SNOW PEA, SCALLION AND RADISH SALAD



Snow Pea, Scallion and Radish Salad image

2 cups (about 8-ounces) snow peas, trimmed and rinsed
3 scallions (green and white portions), thinly sliced
4 radishes, trimmed and cut into julienne slices (about 1/2 cup)
1/4 cup seasoned rice wine vinegar
1 tablespoon walnut oil

Steps:

  • Place snow peas in a bowl and cover with boiling hot water. After 2 minutes, strain and shock in an ice bath. When cool, strain. Cut snow peas on the diagonal into 1/2-inch diamond shapes, discarding end pieces.
  • In a medium-sized bowl, combine snow peas, scallions and radishes. In a separate bowl, whisk together vinegar and oil. Pour over vegetable mixture and serve.

1 teaspoon caraway seed
2 teaspoons chopped fresh oregano
1 garlic clove, minced
1 pinch sugar
1 pinch salt
1 pinch pepper
15 -20 medium radishes (or shaved) or 15 -20 large radishes, trimmed and sliced thin (or shaved)

Steps:

  • In a small bowl, combine vinegar, oil, caraway, oregano, garlic, sugar, salt and pepper.
  • In a large bowl, toss radishes with vinegar-oil mixture.
  • Cover and refrigerate at least 1 hour before serving.

1 ¼ pounds asparagus, trimmed and cut diagonally into 1-inch pieces
½ pound snow peas, ends and strings removed, cut diagonally into 1-inch pieces
15 small radishes, trimmed and thinly sliced
3 scallions, thinly sliced
¼ cup fresh snipped dill
3 tablespoons canola oil
1 teaspoon white sugar
¾ teaspoon salt
¼ teaspoon freshly ground black pepper
3 tablespoons freshly squeezed lime juice, or more to taste

Steps:

  • Bring water to a boil in a saucepan. Add asparagus; boil for 1 minute. Add snow peas to asparagus, boil for 1 minute more. Drain and pat dry.
  • Transfer asparagus and snow peas to a large bowl. Add radishes, scallions, and dill; toss salad gently to combine.
  • Whisk oil, sugar, salt, and pepper together in a small bowl; pour over salad and toss to coat. Set aside at room temperature to allow flavors to blend; about 1 hour. Drizzle lime juice over salad; toss gently until combined.

1 cup sliced red onion
1 cup seeded and sliced cucumber
½ cup extra virgin olive oil
2 tablespoons white wine vinegar
½ teaspoon white sugar
1 clove garlic, minced
1 teaspoon chopped fresh dill

Steps:

  • Toss radishes with salt; let stand for about 10 minutes. Drain any liquid and transfer radishes to a large bowl. Add red onion and cucumber slices.

12 ounces radishes, trimmed and each cut into wedges
1/4 cup fresh cilantro leaves
1/4 cup finely chopped red onion

Steps:

  • In a large bowl whisk together the cider, orange juice, lime juice, olive oil, and sugar until the sugar dissolves. Taste and season with a pinch of salt and pepper. Add the radish wedges, cilantro, and red onion. Toss gently and refrigerate for at least an hour making sure to toss the salad midway through its ride in the refrigerator. 6 -10 radishes, small, medium
1 large bunch scallion
2 -4 tablespoons creme fraiche
3 teaspoons sugar, to taste
1 pinch salt

Steps:

  • Rinse and dry the vegetables. Slice the scallions and place in a bowl. Add some salt and all of the sugar - this salad is supposed to taste sweet - mix gently.
  • Cut the radishes in thin slices. Mix in the radish slices. Add the creme fraiche, one tablespoon at a time, until you get a mixture resembling a creamy potato salad in consistency.
  • Serve immediately, as both the sugar and salt draw out liquid from the vegetables, making the salad soggy.

  • Cut the radishes into quarters or rounds, the scallions into diagonal shreds, and the cucumber into thick matchsticks. Tip the prepared vegetables into a large bowl and add the vermicelli. Tear the cilantro and mint leaves into smaller pieces and add to the salad with the chili. Mix together with your hands to distribute everything evenly.
  • Now whisk the dressing ingredients together in a small bowl. Add to the salad and mix together once more with two forks, lifting and dropping the salad so that all is evenly dressed. Pile onto a shallow serving dish and sprinkle the crushed cashews and sesame seeds over. Best eaten pleasantly chilled, with warm sake or ice-cold beer.
