Raspberry Smash Cocktail Food

RASPBERRY SMASH

Steps:

• Add 8 of the raspberries to a cocktail shaker and crush them with a muddler or the back of a spoon. Add a glassful of ice to the shaker, then pour in the vodka, St. Germain, simple syrup, and lemon juice. Cap the shaker and shake it vigorously for about 15 seconds, until liquid is chilled. Strain into a tall glass filled with ice. Top with your desired amount of club soda and give the drink a quick stir to combine. Add remaining 2 raspberries and a slice of lemon to the top of the drink and serve immediately.

RASPBERRY SMASH COCKTAIL

Steps:

• Gently stir together raspberries, Chambord, and sugar in a small bowl, then macerate, covered and chilled, at least 1 hour and up to 2.
• Spoon 2 tablespoons raspberries with some juice into each of 2 Champagne flutes or other glasses and slowly top off with Champagne.

RASPBERRY SMASH

Steps:

• Run 1 lime wedge around rims of 2 old-fashioned glasses. Dip rims in sugar. Place both lime wedges, raspberries, vodka, and 4 teaspoons sugar in cocktail shaker; using muddler or wooden spoon handle, smash fruit mixture. Add ice; shake 10 seconds. Divide between glasses (do not strain), top with Champagne, and serve.Adapted from Bella Vista.

RAZZLE DAZZLE

Steps:

• Blend 6 oz. fresh raspberries (about 1½ cups) and 1 cup sherry vinegar in a blender on low speed just to smash berries, about 5 seconds. Pour into a resealable container and let sit at room temperature at least 4 hours or up to overnight.
• Strain raspberry mixture through a fine-mesh sieve into another airtight container (you should have about 1 cup). Cover and chill until ready to use. Do ahead: Raspberry vinegar can be made 1 month ahead. Keep chilled.
• Fill a glass about two thirds full with crushed, cracked, or pebble ice. Add 1½ oz. chilled club soda.
• Combine 1½ oz. fresh pineapple juice, ½ oz. fresh lemon juice, ½ oz. simple syrup, and ½ oz. raspberry vinegar in a cocktail shaker. Fill shaker with ice, cover, and shake until just chilled, about 5 seconds.
• Strain into prepared glass and stir to combine. Mound crushed ice to form a rounded peak on top. Top with orange half-moon and lightly crushed raspberries (if using).
