Easy Raspberry Coffee Cake is one of my mom's award-winning recipes! A finalist in the 1990 Wisconsin Berry Recipe Contest, it's sure to be a hit at your house, too!

Cooking spray
1 3/4 cups all-purpose flour (plus more for pan)
1 cup granulated sugar
2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 cup plain Greek yogurt (full fat)
1 large egg
1 teaspoon vanilla extract
1/2 cup canol oil (or vegetable oil)
1 bag (10-ounce) frozen raspberries (thawed and drained)
1/4 cup all-purpose flour
1/4 cup granulated sugar
1/2 cup chopped pecans
2 tablespoons butter (softened)

Steps:

  • Preheat oven to 350 degrees. Spray an 11 x 7-inch baking pan with cooking spray, then dust with flour. Set aside.
  • Combine flour, sugar, baking powder, baking soda and salt in a large mixing bowl.
  • Combine yogurt, egg and vanilla extract in a small bowl. Pour oil into the yogurt mixture. (You don't need to stir it.)
  • Add yogurt/oil to the dry ingredients and stir until combined, being careful not to overmix. Pour into prepared pan and gently smooth the top.
  • Sprinkle raspberries over batter.
  • Combine flour, sugar, pecans and butter in a small bowl and mix until crumbly. Sprinkle over the top of the raspberries.
  • Bake for 35 to 40 minutes.

2 Tbsp granulated sugar
3 Tbsp brown sugar
1½ tsp cinnamon
¼ tsp nutmeg
4 Tbsp unsalted butter (melted)
¾ cup all-purpose flour
2½ cups all-purpose flour
2 tsp baking powder
½ tsp baking soda
½ tsp salt
1¼ cups granulated sugar
¼ cup brown sugar
¾ cup unsalted butter (room temperature)
3 large eggs
2 tsp vanilla extract
1 tsp lemon juice
1¼ cups sour cream
8 oz. cream cheese (softened)
¼ cup granulated sugar
1 large egg
½ cup raspberry jam
1½ cups powdered sugar
3 Tbsp milk
1 tsp vanilla extract

Steps:

  • Using a medium bowl, add sugars, cinnamon and nutmeg; stir until well combined.
  • Add the melted butter; stir until well combined.
  • Add the flour; stir until well combined. Set Streusel aside.
  • Preheat oven to 350°F.
  • Grease and flour (or spray with nonstick spray) a 9" springform pan. Set pan aside.
  • Using a medium bowl, whisk together the flour, baking powder, baking soda and salt until well combined; set mixture aside.
  • Using a countertop mixer, cream together the sugars and butter until light and fluffy (~2-3 minutes on medium speed).
  • Add eggs, one at a time, mixing after each addition.
  • Add vanilla, lemon juice and sour cream; mix on low speed until well combined.
  • Add dry ingredients to the bowl and mix on low until just combined.
  • Spread batter evenly into prepared pan.
  • Using a small bowl, add all of the ingredients for the cream cheese filling (cream cheese, sugar, egg and jam); mix until well combined. Pour mixture on top of dough, leaving a 1½" border around outside.
  • Crumble streusel mixture evenly on top of cream cheese filling. (Note: See comments in post. Another idea would be to spread streusel on top of dough portion rather than the cream cheese portion.)
  • Bake at 350°F for 55 minutes. Tent the top of the cake with foil and continue baking for 20-25 minutes, or until a toothpick inserted into cake comes out mostly clean. (Note: Insert the toothpick into the cake portion rather than the cream cheese filling portion.)
  • Place cake on cooling rack for at least 30 minutes before removing sides of pan.
  • Using a medium bowl, add all of the glaze ingredients; whisk together until smooth. Drizzle glaze over cake before slicing.

