Steps:
- In fondue pot or 2-quart saucepan, mix whipping cream, raspberry preserves and honey. Heat over warm/simmer setting or medium-low heat, stirring occasionally, just until bubbles rise to surface (do not boil).
- Add chocolate; stir with wire whisk until melted. Keep warm over warm/simmer setting. (If using saucepan, pour into fondue pot and keep warm over warm/simmer setting.) Serve with dippers.

- Thaw and drain raspberries, reserving 1 tablespoon juice. Mash raspberries. Press through a fine-mesh strainer into a small saucepan; discard seeds., Add apple butter and red-hots to strained raspberries; cook over medium heat until candies are dissolved, stirring occasionally. Combine cornstarch and reserved juice until smooth; stir into berry mixture. Bring to a boil; cook and stir over medium heat for 1-2 minutes or until thickened., To serve warm, transfer to a small fondue pot and keep warm. Or, to serve cold, refrigerate until chilled. Serve with fruit.

Steps:
- Place the raspberries in a blender and puree until smooth, strain the puree into a medium saucepan, using a wooden spoon, force the puree through the strainer, discarding the seeds.
- Add the sugar to the puree and heat over medium heat until the sugar is melted and the fondue is bubbly, stirring frequently.
- Stir in the mint, then transfer to a fondue pot and keep warm, or serve at room temperature.
- This can be served with fresh fruit slices,or chunks of pound cake.
CHOCOLATE CARAMEL RASPBERRY FONDUE (FOR MINI CROCK POT)
I first tasted this fondue at a friend's Christmas party about 8-9 years ago. I think just about everyone left that party with a copy of the recipe! I have served this at my own parties many times with great success. I enjoy serving this with strawberries, fresh pineapple chunks, cantaloupe, bananas, and sponge cake as the dippers. This makes enough fondue to partly fill a medium-sized crockpot.

- In a 2-quart saucepan, combine chocolate chips, caramels, milk, butter, raspberry jam.
- Cook over low heat, stirring often, until melted and smooth- this may take a while, about 20-30 minutes (do not be tempted to rush things by raising the heat or your fondue will burn).
- When everything has melted together, pour into a either a fondue pot or a crockpot set on low heat.
- Serve along with a platter of bite-sized pieces of sponge cake, pound cake, and fresh fruit and some fondue forks or skewers to dip into the fondue.

- 1. In a medium microwave bowl, combine the chocolate, cream and raspberries. Microwave on medium-high in 30 second intervals, stirring after each time, until mixture is smooth. Stir in the jelly. Add more cream if the mixture seems too thick for dipping. Pour into serving bowl or fondue pot to serve.
- 2. You can dip pieces of fruit or cubed cake in this decadent fondue. Of course, if you use cake, it's no longer going to be gluten-free!

- Bacon. Chocolate-covered bacon is a beautiful thing, but it takes a little time to make, what with the coating on all sides and the letting it set. Why not just cook it to crisp perfection, drain it, and dip it straight into a pot of molten chocolate?
- Rice Krispies Treats. Make ’em in any flavor your heart desires (infused with booze, even), then cut them into dainty little cubes for spearing on your fondue forks and dipping into your pool of chocolate…you really can’t go wrong.
- Marshmallows. Alternatively, skip the rice cereal and just go straight for pillowy-soft, chewy marshmallows—which maybe aren’t that much of a novelty when it comes to dunking in chocolate, but can be if you opt for different flavors, like matcha marshmallows, bourbon marshmallows, or salted caramel marshmallows.
- Potato Chips. Same basic principle as bacon, but suitable for vegetarians too—and less work all around (well, unless you make your own, but any nice, thick, kettle-style chip from the store will do just fine).
- Grissini. While not so salty, another savory and super-crunchy option is grissini, those long, thin Italian bread sticks often sprinkled with sesame seeds; the pairing of them with fondue hearkens back to the traditional Catalan pairing of dark chocolate with olive oil and toast.
- Hurricane Jelly Shots. With two boozy layers (representing both white and dark rum), plus chopped maraschino cherries and passion fruit juice, these are bursting with flavors that would complement dark chocolate, and they’d provide an interesting texture and temperature contrast too.
- Cake Balls. Basically, you’re making cake pops, but instead of coating them all in chocolate at once and letting them set (let alone impaling them on their own individual sticks), you’re leaving them naked and dipping each one as you eat it.
- Candied Citrus. Chewy, bright, and sweet-tart, candied citrus is a way more exiting fondue partner than pound cake and strawberries. You can just use the peels (like in our Candied Grapefruit Zest recipe), or do whole slices; try oranges, tangerines, or Meyer lemons.
- Candied Ginger. Similar to candied citrus, but for those who like things a little spicy. Fresh crystallized ginger should have a nice soft chew, more gumdrop than taffy.
- Dried Fruit. Dried fruit options like mango slices, apricots, pineapples, regular apples, and papaya can make interesting additions to your array of fondue dippers, though some are harder to spear than others.
