SPICE RUBBED TRI-TIP

1 tablespoon Santa Maria-style seasonings
1 tablespoon BBQ spice (recommended: Red Barron BBQ Spice)
2 (4-pound) tri-tips, trimmed

Steps:

  • Preheat the grill to medium.
  • Sprinkle each seasoning onto a cutting board. Take the tri-tips and roll them over the sprinkled seasonings, making sure to coat all sides evenly.
  • Place the tri-tips on the grill at a 45 degree angle to establish grill marks and cook about 35 minutes, or until desired doneness. Remove the tri-tips from the grill and let the meat rest about 2 to 5 minutes before slicing. Serve with your favorite side dishes.

1 tablespoon fresh ground tellicherry black pepper
1 1/2 teaspoons smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon ground dried rosemary
1/4 teaspoon ground chipotle chile pepper
1/2 teaspoon Dijon mustard
1/3 cup red wine vinegar
1/3 cup neutral vegetable oil
4 crushed garlic cloves

Steps:

  • Combine all rub ingredients, rub onto surface of meat. Let coated meat rest in fridge 1 to 4 hours before grilling. Baste frequently with the vinegar mixture while grilling. Cook to 135 internal temperature over indirect heat, then finish on direct heat to caramelize surface and complete cooking. Do not overcook! Internal temperature should not go above 140. Let rest, wrapped in foil, 30 minutes before slicing.

This is a simple tri-tip rub recipe straight from a barbeque in Santa Maria.

3 tablespoons garlic powder
2 tablespoons salt
2 tablespoons ground black pepper
2 pounds tri tip roast

Steps:

  • Preheat an outdoor grill for high heat and lightly oil grate.
  • In a medium bowl, combine garlic powder, salt and pepper. Mix together and coat both sides of tri tip.
  • Sear both sides on hot grill then cook 20-25 minutes or until center is light pink. Slice at an angle.

  • Mix all ingredients together until well blended.
  • Use as needed.
