Kosher salt
2 9-ounce packages mushroom agnolotti or other ravioli
4 tablespoons unsalted butter
1 small shallot, finely chopped
1 9-ounce package frozen artichoke hearts, thawed
Freshly ground pepper
1/4 cup dry white wine
1/2 cup heavy cream
1/2 cup grated parmesan cheese (about 1 ounce)
1/2 cup frozen peas, thawed
Pinch of ground nutmeg
2 tablespoons chopped fresh tarragon

Steps:

  • Bring a large pot of salted water to a boil. Add the ravioli and cook as the label directs. Reserve 1/2 cup cooking water, then drain.
  • Meanwhile, melt the butter in a large skillet over medium-high heat. Add the shallot, artichoke hearts, 1/4 teaspoon salt and a few grinds of pepper. Cook, stirring, until the artichokes are golden brown, about 5 minutes. Add the wine and cook until mostly evaporated, about 1 minute. Add the heavy cream and bring to a simmer. Add the parmesan, peas and nutmeg. Cook, stirring, until the sauce is thickened, about 1 minute.
  • Add the ravioli, tarragon and reserved cooking water to the skillet; gently stir to combine. Season with salt and pepper.

2 ounces thinly sliced pancetta (8 to 10 slices)
2 10-ounce packages spinach-ricotta ravioli
6 tablespoons unsalted butter
2 teaspoons finely grated lemon zest, plus 1 teaspoon lemon juice
1 cup frozen peas, thawed
1/4 cup grated pecorino-romano cheese, plus more for topping
Freshly ground pepper
Chopped fresh basil, for topping

Steps:

  • Bring a large pot of salted water to a boil. Meanwhile, cook the pancetta in a large nonstick skillet over medium-high heat, turning, until browned and crisp, 8 to 10 minutes. Remove to a paper towel-lined plate and wipe out the skillet.
  • Add the ravioli to the boiling water and cook as the label directs. Reserve 1/2 cup cooking water, then drain gently.
  • Combine the butter and lemon zest and juice in the reserved skillet over medium heat. Add the peas, ravioli and 1/4 cup of the reserved cooking water; toss to coat. Stir in the pecorino and toss. Season with salt and pepper. Add more cooking water, 1 tablespoon at a time, to loosen.
  • Divide the ravioli, peas and any sauce among shallow bowls. Sprinkle with more pecorino. Crumble the pancetta and scatter over the ravioli. Top with basil.

1 (20 ounce) package cheese ravioli
3 tablespoons butter
1 (8 ounce) package fresh mushrooms, sliced
4 cloves garlic, minced
1 (10 ounce) container Alfredo sauce
2 tablespoons grated Parmesan cheese
2 green onions, finely chopped
¼ teaspoon crushed red pepper flakes to taste

Steps:

  • Bring a large pot of water to a boil. Add ravioli and cook for 5 to 8 minutes or until al dente; drain.
  • Heat the butter in a skillet over medium heat. Stir in the mushrooms and garlic, and cook until tender.
  • In a medium saucepan over low heat, toss the cooked ravioli with the Alfredo sauce to coat. Mix in the mushrooms and garlic. Cook and stir until sauce is heated. Top with Parmesan cheese, green onion, and red pepper to serve.

1 bag frozen cheese ravioli, cooked and drained
2 boneless skinless chicken breasts, cubed
1 teaspoon garlic
salt and pepper
2 tablespoons butter
1 (1 lb) jar ragu alfredo sauce
1 (8 ounce) carton fresh sliced mushrooms
1 small red bell pepper, diced
1 small onion, diced
black olives, sliced
1 (2 cup) package shredded sargento four-cheese Mexican blend cheese
1 (16 ounce) cont. ricotta cheese or 1 (16 ounce) cottage cheese
parmesan cheese

Steps:

  • Saute chicken, garlic, a little salt and pepper, red peppers and onion in butter til chicken is done.
  • Stir in mushrooms and olives. (I use about a half a can of olives.).
  • In lightly greased 13x9 pan layer:.
  • 1/2 cheese raviolis.
  • 1/2 chicken mixture.
  • 1/2 of the ricotta or cottage cheese.
  • Sprinkle with parmesan cheese.
  • 1/2 of the alfredo sauce.
  • 1/2 of the shredded cheese.
  • Repeat.
  • Bake in 350º oven, covered, for 30 minutes.
  • Uncover and bake 5-10 minutes longer.

