CHEDDAR CHEESE SAUCE

Cheddar Cheese Sauce image

Cheddar cheese sauce is an easy, creamy, indispensable, and versatile homemade go-to in your recipe repertoire, whether destined for burgers, tater tots, broccoli, chili, nachos, cauliflower, baked potatoes...get the picture? Here's how to make it.

Provided by Spike Mendelsohn

Categories     Condiments

Time 15m

Number Of Ingredients 6

1 cup whole milk
2 tablespoons (1 oz) unsalted butter
2 tablespoons all-purpose flour
1 cup grated Cheddar cheese
3/4 teaspoon ground cayenne or store-bought or homemade hot sauce
Sea salt and freshly ground black pepper

Steps:

  • Pour the milk in a large saucepan, place it over medium heat, and let it warm until you see small bubbles forming along the edge of the pan.
  • Meanwhile, in another saucepan over medium heat, melt the butter.
  • Sprinkle the flour over the bubbling butter and stir constantly until a thick paste, or roux, forms. It may become quite thick and almost paste-like. This is okay. And if it doesn't become crazy thick, that's okay, too. Expect this to take 1 to 2 minutes.
  • Constantly whisking, slowly pour the warm milk into the flour and butter mixture in a steady stream. Continue cooking and whisking almost constantly until the mixture thickens considerably, about 5 minutes. It should be thick but still spreadable and perhaps even pourable.
  • Add the cheese and whisk constantly until it completely melts. Season with the cayenne or hot sauce and salt and pepper to taste. If you're the fussy sort, you can strain the sauce through a sieve to remove any lumps before serving. The sauce will thicken even more upon cooling.

COATING CHEESE SAUCE

Coating Cheese Sauce image

Another recipe I grew up with from the Bero book. This is a wonderfully thick sauce, great with mashed potatoes, steamed veg, and especially broccoli. Works well as a make-ahead, after being cooled in the fridge you can literally just cut a slice off the block so you easily get as much as you want. I usually buy the strongest shredded cheddar I can find as my joints won't put up with doing it myself. I'd advise picking the strength of cheese you are fond of though. I've listed it all as prep time as it needs fairly constant attention.

Provided by Houmous Monster

Categories     Sauces

Time 20m

Yield 1 pint, 3-6 serving(s)

Number Of Ingredients 5

2 ounces butter
2 ounces plain flour
1 pint milk
4 -6 ounces grated cheddar cheese
1/2 teaspoon mustard (ex. Colmans powder) (optional)

Steps:

  • Melt the butter over a medium heat.
  • Slowly add the flour and beat till smooth.
  • Remove from the heat and slowly add the milk, making sure to mix well. You want to avoid lumps. If you get some, fishing them out on the spoon and squishing them with the fork to break them up can help.
  • Bring to a boil and cook gently for 2-3 minutes stirring constantly.
  • Add the cheese and mustard if you have it (I'd not worry if you don't I doubt it's enough to fuss over.) The more cheese the better in my book, but for a thinner sauce you might want just the 4 oz.
  • Serve immediately, or pour into Tupperware and put in the fridge. The sauce will firm up,but just cut off as much as you want and warm in either the microwave or a pan. You can add more milk to thin if needed.

GOOEY CHEESE STICKS (FRIED OR BAKED)

Gooey Cheese Sticks (Fried or Baked) image

Homemade cheese sticks are made with a deliciously crispy outer coating followed closely with a surprisingly soft, gooey and cheesy middle.

Provided by Holly Nilsson

Categories     Appetizer

Time 15m

Number Of Ingredients 8

16 Mozzarella string cheese sticks (must be string cheese)
½ cup flour
¼ cup corn starch
2 eggs
2 tablespoons olive oil (or vegetable oil)
¾ cup Italian bread crumbs
½ cup Panko bread crumbs
oil for frying

Steps:

  • Open the cheese strings and cut each in half. Cover and place in the freezer for at least 2 hours or until completely frozen.
  • Combine flour and cornstarch in a small bowl. Combine the Italian and Panko bread crumbs in a separate shallow dish. In third small bowl, whisk eggs and olive oil until well combined.
  • Dip each cheese stick half into the egg mixture and then gently roll into the flour mixture.
  • Put back into the egg mixture and roll until coated. Finally, place into the bread crumbs pressing the crumbs on each piece of cheese to make sure it's coated all around so the cheese doesn't leak out.
  • Place in the freezer while the oil preheats. Preheat oil to 350°F. It should be hot enough that a few crumbs dropped into the oil will bubble.
  • In small batches, place breaded cheese sticks into the hot oil for about 2 minutes or just until browned. Do not overcook or the cheese will leak out.
  • Serve hot with warm pasta sauce.

CHEESE SAUCE FOR PHILLY CHEESE STEAKS

Cheese Sauce for Philly Cheese Steaks image

This is my daughter's preferred recipe for cheese sauce to top Philly Cheese Steaks. While not truly authentic (I believe the actual Philly Cheese Steaks use Cheese Wiz), this is what my daughter likes : )

Provided by SGpratt

Categories     Sauces

Time 15m

Yield 4 serving(s)

Number Of Ingredients 5

1 1/2 tablespoons butter
1 1/2 tablespoons flour
1/2 cup milk, divided
1 -1 1/4 cup cheddar cheese, grated (whatever sharpness you prefer)
6 ounces Velveeta cheese, cut into small chunks (the small chunks allow it to melt more quickly)

Steps:

  • In a small saucepan, melt the butter on low heat.
  • Once melted, gradually add the flour, stirring constantly to avoid lumps, about 2 minutes. You should end up with a thick but still stirrable roux (A roux is basically just equal part butter and flour stirred over some heat and then you add your liquid ingredients to it. It's a thickener and can be used to start all sorts of cream sauces).
  • Add 1/4 cup milk slowly to the roux and cook over low heat. Stir until it thickens, about 2 minutes.
  • Add the cheddar cheese, the remaining 1/4 cup milk and Velvetta and cook, stirring frequently, until you have a smooth cheese sauce, about 5 minutes.

  • Have all your ingredients measured and ready. Now we make the sauce. Please follow these steps and you will get a nice smooth sauce! First melt the butter in a pan, then add the flour.
  • Use a wooden spoon and stir very well, until it is all combined like the photo. Keep stirring this mix for 1 minute on a medium heat. You need to cook the starch. Then remove from the heat.
  • Start by adding 3 Tablespoons of the milk. Combine using the spoon, stirring until it is combined. Then add 1/3 of the milk, again, stir until it is combined.
  • Keep stirring the mixture, it will take a couple of minutes, and you will get lumps like in the photo. Don't worry at this stage! The lumps will go, so long as you stir. Use your wooden spoon to make sure none of the flour is stuck in the sides of the pan. At this stage, return the pan to a medium heat, and add the remaining milk.
