This dessert is a little different than the other Raspberry Swirls on here because of the coconut base.

1 (7 ounce) package flaked coconut, toasted (2-2/3 cups)
1/3 cup margarine or 1/3 cup butter, melted
1 (10 ounce) package frozen raspberries in light syrup, thawed
1 tablespoon cornstarch
1 (1/4 ounce) envelope unflavored gelatin
1/4 cup water
1 (14 ounce) can sweetened condensed milk
1 (8 ounce) container sour cream
3 tablespoons orange-flavored liqueur
1 cup whipping cream, stiffly whipped

Steps:

  • Combine coconut and margarine; press firmly on bottom and up side of 8- or 9-inch springform pan. Chill.
  • In blender container, blend raspberries until smooth. In small saucepan, combine raspberries and cornstarch; cook and stir until mixture thickens. Cool to room temperature.
  • Meanwhile, in small saucepan, sprinkle gelatin over water; let stand 1 minute.
  • Over low heat; stir until gelatin dissolves; set aside.
  • In large bowl, combine sweetened condensed milk, sour cream, liqueur and gelatin; mix well.
  • Fold in whipped cream. Chill 10 minutes or until mixture mounds slightly.
  • Spread half the gelatin mixture into prepared pan; top with half the raspberry mixture in small amounts.
  • Repeat layering.
  • With table knife or metal spatula; swirl raspberry mixture through gelatin mixture.
  • Chill 6 hours or until set.
  • Remove side of springform pan.
  • Refrigerate leftovers.

2 cups frozen raspberries
4 teaspoons confectioners' sugar
2 heaping cups Greek or whole milk yogurt
1/2 cup oatmeal cookie crumbs
Special equipment: 6 (3/4-cup capacity) glasses

Steps:

  • Put the frozen raspberries into a blender with the sugar, and puree. You may have to be patient as they will be difficult to blitz at first since they are extremely hard when frozen.
  • Spoon 1 to 2 teaspoons of the raspberry puree into each glass, top with 2 tablespoons of the yogurt and sprinkle a layer of cookie crumbs on top.
  • Cover the crumbs with 1 more layer of yogurt, then raspberry puree and finally cookie crumbs again.
  • These can be prepared the night before, in which case don't sprinkle the final layer of cookie crumbs until you are ready to eat the swirls but leave the glasses with the yogurt on top, covered with plastic wrap.

I make no apology for using frozen raspberries in the oatmeal yogurt swirls. At this time of year, what really is the option? Besides, I love these breakfast sundaes best when the berries are still frozen and tasting like a tart sorbet against the smooth creaminess of the yogurt and the sweet crunch of the cookie crumbs. I often find it easier to make these, too, the night before. The raspberries thaw and the yogurt stiffens somewhat, and yes, the cookie crumbs in the middle lose their crunch, but everything melds together gloriously. A last-minute sprinkling of cookie crumbs on top is all they need.

2 cups (one 12-ounce bag) frozen raspberries
4 teaspoons confectioners' sugar
2 cups Greek or whole milk yogurt
1/2 cup oatmeal cookie crumbs (from crumbled cookies)

Steps:

  • Set aside six glasses, each with 3/4-cup capacity. In a food processor or blender, combine frozen berries and sugar, and purée for 2 to 3 minutes to make a smooth thick sauce.
  • Spoon about 2 teaspoons raspberry purée into each glass, and top with about 2 tablespoons yogurt. Sprinkle with a layer of cookie crumbs. Make another layer of 2 tablespoons yogurt and top with 2 teaspoons purée. At this point the swirls may be covered with plastic wrap and refrigerated. To serve, top each swirl with a final layer of cookie crumbs.

1 cup butter
1 tablespoon butter
2 cups sugar
3 cups flour, sifted
4 teaspoons baking powder
1 teaspoon salt
1 1/3 cups milk
2 teaspoons vanilla
6 egg whites
1/2 cup raspberry jelly
red food coloring
2 cups confectioners' sugar, sifted
1 tablespoon butter, softened
1 teaspoon vanilla extract
2 -3 tablespoons milk

Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl, cream 1 c + 1 T butter and sugar until fluffy.
  • Sift the flour, baking powder and salt together.
  • Add the flour alternately with the milk to the butter/sugar (begin and end with dry ingredients); add the vanilla.
  • In a small mixing bowl, beat egg whites until stiff peaks form and fold gently by hand into the batter.
  • Heat jelly until melted; cool slightly.
  • Remove 1 c of batter and add jelly; mix well.
  • Add enough food coloring to make the batter pink.
  • Pour the white batter into a greased and floured Bundt pan.
  • Pour jelly batter on top.
  • Swirl the raspberry mixture into the cake.
  • Bake at 350 degrees for 45-50 minutes or until the cake tests done.
  • Turn out on a wire rack to cool completely.
  • To make the glaze, combine the confectioners sugar, butter and vanilla extract.
  • Add in enough milk to produce a slightly runny consistency.
  • Pour the glaze over the cake and drizzle with sieved raspberry jam.

