extra virgin olive oil, for drizzling
6 slices bacon, chopped
1 1/2 lbs ground chicken breast
3 shallots
1 tablespoon hot sauce
2 tablespoons poultry seasoning
salt and pepper
1 avocado, peeled and pitted
1 1/2 cups Greek yogurt
1 lemon, juice of
1 (1 ounce) packet Hidden Valley Original Ranch Seasoning Mix
8 small slider buns or 8 small hawaiian rolls
butter, for buns
lettuce leaf, for serving
2 plum tomatoes or 2 vine-ripened tomatoes, thinly sliced

Steps:

  • Heat an outdoor grill or griddle pan to medium high. Place a skillet over medium-high heat. Add a drizzle of Olive oil and the bacon to the pan and cook until crisp, about 5 minutes. Drain on paper towels to cool, then dice.
  • While the bacon cooks, place the chicken in a large bowl. Grate the shallots on top of the chicken . Add the hot sauce, poultry seasoning, salt and lots of pepper. Stir in the cooked bacon, mix and form 8 slider patties, about 2- 1/2 to 3 inches wide. Drizzle with Olive Oil to coat lightly.
  • Cook on the grill or griddle, turning once, until cooked through, 8 to 10 minutes.
  • While the sliders cook, heat the broiler.
  • Place the avocado in a food processor. Add the yogurt, lemon juice, Ranch Seasoning Mix and process into a smooth, thick sauce.
  • Butter the buns and place on a baking sheet and toast under the broiler. Serve the Ranch Slider with the lettuce, tomatoes and avocado-ranch sauce between the toasted buns.

2 tablespoons fennel seeds
A few grinds fresh black pepper
Pinch red pepper flakes
1 pound ground pork
1 bunch fresh parsley, leaves and some stems finely chopped
4 ounces sharp provolone, kept cold until needed, then finely diced
12 Hawaiian slider rolls, such as King's, split and toasted
Store-bought pickled onions, for garnish

Steps:

  • Drizzle a baking dish with some oil. Set aside. Preheat a double-burner cast-iron griddle over medium-high heat.
  • Add the fennel seeds, ground pepper and crushed red pepper to a high-sided saute pan and toast over medium heat, about 3 minutes. Add the toasted spices to a mortar and pestle and grind until ground. Add this spice mixture to a medium bowl with the ground pork. Add the parsley and provolone to the bowl and gently but thoroughly combine. Form into 1 1/3-ounce meatballs (or 12 portions) and add to the greased baking dish. Once all the meatballs are formed, with greased hands, individually smash the meatballs in your hand and directly add to the preheated griddle. Cook until charred on both sides, about 5 minutes total. Repeat with the remaining meatballs.
  • Add the cooked patties to the toasted rolls and top each patty with pickled onions. Enjoy!

One 2-pound center-cut pork loin, fat cap untrimmed
2 teaspoons kosher salt, plus more to taste
1 teaspoon freshly ground black pepper
1/2 cup coconut milk (stir the coconut milk together before measuring)
1/2 cup BBQ sauce, such as Sweet Baby Ray's
2 tablespoons canola oil
2 cups thinly sliced sweet onion
1 1/2 cups diced pineapple
12 Hawaiian slider rolls, sliced in half
2 cups thinly sliced napa cabbage
1 cup thinly sliced red cabbage
1/2 teaspoon kosher salt
1/4 cup Spicy Mayo, recipe follows, plus more if needed
1 cup mayonnaise
1/4 cup coconut milk (stir the coconut milk together before measuring)
1/4 cup sriracha
1 lime, juiced

Steps:

