I was surprised I couldn't find this recipe here. It is the only mashed potato recipe I use for the holidays,as it is even better made a day ahead. Not only is it delicious, but it's one less pot to wash when you want to enjoy your company. This also makes a nice potluck dish.

6 lbs yukon gold potatoes
8 ounces cream cheese
8 ounces sour cream
1/2 cup milk
2 teaspoons onion salt
1/2 teaspoon black pepper

Steps:

  • Peel and cut the potatoes into large cubes and boil in salted water until tender.
  • Meanwhile, beat the cream cheese, then stir in the sour cream, milk and spices.
  • Drain and mash the potatoes in the pot, then stir in the cream cheese mixture.
  • Spoon into a casserole dish or a 9x13 pan.
  • You may cover it and refrigerate for 24 hours, or proceed to baking right away.
  • Bake covered with foil at 350 for 45 min's.
  • Increase the time if the dish has been chilled.

  • Put the potatoes in a large pot and cover with cold water. Generously salt the water and bring to a boil over high heat. Then lower the heat to medium and gently simmer until the potatoes are completely tender when pierced with the tip of a knife, about 30 minutes.

  • Place potatoes in a bowl and wash under cold, running water until water runs clear. Place in a medium saucepan with salt. Add enough water to generously cover. 1 1/2 cups milk

1/2 cup sour cream

  • Cut the potatoes into 1-inch cubes and place them in a large pot. Cover the potatoes with cold water and add enough salt so the water tastes quite salty. Bring to a boil, then lower the heat and simmer, uncovered, for about 10 to 12 minutes, until the potatoes fall apart easily when pierced with a fork.

4 large russet potatoes, peeled and quartered
6 tablespoons unsalted butter, cubed
kosher salt to taste
½ cup grated Gruyere cheese
1 pinch cayenne pepper, or more to taste
1 cup finely grated Parmigiano-Reggiano cheese, divided
½ cup buttermilk
¾ cup cold heavy cream
2 tablespoons sliced green onions

Steps:

  • Preheat the oven to 475 degrees F (245 degrees C).
  • Place potatoes into a pot, cover with fresh, cold water by 2 inches, and add 2 tablespoons kosher salt. Set heat to high and bring to a boil. Reduce heat to medium and simmer until tender, testing by poking potatoes with a knife. The time will depend on the size of your potatoes but could be between 15 and 20 minutes.
  • Remove from the heat and let drain in a colander for 5 to 10 minutes.
  • Transfer into a large bowl and mash thoroughly with a potato masher until no lumps remain. Add butter, kosher salt, and Gruyere cheese. Mix and mash until everything has been incorporated.