3-1/2 cups unsweetened raspberries
1 cup water
2 tablespoons lemon juice
1-1/4 cups sugar
1/3 cup cornstarch
BATTER:
3 cups all-purpose flour
1 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 cup cold butter, cubed
2 large eggs, lightly beaten
1 cup sour cream
1 teaspoon vanilla extract
TOPPING:
1/2 cup all-purpose flour
1/2 cup sugar
1/4 cup butter, softened
1/2 cup chopped pecans
GLAZE:
1/2 cup confectioners' sugar
2 teaspoons 2% milk
1/2 teaspoon vanilla extract

Steps:

  • In a large saucepan, cook raspberries and water over medium heat 5 minutes. Add lemon juice. Combine sugar and cornstarch; stir into fruit mixture. Bring to a boil; cook and stir 2 minutes or until thickened. Cool., Preheat oven to 350°. In a large bowl, combine flour, sugar, baking powder and baking soda. Cut in butter until mixture resembles coarse crumbs. Stir in eggs, sour cream and vanilla (batter will be stiff). , Spread half into a greased 13x9-in. baking dish. Spread raspberry filling over batter; spoon remaining batter over filling. Combine topping ingredients; sprinkle over top. , Bake 40-45 minutes or until golden brown. Combine glaze ingredients; drizzle over warm cake.

3/4 cup sugar
3/4 cup butter (light stick butter works fine!)
1/2 teaspoon baking powder

1 teaspoon almond extract

Steps:

  • Preheat oven to 350°F.
  • In a large bowl, combine flour and 3/4 cup sugar. Using pastry blender, cut in butter until mixture resembles coarse crumbs. Reserve 1 cup of crumbs.
  • To remaining crumb mixture, add baking powder, baking soda, salt, sour cream, almond extract, and 1 egg. Blend well.
  • Spread batter over bottom and 1 1/2 inches up sides of greased and floured 9 inch springform pan. Batter should be about 1/4 inch thick on sides.
  • In a small bowl, combine cream cheese, 1/4 cup sugar, and 1 egg. Blend well.
  • Pour in batter lined pan.
  • Spoon jam over cream cheese mixture. In a small bowl, combine reserved crumbs and sliced almonds. Sprinkle over jam.
  • Bake for 45 to 55 minutes.

You can use either fresh raspberries or fresh blackberries for this tender and delicious coffee cake. I prefer to toast my pecans in the oven for 3 to 5 minutes to really bring out their flavor.

2 cups fresh raspberries
6 tablespoons brown sugar
2 cups all-purpose flour
⅔ cup white sugar
1 teaspoon baking powder

2 cups toasted, chopped pecans

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 10 inch Bundt cake pan with non-stick cooking spray.
  • Stir together raspberries and brown sugar; set aside. In a separate bowl, mix together flour sugar, baking powder, baking soda and salt; set aside.
  • In a third bowl, cream together sour cream, butter and 2 teaspoons vanilla. Beat in eggs one at a time. Stir in flour mixture just until moist.
  • Sprinkle 1/2 cup of berries and 1 cup pecans in pan, pour in half of the batter. Pour on the remaining berries and remaining cup of pecans. Spread the remaining batter over the berries.
  • Bake in preheated oven for 35 to 40 minutes, or until a toothpick inserted into center of the cake comes out clean. While cake bakes, mix the frosting. In a small bowl, stir together 2 teaspoons milk, 1/2 teaspoon vanilla and 1/2 cup confectioners' sugar. Remove cake from pan and let cool 20 minutes before frosting.

2 cups all-purpose flour, divided
1 cup cold butter, divided
2 tablespoons plus 1 cup water, divided
1/4 teaspoon salt

2 tablespoons butter, softened
1-1/2 cups confectioners' sugar
1-1/2 teaspoons vanilla extract
1 to 2 tablespoons water
1/2 cup chopped walnuts

Steps:

