BERRY KIR ROYALE
This favorite of mine dates back to when I first came of age to order a cocktail in a restaurant. The sophisticated sound of the name made this drink fun to order ("I'll have a Kir Royale, please"), and made me seem like I knew what I was doing (I didn't). It was served in a tall, elegant flute, which made every occasion feel like a celebration, and still does. And, of course, the light effervescence of this drink -- i.e. the bubbles -- made me feel grown-up. It's still a favorite before-meal starter, pleasant accompaniment with a weekend brunch, or treat for a late afternoon visit with girlfriends. Though traditionally made with Champagne, I substitute prosecco. This Italian bubbly and the fresh berries dropped in the glasses, along with the cassis, provide a hint of currant flavor that trumpets your taste buds to attention, as is the duty of a first-class aperitif.

- Drop 1 to 3 raspberries in each of 4 Champagne flutes. Add 1 to 1 1/2 teaspoons creme de cassis to each glass. Top each glass with prosecco. Serve immediately.
KIR ROYALE

- Pour 1/2 to 1 ounce creme de cassis into a chilled flute. Fill the flute with champagne and garnish with a raspberry.
CRANBERRY KIR ROYALE
Steps:
- Add cranberries, orange juice, zest and sugar to a large pan and set over medium heat until berries break-down slightly and liquid is syrupy, 12 to 15 minutes. *Pour into a blender and process, be careful of the hot liquid expanding when you blend - use a towel over the top of the blender.
- Strain and discard any solids then set aside and cool.
- Pour 2 tablespoons of cranberry-orange syrup into the bottoms of 4 chilled champagne glasses. Add a few cranberries to each glass and gently top off each glass with Champagne.
- *When blending hot liquids: Remove liquid from the heat and allow to cool for at least 5 minutes. Transfer liquid to a blender or food processor and fill it no more than halfway. If using a blender, release one corner of the lid. This prevents the vacuum effect that creates heat explosions. Place a towel over the top of the machine, pulse a few times then process on high speed until smooth.
KIR ROYALE

- Place 4 Champagne flutes in the freezer for 15 minutes. Remove and add 1 tablespoon of the Chambord to each flute and a few raspberries. Fill each flute to the top with Champagne and serve immediately.

- glass with Champagne. Serve immediately.
RASPBERRY ROYALE
Steps:
- Coating the rims of the glasses: In a flat dish or saucer, pour a small amount of framboise. Place 1/4 cup vanilla sugar in another saucer. Briefly dip the rim 6 champagne glasses, 1 at a time, in the framboise, and then in the sugar. Set aside to dry.
- Pour 2 tablespoons framboise into each glass. Add a few raspberries and then fill with champagne.
KIR ROYALE
Make a classic kir royale cocktail with crème de cassis (blackcurrant liqueur) and your favourite champagne. Garnish with a blackberry to serve to guests
