spinach.
- Put the other half of the baguette on top of the filling mix.
- This can be refrigerated for about 2 hours, but any longer and the avocado will start to darken.

- In a small saucepan, melt 1 teaspoon oil over medium heat. When hot, add onions and cook, stirring occasionally, until they are browned and beginning to caramelize, 10-12 minutes. Set aside.