1 (19 7/8 ounce) package brownie mix
1/2 cup butter
1/3 cup water
2 eggs
1 teaspoon vanilla
1/2 cup seedless raspberry jam
1/4 cup chocolate chips
1/2 cup finely chopped pecans

Steps:

  • Preheat oven to 350 degrees.
  • Lightly grease a 13 x 9 pan and set aside.
  • Place the first 5 ingredients in a large mixing bowl.
  • Stir for about 50 strokes until batter lightens in texture.
  • Pour into prepared pan, smooth out and drop jam by teaspoonfuls onto the batter.
  • With a knife, swirl jam into the batter.
  • Scatter the chocolate chips and nuts evenly over the top.
  • Bake for about 25 minutes or until done.
  • Remove to wire rack to cool for at least 30 minutes before cutting.

3/4 cup all-purpose flour
3/4 cup Nestle Toll House Baking Cocoa
1/4 teaspoon salt
1/2 cup butter, softened
1/2 cup sugar
1/2 cup packed brown sugar
2 teaspoons vanilla extract
3 large eggs, divided
1/2 cup chopped pecans
1/2 cup seedless red raspberry jam
1 (10 ounce) package nestle toll house Nestle semi-sweet and white chocolate swirled chocolate morsels, divided

Steps:

  • Preheat the oven to 350 degrees.
  • Grease a 9" square baking pan.
  • Stir together the cocoa, flour and salt in a small bowl; set aside.
  • Combine the butter, sugar, brown sugar and vanilla in a large bowl.
  • Beat with a mixer until creamy.
  • Add 2 of the eggs, one at a time, and beat well after adding each.
  • Gradually add in the flour/cocoa mixture and mix well.
  • Spread 1 cup of the batter in the baking pan.
  • Sprinkle the pecans evenly in the pan.
  • Stir the jam until smooth and drizzle over the pecans.
  • Add the remaining 1 egg to the remaining batter in the bowl and beat until mixed well.
  • Add in 1 c of the swirled morsels.
  • Spread evenly over the jam.
  • Top with the remaining swirled morsels.
  • Bake at 350 degrees for 30-33 minutes or until the center is set.
  • Cool completely in the pan on a wire rack.
  • Cut into squares and enjoy.

2/3 cup graham cracker crumbs
2 tablespoons butter, melted
5 teaspoons sugar
3 eggs, seperated
1/4 cup plus 1 tablespoon water, divided
1 cup sugar, divided
1/8 teaspoon salt
1/8 teaspoon cream of tartar
1 (8 ounce) package reduced-fat cream cheese
1 -1 1/2 cup light whipped topping
1 (10 ounce) package frozen sweetened raspberries, thawed

Steps:

  • In a small bowl, combine the cracker crumbs, butter, and sugar. Press onto bottom of an 11 x 7 dish coated with cooking spray. Cover and refrigerate for at least 15 minutes.
  • Meanwhile, for filling, in a small heavy saucepan, combine the egg yolks, 1/4 cup water, 1/2 cup sugar, and salt. Cook and stir over low heat until mixture reaches 160 degrees or is thick enough to coat the back of a metal spoon. Cool quickly by placing pan in a bowl of ice water; stir for 2 minutes. Set aside.
  • In a small heavy saucepan over low heat combine the egg whites, cream of tartar, and remaining water and sugar. With a portable mixer, beat on low speed until mixture reaches 160 degrees. Transfer to a small mixing bowl and beat on high until soft peaks form.
  • In large mixing bowl beat cream cheese until smooth, gradually beat in the egg yolk mixture. Fold in whipped topping, then egg white mixture.
  • Drain raspberries, reserving 3 tablespoons of juice. In a small bowl, crush half of the berries with 1 tablespoon of juice. Set remaining berries and juice aside.
  • Spread a third of the cream cheese mixture over crust; spoon half of the crushed raspberry mixture over the top. Repeat layers. Cut through with knife to swirl raspberries.
  • Top with remaining cream cheese mixture. Sprinkle reserved berries and drizzle with remaining juice. Cover and freeze for 5 hours or until firm. Remove from freezer 15 minutes before cutting.
