Turkey and Stuffing Meatloaf

Steps:
- Preheat oven to 400F
- In a large bowl, add apples and lemon juice, and toss together
- Add turkey, celery, onion, poultry seasoning, egg, salt and ground black pepper
- In a medium-size bowl, add the stock and the stuffing
- Toss around, letting the stuffing soak up the liquid, then add it to the bowl with the turkey
- Mix everything together well, then turn it out onto a parchment-lined baking sheet and shape it into a loaf
- Coat with EVOO, transfer to the oven and roast until brown and cooked through, about an hour
- Serve topped with Cider Gravy and Sour Cream and Onion Mashed Potatoes alongside
TURKEY AND STUFFIN' SOUP

- Preheat oven to 350 degrees F and transfer stuffing into a small baking dish. Place dish in oven and reheat 12 to 15 minutes, until warmed through.
- Heat a pot over moderate heat and add extra-virgin olive oil. Work close to the stove and add vegetables as you chop. If you are using fresh carrots, cut them into a small dice or slice thin. If you are using leftover baby carrots, cut carrots into bite-size pieces. Add celery and onion and lightly season vegetables with salt and pepper. Add bay leaf and stock and bring liquid to a boil by raising heat. Add turkey and reduce heat to simmer. Simmer until any raw vegetables are cooked until tender, about 10 minutes. Stir in the parsley, and peas, if using.
- Remove stuffing from oven. Using an ice cream scoop, place a healthy scoop of stuffing in the center of a soup bowl. Ladle soup around stuffing ball. Your soup will look like a chunky matzo ball soup. Pull spoonfuls of stuffing away as you eat through your bowl of soup.
CHIPOTLE BBQ TURKEY MINI MEATLOAVES

- Preheat the oven to 375 degrees F. Brush a muffin pan (with 6 jumbo or 12 medium cups) with EVOO.
- For the BBQ sauce: Combine the ketchup, chipotle puree, maple syrup, brown sugar, vinegar, Worcestershire sauce, garlic and pepper to taste in a small pot. Heat until the mixture starts to bubble, then reduce the heat to low and simmer until thickened, about 20 minutes, stirring occasionally.
- For the meatloaves: Pulse the stuffing cubes in a food processor until crumbs form. Transfer to a bowl and moisten with chicken stock.
- Combine the turkey, poultry seasoning, cumin and some salt and pepper in a large bowl. Add the moistened breadcrumbs, bell pepper, cilantro, scallions, eggs and cheese and mix gently to combine. Fill the muffin cups with the meatloaf mixture, mounding it a bit in the centers. Top with BBQ sauce. Place the pan on a baking sheet and bake for 40 minutes.
- For the mashed sweet potatoes: While the meatloaves are cooking, peel and cube the sweet potatoes. Place in a pot and cover with water. Bring to a boil and cook until tender, then drain. Mash with the chicken stock, thyme, orange juice and salt and pepper to taste.
- Serve the meatloaves with the mashed sweet potatoes.
TURKEY AND STUFFING MEATLOAF
This was what I thought was an invention of mine until I looked it up and found other recipes. Mine is more simple than some others but it makes a very dense meatloaf that tastes just like a turkey and dressing dinner. We're debating whether we are going to skip the big family meal this year and just cook this up.

Steps:
- In a large bowl mix the turkey with the seasoning mix, oil, 1/4 cup of gravy, and stuffing mix.
- Spray a loaf pan with cooking spray and put the meat into the pay making sure to press it down.
- Cover with Foil and cook for 60 minutes at 375 degrees.
- After 60 minutes, remove from the oven and uncover. using a the handle of a wooden spoon poke holes in the meatloaf about 1 inch apart.
- Pour the remaining gravy over the meatloaf and put back in the oven (uncovered) for 10 minutes.
- Remove from the oven and allow to rest for 10 minutes.
- Slice and serve.
TURKEY AND STUFFING MEATLOAF
I saw this on Rachael Ray's talkshow today and it looked so delicious, and also very easy to make. She made a pretty big meatloaf, so you can halve the recipe easily.

- First prepare the stuffing by mixing together the stuffing mix and the broth in a large bowl or measuring cup. Allow to bread to absorb the broth, about 2-3 minutes.
- Peel and chop the apples, and onions. Add about 1 tablespoon of lemon juice to the apples to prevent browning. Dice the celery into pieces as well.
- Add the ground turkey and egg and mix together. Add the vegetables along with the poultry seasoning, salt and pepper to taste. Add the wet stuffing mix and add. With your hands or a large spoon, mix all together.
- Line a baking sheet with parchment paper. Lay the meat mixture onto the baking sheet into a large log. Drizzle on the top of the meat some olive oil.
- Bake at 400 Degrees for 1 hour or until the meat is cooked through. Wait for about 10-15 minutes and enjoy!

- Heat the butter to melt in a medium skillet over medium heat. Saute the apples, celery, and onions seasoned with a bay leaf, salt, and pepper, until very tender, 10 minutes. Add the stuffing cubes and moisten with 1 to 1/1 2 cups of stock; season with poultry seasoning. Cool completely, then combine in a bowl with ground turkey, salt, pepper, half the parsley, and egg. Form 4 oval-shaped loaves a couple of inches thick. Arrange on a rack over baking sheet or parchment-lined baking sheet and coat with a little oil to glisten. Roast until brown and firm, 45 minutes, depending on thickness.
- Reheat the meatloaves in medium hot oven to warm through. Place them in a shallow baking dish and cover with foil. Cook's Note: To keep the loaves from drying out - add a splash of stock, this will keep the loaves super moist.
- In a saucepan, whisk the oil and 1/4 cup flour over medium heat 10 to 15 minutes, until the color of peanut-butter. Add lots of coarse pepper to the roux, then whisk in a couple of cups of stock and thicken, season with salt to taste. Cool completely and store in the refrigerator. Reheat the mixture in a saucepan over medium flame.