  • For the roasted pork: Preheat the oven to 375 degrees F. Season the pork loin on all sides with the salt and pepper.
  • In a small bowl, combine the coconut milk and BBQ sauce. Set aside.
  • In a 10-inch cast-iron skillet over medium-high heat, add the canola oil and heat until the oil just starts to smoke. Add the pork to the skillet fat-side down. Sear on all sides until golden brown, 2 to 3 minutes per side. Set the pork aside on a plate.
  • Stir in the onions and cook until softened and browned, about 2 minutes. Add the diced pineapple, then place the seared pork on top of the onions and pineapple. Pour some of the BBQ mixture over the pork, coating the top, then pour the rest around the skillet, stirring it into the onion-pineapple mixture as much as possible. Transfer the skillet to the oven and cook until the pork and onions are deeply caramelized, and the internal temperature of the pork reaches 145 degrees F, 35 to 40 minutes. Let rest 10 to 15 minutes.
  • For the slaw: Combine the napa and red cabbage together in a bowl. Add the salt and toss. Stir in the Spicy Mayo, adding more if desired, to evenly coat the cabbage. Set aside.
  • To assemble: Slice the pork into thin rounds, then cut the rounds in half to make half-moons. Season the pork slices with salt. Place a heaping tablespoon of the pineapple and onions on top of each bottom bun, followed by 2 to 3 half-moon slices of pork, then a heaping tablespoon of the slaw. Place the top buns over the slaw on each. Serve immediately.
  • Combine the mayonnaise, coconut milk, sriracha and lime juice in a bowl and stir together until smooth. Store in the refrigerator until ready to use, up to a week.

1 teaspoon onion powder
1/2 teaspoon paprika
1/8 teaspoon ground allspice
Kosher salt and freshly cracked black pepper
One 3-pound brisket
2 tablespoons olive oil
2 bay leaves
2 onions, cut into large chunks
2 carrots, cut into large chunks
One 15-ounce can diced tomatoes
2 cups cola
12 mini pretzel slider buns, for serving
Homemade Ranch, recipe follows
Pickled jalapenos, for serving
1 cup Greek yogurt
1/4 cup mayonnaise
1 tablespoon juice from pickled jalapenos, optional
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh dill
2 tablespoons chopped fresh chives
1 teaspoon onion powder

Steps:

  • Position a rack on the lowest part of the oven. Preheat the oven to 325 degrees F.
  • Mix together the onion powder, paprika, allspice, 2 teaspoons salt and 1 teaspoon pepper in a small bowl. Rub the spice mix all over the brisket.
  • Heat a large Dutch oven over medium-high heat. Add the oil and then the brisket. Sear on all sides to a deep golden brown, about 7 minutes. Nestle the bay leaves, onions and carrots around the brisket. Pour the tomatoes and cola over the meat and vegetables and bring to a simmer. Cover and cook until the meat is very tender, about 3 hours.
  • Uncover the pot and let the meat and vegetables rest in the juices until no longer steaming, about 30 minutes. Slice the brisket against the grain into 1/4-inch slices.
  • Serve the brisket slices on pretzel rolls buns with Homemade Ranch and pickled jalapenos.
  • Mix together the yogurt, mayonnaise and pickle juice, if using in a small bowl. Add the parsley, dill, chives and onion powder and mix until smooth and combined.

1 cup packed light brown sugar
2 tablespoons baking powder
1 tablespoon pumpkin pie spice

1 cup solid frozen vegetable shortening
2 cups sweet potatoes, baked cooled peeled and mashed
1 cup heavy cream (more if needed)
1/4 cup salted butter, melted
2 large red potatoes, peeled and diced
2 tablespoons heavy cream (more if needed)
2 tablespoons butter
1 egg
1/2 teaspoon salt
1/8 teaspoon pepper
2 teaspoons Hidden Valley Original Ranch Dips Mix
3 tablespoons grated parmesan cheese
2 tablespoons finely chopped chives
1 cup seasoned dry bread crumb
1 lb ground lean pork
1 cup flour
1/2 teaspoon salt (to taste)
1/4 teaspoon pepper
1/2 teaspoon cayenne
2 teaspoons Hidden Valley Original Ranch Dips Mix
1 egg, beaten
1/2 cup buttermilk
1 teaspoon louisiana hot sauce
2 cups finely crushed saltine crackers
3 tablespoons vegetable oil
3 tablespoons butter
1 (8 ounce) package cream cheese
1/2 cup milk
1 tablespoon chopped fresh chives
2 teaspoons Hidden Valley Original Ranch Dips Mix
1 tablespoon grated parmesan cheese
salt
fresh cracked black pepper

Steps:

  • For the Sweet Potatoes: Heat oven to 425. In large bowl, whisk and stir together the first 5 ingredients. Cut in shortening til crumbly using 2 knives or your fingers. In seperate bowl, mix sweet potatoes and cream. Make a well in the dry ingredients and add potato mixture. Mix to combine, turn dough out onto a lightly floured surface, and roll out to 1 1/2 inches thick into a rectangle. With sharp knife, cut into about 20 squares. Place biscuits onto parchment paper-lined baking sheets 1 inch apart. Don't crowd. Brush tops with melted butter. Bake for 5 minutes, turn down oven to 375 and bake for another 15 minutes or til golden brown. Cool on wire rack.
  • For Potato Dumplin's: Boil potatoes til soft; drain, mash with cream and butter and whip til fluffy. Beat in egg, salt, pepper, and Ranch. Fold in cheese and chives. Wet hands and shape into balls. Roll in crumbs. Bake on lightly greased cookie sheet in 400º oven for 15-20 minutes til golden brown.
  • For the Pork Steaks: Roll ground pork into 16 balls, then flatten into patties. In pie plate, mix flour, salt, pepper, cayenne, and Ranch. In another pie plate beat egg and beat in buttermilk and hot sauce. In third pie plate, place cracker crumbs. Lightly coat patties on both sides in flour mixture. Dip one at a time into egg mixture, letting excess drip off, then coat nicely in cracker crumbs. Pat on. Place patties into hot oil mixture over medium heat and fry for about 3-4 minutes or or til golden brown. Turn and fry other side til done, about another 3-4 minutes or til golden brown on both sides. Place in low oven to keep warm on a cooling rack over a baking sheet until all are fried and done.
  • For the Cheese Gravy: Stir cream cheese and milk over low heat til smooth. Stir in rest of ingredients. And salt and fresh cracked black pepper to taste.
  • To assemble! : Split open 16 biscuits and place onto serving platter, place a pork patty on top of each bottom, then a potato dumplin', spoon cheese sauce over top, place on biscuit top. Serve hot!

1 (8 -12 ounce) can biscuits, 10 biscuit size
cooking spray
1/2 lb Italian sausage, sweet
1/2 lb lean ground beef
1/2 cup sweet onion, chopped
1 egg, divided
1/4 cup half-and-half
3/4 cup corn flakes, crushed into crumbs
1/2 teaspoon salt
1/4 teaspoon pepper
2/3 cup mayonnaise
1/2-1 tablespoon sriracha hot chili sauce, plus additional 1 tsp
3 ounces swiss cheese (cut into 2X2 inch squares, making 10 )
dried basil

Steps:

  • Preheat oven to 400°.
  • To prepare biscuits place them on cookie sheet. Separate the egg white from the york (reserve the york for later). Whip the egg white with 1 teaspoons of Sriracha chili sauce. Brush mixture over each biscuit. Sprinkle with some dried basil. Cook biscuits per package direction. Set aside when done.
  • In a large mixing bowl add in the Italian sausage and ground beef. Add in the chopped onion, half and half, egg york, corn flakes, salt, pepper. Mix well.
  • Make 10 patties by dividing the mixture in half and forming 5 patties from each half of the mixture. They should make 2-2 1/2 inch patties.
  • Spray a 10 inch skillet with cooking spray. Heat over a med-high heat.
  • Add mini meat patties to pan. Cook about 5 minutes, flip and continue to cook another 5 minutes or until done.
  • Meanwhile mix mayonnaise with 1/2-1 tablespoon of Sriracha chili sauce (based on your heat level tolerant) and set aside.
  • To assemble the sliders take a biscuit, slice it in half (you should have two circles) spread the bottom half with about 2 teaspoons of the mayo mixture top with the meat patty and a small slice of Swiss cheese, finish it with the top piece of the biscuit.
  • Serve and enjoy.

Steps:

  • Place potatoes in medium sauce pan, cover with water, bring to a boil, and cook 10 to 12 minutes or until potatoes are soft; drain. Cover potatoes with cold water, drain again, then mash slightly using a potato masher. Measure 2-cups mashed potatoes. Set aside to completely cool.
  • Heat oven to 450°F Spray large cookie sheet with cooking oil spray.
  • In a large bowl whisk flour, sugar, baking soda, Ranch seasoning mix, 4 tablespoons parmesan cheese and 3 tablespoons dried chives. Add mashed potatoes and mix gently.
  • In a separate large bowl beat eggs, oil and yogurt with a wire whisk; mix dry ingredients into egg mixture in two batches. Do not over stir.
  • Drop 1/4 cup dough 1-inch apart onto cookie sheet. In a small dish mix remaining 1 tablespoon each parmesan cheese and chives; sprinkle on biscuits. Bake at 450F for 10 to 11 minutes or until lightly browned.