This is a very quick restaurant version of tortellini Alfredo. You can use a small canned ham, spam, bacon, or even leftover ham. You can also add a can of mushrooms, too. Served with a salad and garlic bread. It's great! I'm asked to make this all the time by my kids and their friends.

1 (16 ounce) package frozen meat-filled tortellini
1 (15 ounce) can sweet peas, drained
1 ½ cups fully cooked ham, cut into 1/2-inch cubes
¾ cup heavy cream
¼ cup grated Parmesan cheese
salt and ground black pepper to taste

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil; stir in tortellini and return to a boil. Cook uncovered, stirring occasionally, until the tortellini float to the top and the filling is hot, 3 to 5 minutes. Drain and return to the pot.
  • Mix in peas, ham, cream, and Parmesan cheese and simmer over medium heat until sauce thickens, about 4 minutes. Season with salt and pepper.

1 cup sliced onion
1 cup sliced fresh button mushroom
4 slices lean bacon, coarsely chopped (We used Turkey bacon)
10 ounces refrigerated low-fat alfredo sauce (we used Buitoni LIGHT Alfredo Sauce) or 10 ounces alfredo sauce (we used Buitoni LIGHT Alfredo Sauce)
1/2 cup green peas, cooked
flat-leaf Italian parsley (to garnish)
1/8 teaspoon fresh ground black pepper
freshly shredded parmesan cheese (We used a little of each) or romano cheese (We used a little of each)

Steps:

  • Saute onion, mushrooms and bacon in medium saucepan over medium-heat until bacon is crisp and the onions and mushrooms soft; drain.
  • Add pasta, sauce, pease and pepper; cook stirring occasionally, for 1 minutes.
  • Sprinkle with parsley and cheeses.
  • Serve with cheese and a rich, Chardonay.

Getting tired of boiled ravioli with the sauce? I was and rarely bought refrigerated ravioli anymore from the store. This has totally changed how ravioli can be served without boiling and it has become one of my husband's favorite foods. The recipe comes from Cuisine at Home with modification. What is so great about this recipe is you can use any ravioli of your choice.

Number Of Ingredients 12

6 -8 ounces fresh snow peas, trimmed
red pepper flakes, pinch
1/4 cup water
salt
16 ravioli, refrigerated (store-bought of your choice)
2 tablespoons olive oil
2 garlic cloves, sliced
1 tablespoon unsalted butter
3/4 cup cream or 3/4 cup half-and-half
1 tablespoon lemon juice, fresh
2 teaspoons lemon zest, matchstick pieces
2 tablespoons parmesan cheese or 2 tablespoons romano cheese

Steps:

  • Slice snow peas diagonally in half for easier eating.
  • Heat a nonstick skillet or frying pan over medium high heat and add snow peas, red pepper flakes, water, and salt to taste. Cook for 2-3 minutes until peas are tender. Do not over cook and remove from heat.
  • Heat a large nonstick skillett over medium and add olive oil and ravioli in two batches. Cook until brown on one side, about 2-3 minutes. Flip ravioli, add 2 T water to skillet, cover and steam until soft, about 1-2 minutes more.
  • Remove ravioli to a plate and repeat with second batch.
  • For the sauce:.
  • Saute garlic in butter in a small skillet about 1 minute. Stir in cream, increase heat to high, and boil until cream is reduced to about 1/2 C, about 3 minute.
  • Stir in lemon juice and season sauce with salt and pepper.
  • On a large platter, place half of the ravioli, scatter snow peas, and the remaining ravioli. Top with sauce, Parmesan cheese, and lemon zest.
  • Or divide into 2 separate portions on two plates with ravioli, snow peas, ravioli, sauce, Parmesan cheese, and lemon zest.
