Peanut butter-filled crackers with chocolate or white chocolate coating. (The recipe is written using chocolate almond bark, but just substitute the same amount of white chocolate for the white variation.)

¾ cup peanut butter
2 pounds vanilla flavored confectioners' coating
80 buttery round crackers
2 ¼ ounces colored candy sprinkles

Steps:

  • Spread approximately 1 teaspoon peanut butter on each of half of the crackers. Top with remaining crackers to make peanut butter "sandwiches".
  • Melt chocolate-flavored almond bark OR vanilla candy coating in the top of a double boiler over hot, not boiling, water. Reduce heat and keep chocolate in top of double boiler over simmering water.
  • Dip each cracker "sandwich" in chocolate, allowing excess to drain back into pot.
  • Place coated crackers on wax paper to cool. Sprinkle with multi-colored sprinkles or other holiday decoration. Allow coating to completely set, placing in refrigerator for 15 minutes, if necessary. Store between layers of wax paper in cool, dry place, or refrigerate. These also freeze well.

My great aunt Pat makes these cookies every year during the holidays. She always has them on hand for drop-in guests and puts them on the dessert buffet at our family Christmas Eve party. I like making multiple batches and storing them in holiday tins for gifts. Be careful, they're addictive! You might want to make an extra batch (or two).

1 cup peanut butter
60 buttery crackers, such as Ritz (2 sleeves)
2 1/2 cups milk chocolate chips
Red or green sprinkles, for decorating

Steps:

  • Line a baking sheet with parchment. Spread a generous 1 teaspoon peanut butter onto half of the crackers and then top with the remaining crackers. Place on the prepared baking sheet and refrigerate until the peanut butter is firm, 20 to 30 minutes.
  • Put the chocolate chips in a microwave-safe bowl and microwave on medium in 15-second intervals, stirring after each interval, until melted, 1 minute 15 seconds to 1 minute 30 seconds. Use 2 forks to dip each sandwich into the melted chocolate until completely coated. If the chocolate starts to stiffen, return it to the microwave. After dipping in chocolate, decorate with red or green sprinkles.
  • Put the sandwich cookies back on the baking sheet. Refrigerate until firm, about 30 minutes. Store in an airtight container at room temperature for up to 1 week.

16 graham cracker squares (8 whole rectangular pieces, halved)
1/2 cup chocolate-hazelnut spread
8 marshmallows
1 package white almond bark
1 package milk chocolate chips or other melting chocolate
Decorating suggestions: chopped pistachios, chopped pretzels, rainbow sprinkles and chocolate sprinkles

Steps:

  • Spread a generous dollop of peanut butter onto one side of 8 of the cracker squares, and then spread the chocolate-hazelnut spread onto one side of the other 8 squares.
  • Thread the marshmallows onto 2 metal skewers and carefully toast over a flame on the stove top. Place 1 toasted marshmallow onto each of the peanut-butter-covered graham crackers. Top with the chocolate-covered crackers and sandwich together gently.
  • Melt the white almond bark and milk chocolate in separate glass bowls set over simmering water. Set aside to cool, stirring occasionally to keep the chocolate melted.
  • When the toppings are at room temperature, one by one dip half of the sandwiches in the white chocolate, allowing any excess to drip off. Work quickly, and then add on whatever sprinkles or toppings you'd like to use. Repeat with the remaining 4 sandwiches, dipping them in the milk chocolate and finishing with the desired toppings.
  • Place in the fridge for at least 30 minutes. Then you can store the s'mores at room temperature or in the fridge until you're ready to serve!

The candy melts come in several colors, Ritz come in seasonal shapes, and they have so many cute sprinkles that you could use these for just about any occasion.

