QUINOA WITH SPINACH, TOMATO AND CHICKEN
A healthy alternative for the gluten-allergic, the lazy college-student. It's so simple, you just cannot go wrong with it. Regarding the quinoa: If you plan on making a lot of these salads, it's advisable to cook the quinoa in a big batch and store it in the fridge. It saves a lot of time because before cooking you have to rinse it extremely well to get rid of the bitter coating.

Steps:
- Heat the oil in pan, and saute garlic for about 2 minutes on medium heat.
- Add the quinoa and cook it up (2 minutes). Then add the tomatoes, spinach leaves and scallion. Keep stirring until the spinach leaves are slightly wilted.
- Turn of the heat immediately, and season lightly with pepper, a pinch of salt and dried basil. Be careful with the salt, because of the feta!
- Serve with the chicken and feta. Enjoy your meal :).

- Mix the stock with the water and bring to boil.
- When nearly boiled add the minced garlic and frozen spinich so that it can defrost (add later if fresh).
- When boiled add the quinoa and turn heat to low, simmer until all liquid is absorbed.
- Prepare the veggies, if using frozen veggies, when liquid is nearly absorbed, heat up the veggies as per packet directions.
- When all liquid is absorbed, add the tuna and the veggies, stir through and then serve.
- Enjoy.

- Line a rimmed baking sheet with parchment paper.
- Heat the tablespoon of oil from the sun-dried tomatoes in a large saucepan over medium heat. Once the oil shimmers, add the green onions and cook until softened, 3 to 5 minutes. Stir in the garlic and cook until fragrant, about 30 seconds. Stir in the water, quinoa and salt. Once the water starts bubbling, cover, reduce the heat to medium-low and cook until the quinoa is tender, 16 to 18 minutes.
- Remove from the heat and let the quinoa sit, covered, until the liquid is fully absorbed, about 10 minutes. Transfer the quinoa to a large bowl and let it cool for at least 15 minutes.
- Meanwhile, tear the bread into large pieces. Pulse them in a food processor about 10 times, or until coarsely ground. Add the beaten 1 egg plus 1 yolk and the lemon zest; pulse about 5 times, or just until the mixture comes together. Transfer to the bowl with the cooled quinoa and stir it in, along with the sun-dried tomatoes, lemon juice, spinach and cheese, until thoroughly combined.
- To divide the mixture into 8 equal portions, use a spatula to first press it evenly into the bowl, then "cut" it into 8 wedges, scooping each one out as you work.) Pack each portion firmly to form a 1/2-inch-thick cake that's about 3 1/2 inches wide. Arrange them on the lined baking sheet as you work. Cover and refrigerate the cakes for at least 1 hour, and up to 24 hours.
- Heat 1 tablespoon of the vegetable oil in a large nonstick skillet over medium-low heat. Gently lay in 4 of the cakes and cook until well-browned on the first sides, 5 to 7 minutes. Use a flexible spatula to gently turn them over; cook until golden brown on the second sides, 5 to 7 minutes.
- Transfer them to a serving platter and tent with aluminum foil (to keep them warm). Return the skillet to medium-low heat and repeat with the remaining 1 tablespoon vegetable oil and remaining 4 cakes.
- Serve with yogurt dolloped on top, or on the side.
- Note: excellent served cold, too.

- Wash spinach leaves a few minutes ahead of time and allow to dry in a salad-spinner or colander.
- Heat a large saute pan over medium-high heat. Add the olive oil and heat. Add the garlic and cook for 1 minute. Add the chicken and cook about 4 minutes per side, or until cooked through and juices run clear. Remove the chicken and set aside. To the same pan, add the spinach and cook just until wilted, about 1 to 2 minutes. Remove from the pan and set aside. Lower the heat to medium and add the balsamic vinegar and chicken broth to the pan and stir, scraping the bottom of the pan to remove any browned bits. Add the tomatoes, bring to a simmer and cook 3 to 5 minutes.
- Place the couscous in a serving bowl. Top with the spinach, chicken and balsamic-tomato sauce.
- *A few pointers:.
- I use either thin-sliced chicken or pound the chicken so it's about a 1/2 inch thick. It cooks much more evenly that way. This recipe is also tasty with a dash or two of dried basil and rosemary and a few turns of fresh ground black pepper added to the vinegar/tomato mixture. The prep time of this recipe includes washing the spinach, cooking the couscous and pounding the chicken.

- Rinse the quinoa in a strainer.
- In a small saucepan, add the quinoa and 1 cup of water. Bring to a boil over high heat, then cover and reduce heat to simmer until water is absorbed, about 10-15 minutes.
- Meanwhile, heat a skillet over medium heat and add the olive oil and garlic and onion.
- Cook the garlic in the oil until the edges of the garlic turns very light brown, being careful not to burn the garlic (reduce heat to low if necessary).
- When the quinoa is done cooking, add it to the skillet along with the spinach.
- Stir it together until the spinach wilts.
- Add the crumbled feta cheese and stir to combine. Makes 2 servings.
