1-3/4 cups all-purpose flour
1/2 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 large egg, room temperature
2 large egg whites, room temperature
1 cup lemon yogurt
1/4 cup canola oil
2 teaspoons grated lemon zest
1 cup fresh raspberries

Steps:

  • In a large bowl, combine the dry ingredients. In another bowl, whisk together the egg, egg whites, yogurt, oil and lemon zest. Add to the dry ingredients just until moistened. Fold in the raspberries., Transfer to an 8x4-in. loaf pan coated with cooking spray. Bake at 350° for 60-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.

This lemon raspberry loaf is sweet with the perfect lemony zing. It's a delicious treat all year long.

Number Of Ingredients 15

½ cup salted butter (at room temperature)
1 cup white sugar
3 large eggs
⅔ cup plain yogurt
2 tablespoons fresh lemon juice
Zest of 1 lemon
1 tablespoon fresh lime juice
1 ½ cups all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon sea salt
1 1/2 cups fresh raspberries
3/4 cup powdered sugar
1/4 cup fresh squeezed lemon juice
A tiny pinch of sea salt
Lemon zest (fresh raspberries and a sprinkle of powdered sugar, for garnish)

Steps:

  • Preheat the oven to 350 degrees. Grease and flour the inside of a loaf pan.
  • In a large bowl cream together the butter and sugar. Add the eggs and yogurt, lemon zest and juice and beat until everything is thoroughly mixed, about 30 seconds.
  • In a medium-sized bowl, whisk together the flour, baking powder, and sea salt. Pour into the large bowl and beat the batter just until everything comes together. Stir in the fresh raspberries.
  • Pour the batter into the loaf pan and bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the centre of the loaf comes out clean. (This cake takes longer to bake than a regular loaf cake.)
  • Remove the loaf from the oven and let it cool in the pan for 10 minutes before carefully turning it out onto a cooling rack.
  • For the icing;
  • In a small bowl mix together the powdered sugar, lemon juice and the tiny pinch of sea salt. If you would like it a little runnier, you can add a small splash of water. If you prefer your icing a little thicker, you can add a touch more powdered sugar. Note: don't make the glaze until just before you use it as it will harden as is stands.
  • To finish the loaf:
  • Once the loaf is completely cool, drizzle the top with the glaze then sprinkle over the lemon zest, raspberries, and a little powdered sugar.

6oz (3/4 Cup) Unsalted Butter, at room temp.
2 Large Eggs, at room temp.
3 Tablespoon Fresh Lemon Juice
1 heaping Tablespoon Lemon Zest
4oz (1/2 cup) Greek Yogurt or Sour Cream
8oz Raspberries (fresh or frozen-if frozen keep frozen until you fold them in the batter)
188 Grams (1 1/2 cup) powdered sugar, sifted
3 Tablespoons Lemon Juice
1 Teaspoon Lemon Zest

Steps:

  • Preheat oven to 350F/180C and grease a 9X5 loaf pan.
  • In a medium bowl combine flour, baking powder, and salt. Set aside.
  • In a bowl of an electric mixer combine sugar and butter for 3-4 minutes, so it's nice and fluffy. Add in eggs one at a time. Mix in lemon rind and juice. Fold in the dry mixture. Then fold in Greek yogurt, then gently fold in raspberries.
  • Bake for 60-70 minutes or until a toothpick inserted in the center of the cake comes out clean. Let cool on a wire rack for at least 30 minutes before starting glaze.
  • While the cake is cooling prepare lemon glaze. In a bowl combine powdered sugar, lemon juice, and lemon rind. Drizzle on top of the cake when it is completely cool. Store cake in an airtight container, store in the fridge to last longer.