76 Ritz crackers (2 packs)
1 1/2 cups peanut butter
21 ounces white chocolate candy melts (1 1/2 bags) or 21 ounces almond bark (chopped into smallish chunks)
1/4 cup candy sprinkles (optional)

Steps:

  • Spread about 1 tsp peanut butter on a Ritz, top with another cracker to form a sandwich. I like to be generous with the peanut butter, and aim for a layer about as thick as one cracker. Repeat with remaining crackers and peanut butter until you have exhausted your supply.
  • Lay a sheet of parchment or waxed paper out that is large enough to place all of the cookies on.
  • Warm the chocolate pieces up: I have a fondue pot so I simply pour in the chocolate, turn to high, and stir occasionally until melted. Once its all melted, reduce the heat to low. If you have a double boiler, use the same method, except heat over medium, and when its melted, remove from heat.
  • - OR - In a microwave safe dish, add candy and microwave at 50% power for 1 minute. Stir well, and continue to microwave for 3-5 minutes, stirring every 30 seconds until melted.
  • Next, dip the cookies. Its up to you if you want to dip the whole thing at once, or dip one half and let it set, and then dip the other half. It looks better if you can dip the whole thing at once. Sprinkle them fairly quickly before the chocolate begins to set.
  • Allow to set for 1 hour before moving. Store in an airtight container for a week. (They may stay good longer, but we've never had them last that long :-) ).

1 piece dark chocolate (I like to use Dove or Ghiradelli)
1 small banana, thinly sliced
1 tablespoon preserves, I prefer raspberry

  • Toast the two slices of bread, right after it pops out of the toaster, top one side of toast with the grated dark chocolate. On the other toast add peanut butter. Layer banana slices on top of peanut butter, then add jam preserves on top of bananas. Put both slices together and enjoy the best peanut butter sandwich ever! ½ cup powdered sugar (also called confectioners sugar)
16 ounces milk chocolate wafers (candy melts or chocolate almond bark can be used)
48 Ritz Crackers
sprinkles (optional)

Steps:

  • Line a baking sheet with parchment paper or wax paper.
  • Mix the peanut butter and powdered sugar in a medium bowl with a spatula or spoon.
  • Place about a teaspoon and a half of the peanut butter mixture on each cracker. Then, top with another cracker and smoosh down the filling, but don't let it ooze over the edges. Place it on the baking sheet.
  • In a microwave-safe bowl, place chocolate wafers. Melt according to the package instructions. OR microwave at 50% power for 1 minute. Stir, then microwave at 30-second increments stirring after each heating until the chocolate is melted and smooth.
  • Using a fork(s), dip the cracker cookie in the melted chocolate turning it to cover all sides. Next, pick it up on the fork and then tap the fork on the side of the bowl to smooth them out remove any excess chocolate. Place each one on the parchment-lined baking sheet. If using, top with sprinkles while still soft. Let them cool and set for about 20 minutes.

60 Ritz Crackers
2 1/2 cup semi sweet chocolate chips
1 1/2 cup creamy peanut butter
1/2 cup powdered sugar

Steps:

  • Line a 18x13 sheet pan with wax paper.
  • In a small mixing bowl, stir together the peanut butter and the powdered sugar until smooth.
  • Evenly space 30 Ritz crackers face down. This will be the cookies "bottom".
  • Spoon 1 tablespoon of peanut butter mixture into the center of the cracker. Do not spread the peanut butter to the edges.
  • Place the "top" cracker, face up. Gently press the cracker down, just until the peanut butter is close to the edge of the crackers, but not dripping over the edge.
  • Refrigerate the cookies on the tray for 25 minutes. (This helps firm up peanut butter mixture).
  • In a medium sized heat safe bowl, combine 2 cups of the chocolate chips.
  • In the microwave, heat the chocolate chips for 30 seconds at a time, stirring well after each interval, until the 2 cups of chocolate chips are melted.
  • Add the remaining ½ cups of chocolate chips, and stir until the chocolate is smooth.
  • Remove the cookies from the refrigerator.
  • Place 1 cookie at a time in the melted chocolate. Using a regular dinner fork, flip the cookie over until it is well coated. Slide the fork completely under the cookie and gently tap the fork against the rim or the side of the bowl, to remove the excess chocolate.
  • Return the sheet pan of cookies to the refrigerator. Chill for 30 minutes to help set the chocolate. Store in an airtight container.
