BROWN SUGAR BACON WAFFLES
These are perfect for those lazy weekend mornings when you have time to wake up late and still have time to cook breakfast! They are deliciously irresistible.

- Preheat an oven to 375 degrees F (190 degrees C). Prepare a baking sheet with cooking spray. Arrange the bacon on the prepared baking sheet, and sprinkle with 2 tablespoons brown sugar. Bake in the preheated oven until the bacon is crispy and the brown sugar is caramelized, 10 to 15 minutes. Immediately remove the bacon to a cutting board; cut into small pieces and set aside.
- Preheat a waffle iron; grease with cooking spray.
- Whisk the flour, 1/2 cup brown sugar, baking powder, baking soda, and salt together in a large bowl. Beat the eggs, buttermilk, vegetable oil, and vanilla together in a separate bowl; fold the wet mixture into the flour mixture. Add the bacon and stir, being careful to not over mix.
- Ladle the batter into the preheated waffle iron and cook until golden brown; serve hot.

Steps:
- Spray a waffle iron with nonstick cooking spray and preheat it.
- Sift together the flour, baking powder and 1/2 teaspoon salt in a medium bowl. Beat the egg whites in a second medium bowl until stiff.
- Beat the egg yolks with the milk and butter in a large bowl. Add the flour mixture, stirring until just blended. Fold in the beaten egg whites.
- Place 2 halves of a bacon slice in each waffle grid and close the cover. Cook for 1 minute and then add a scant 1/2 cup batter to each waffle grid. Bake until golden brown, about 5 minutes. Serve with maple syrup.
BROWN SUGAR BACON
Steps:
- Preheat the oven to 400 degrees F. Position racks in the top and bottom of the oven. Line 2 rimmed baking sheets with foil and set cooling racks into the baking sheets.
- Using your fingers, crumble together the brown sugar, smoked paprika and several grinds of black pepper on a plate. Dredge the bacon on both sides in the brown sugar mixture, rubbing so the sugar adheres. Arrange the slices on the racks without touching.
- Bake until the bacon is crisp and caramelized, flipping the slices and rotating the baking sheets from top to bottom halfway through, about 20 minutes total. Let the slices cool on the racks, turning once or twice so they don't stick.

- In a skillet, cook bacon until crisp. Drain; crumble and set aside. In a bowl, combine the flour, sugar, baking powder and salt. - Cook bacon in medium skillet over medium heat 8-10 minutes or until browned and almost crisp, stirring occasionally; drain on paper towels. Reserve 2 tablespoons of bacon drippings from skillet. (reserve remaining drippings to brush over waffle iron, if desired.) Heat oven to 250. Place wire rack on large rimmed baking sheet. Whisk flour, brown sugar, baking powder and salt in large bowl. Heat waffle iron until hot. Meanwhile, whisk egg yolks in medium bowl until smooth. Whisk in milk, butter and reserve 2 tablespoons bacon drippings until blended. (Butter can be used instead of drippings in the batter.) Make a well in center of flour mixture. Pour in egg yolk mixture; whisk until almost smooth. Beat egg whites in small bowl at medium-high speed until stiff peaks form. Stir one-third of the egg whites into waffle batter to lighten; gently fold in remaining egg whites. Fold in bacon. Lightly brush waffle iron with some of the remaining reserved bacon drippings. (Canola oil can be used instead of drippings.) Pour ½ - 2/3 cup batter per waffle onto waffle iron (exact amount depends on size of waffle iron). Cook 2 ½ - 4 minutes or until crisp and golden brown, or cook waffles according to manufacturer's directions for iron. Arrange waffles on rack on baking sheet; place in oven to keep warm. Repeat with remaining batter.