1 1/2 cups granulated sugar
1 1/2 sticks (12 tablespoons) unsalted butter, plus more for buttering the pan
3 large eggs
1 1/2 cups all-purpose flour, plus more for flouring the pan
1/2 cup lemonade
1/4 teaspoon kosher salt
1 tablespoon lemon zest
1 cup powdered sugar, sifted
1 tablespoon lemon zest, left out to dry for 30 minutes, plus juice of 1/2 lemon
Pinch kosher salt

Steps:

  • For the cake: Preheat the oven to 325 degrees F. Put the raspberries in a bowl and set aside.
  • In the bowl of an electric mixer fitted with a paddle attachment, cream together the granulated sugar and butter. Add the eggs 1 at a time, mixing after each addition. Turn the mixer to low and gradually add all but 2 tablespoons of the flour (reserve the 2 tablespoons for the raspberries). Add the lemonade and salt and mix until combined. Add the lemon zest and mix. Scrape the bowl.
  • Toss the remaining 2 tablespoons flour with the raspberries in the bowl; this will stop them from sinking. Fold the raspberries into the batter with a spatula.
  • Butter and flour a 9-by-5-inch loaf pan. Pour the batter into the loaf pan and even out the surface. Bake until a toothpick inserted in the center does not come out totally clean but isn't wet with batter either, 1 hour and 15 minutes to 1 hour and 30 minutes. Let the cake sit in the pan for 30 minutes, then carefully turn it out onto a cooling rack set over a baking sheet to cool.
  • For the glaze: Combine the powdered sugar, lemon zest and juice, salt and 2 tablespoons water in a bowl. Gently whisk until thick but pourable, adding a little more water if needed. Drizzle the glaze over the cake and let set.

1/2 cup butter or 1/2 cup soft margarine
2 cups granulated sugar
2 eggs
1/4 cup plain 1% yogurt
2 large lemons, rind of

1 cup 1% low-fat milk
2/3 cup fresh lemon juice
1/2 cup granulated sugar
1 cup extra-thick Greek yogurt
1/3 cup granulated sugar

Steps:

  • In large bowl, using electric mixer, beat butter with sugar until light and fluffy; beat in eggs, yogurt and lemon rind. Mix flour with baking powder; beat into egg mixture alternatively with milk, making three additions of flour mixture and two of milk.
  • Spoon into greased and floured 10-inch Bundt pan. Bake in 350F oven for 50 minutes or until cake tester inserted in center comes out clean. Let stand in pan on rack for 5 minutes.
  • Glaze: Stir lemon juice with sugar until sugar is dissolved. Invert cake onto rimmed plate; using toothpick, poke 1-inch deep holes in top of cake. Brush glaze over cake. Let cool. Serve with lemon cream or raspberry sauce.
  • Lemon Cream: In small bowl, combine yogurt, sugar, lemon rind and juice, stirring well. Cover and refrigerate for 30 minutes or for up to 3 days.
  • Raspberry Sauce: Thaw raspberries; drain and reserve 1/2 cup juice. Press berries through sieve over bowl to remove seeds. Stir in enough of the reserved juice to make sauce consistency. Stir in sugar.

1 cup superfine sugar
¾ cup unsalted butter
3 large eggs eggs
½ teaspoon vanilla extract
1 ⅜ cups self-rising flour
1 ½ teaspoons baking powder
5 ounces fresh raspberries
⅜ cup confectioners' sugar
3 drops lemon juice, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease an 8x4-inch loaf tin with soft margarine and set aside.
  • Cream superfine sugar and butter together with a paddle attachment of a free-standing electric mixer on medium-high speed until light and fluffy.
  • Whisk eggs and vanilla extract together in a separate bowl until just mixed; do not over-whisk. Beat gradually into the butter mixture until well incorporated. Sift in flour and baking powder, bit by bit, folding after each addition. Set batter aside.
  • Puree raspberries, confectioners' sugar, and lemon juice in a food processor until smooth. Strain through a fine-mesh sieve into a bowl. Separate half of the cake mix into a different bowl and stir the coulis through.
  • Put alternating dollops of the raspberry and vanilla batters into the prepared loaf tin using a small ice cream scoop. Swirl both sets of dollops together slightly using the blunt end of a skewer.
  • Bake in the preheated oven until the top of the cake is golden brown and risen and a toothpick inserted into the center comes out clean, about 40 minutes. Let cool in the tin for 5 to 10 minutes. Run a table knife around the edges of the tin and remove the cake, leaving to cool completely on a wire rack.