  • Place 1 cup flour in a large bowl, cut 1/2 cup butter into flour until mixture resembles coarse crumbs. Sprinkle with 2 tablespoons water; toss with a fork until mixture forms a ball. Divide into thirds. On a floured surface, roll each portion into a 9-in. x 6-in. rectangle. Place on greased baking sheets; set aside. , In a saucepan, bring salt and remaining butter and water to a boil. Add remaining flour all at once; stir until a smooth ball forms. Remove from the heat; let stand for 5 minutes. Add eggs, one at a time, beating well after each addition. Continue beating until mixture is smooth and shiny. , Spread over the dough. Bake at 400° for 30 minutes or until puffed and golden brown. 1/4-1/2 cup nuts
8 ounces cream cheese
1 teaspoon vanilla
1 cup powdered sugar
12 ounces Cool Whip
1 (4 3/4 ounce) package raspberry junket danish dessert mix
12 ounces frozen raspberries, thawed (drain and reserve juice)

Steps:

  • Preheat oven to 350 degrees.
  • Mix the flour, brown sugar, butter, and nuts.
  • Pat into a 13X9 dish.
  • Bake for 15 minutes.
  • allow to cool.
  • Crumble the just baked crust into fine crumbs.
  • Pat enough of the crumbs to make a 1/2 inch in bottom of 13X9 dish you just used.
  • Gently beat together the cream cheese, vanilla, powdered sugar and Cool Whip.
  • Pour over the crust.
  • Sprinkle the rest of the crumbs on top and chill for several hours or overnight.
  • For the topping.
  • Prepare Junket as for fruit sauce, using raspberry juice as part of rquired juice.
  • Add raspberries and mix gently.
  • Pour over crumbs and chill.

1 teaspoon cornstarch
⅛ teaspoon salt
2 cups fresh raspberries, divided
1 (8 ounce) package cream cheese, softened
1 cup powdered sugar, divided
6 tablespoons heavy cream, divided
2 teaspoons finely grated orange zest
⅛ teaspoon ground cardamom
⅛ teaspoon almond extract
2 sheets frozen puff pastry sheets, thawed
¼ cup all-purpose flour, or as needed
1 large egg
1 tablespoon water
¼ cup toasted sliced almonds

Steps:

  • Whisk together white sugar, cornstarch, and salt in a small saucepan. Stir in 1 cup of the raspberries and cook over medium-low heat, stirring occasionally and mashing raspberries with a wooden spoon, until raspberries break down and sauce thickens, about 4 minutes. Remove from saucepan to a medium bowl and cool, stirring occasionally, for 10 minutes.
  • Meanwhile, beat cream cheese, 1/4 cup powdered sugar, 1 tablespoon heavy cream, orange zest, cardamom, and almond extract with an electric mixer on medium speed in a medium bowl until smooth, about 1 minute. Cover and chill until ready to use.
  • Place 1 puff pastry sheet on a floured piece of parchment paper. Roll into a 12x9-inch rectangle. Cut 10 to 12 (3 inches long and 1 inch thick) diagonal strips on each side, about 1 inch apart, leaving center 3 inches of pastry uncut. Spread 1/2 cup of the cream cheese filling in center (uncut) section of pastry, leaving a 1/2-inch border at the top and bottom. Top with 3 tablespoons of the raspberry mixture, and spread raspberry mixture gently over cream cheese layer. Sprinkle with 1/2 cup raspberries.
  • Whisk together egg and water in a small bowl. Brush exposed pastry lightly with egg mixture. Fold strips over filling, alternating each side to resemble a twist or a braid. Fold the bottom ends up to seal the filling inside. Repeat with the remaining sheet of puff pastry and the rest of the filling. Brush outside of each pastry with egg wash.
  • Transfer pastries, on parchment, to separate baking sheets. Freeze until pastry is firm, about 1 hour. (To make ahead, wrap Danish in parchment and then plastic wrap; freeze up to 1 month.)
  • While pastries freeze, preheat the oven to 400 degrees F (200 degrees C) with racks in upper and lower third of oven.
  • Bake in the preheated oven until golden brown and puffed, rotating position of baking sheets in oven halfway through, 30 to 35 minutes. Cool on baking sheets for 30 minutes.
  • Meanwhile, whisk together remaining 5 tablespoons cream and 3/4 cup powdered sugar in a medium bowl. Drizzle over Danish and sprinkle with sliced almonds.
