BLUEBERRY WHOLE WHEAT MUFFINS

Blueberry Whole Wheat Muffins image

We love the whole wheat pastry flour in this muffin. Lower in gluten than regular white flour, it ups the fiber and provides tenderness.

Provided by Food Network Kitchen

Time 55m

Yield 12 servings

Number Of Ingredients 13

1 1/2 cups whole wheat pastry flour or white whole wheat flour
1/2 cup rolled oats, plus more for sprinkling
1 teaspoon baking powder
1/2 teaspoon fine salt
1/4 teaspoon baking soda
1/2 cup vegetable oil
1/2 cup reduced-fat sour cream
1/2 cup packed light brown sugar
1 teaspoon finely grated lemon zest
1 teaspoon pure vanilla extract
2 large eggs
1 cup blueberries
Turbinado sugar, optional, for sprinkling

Steps:

  • Preheat the oven to 350 degrees F. Line a 12-cup muffin pan with muffin liners.
  • Combine the flour, oats, baking powder, salt and baking soda in a large bowl. Whisk together the vegetable oil, sour cream, brown sugar, lemon zest, vanilla and eggs in another bowl. Fold the sour cream mixture into the flour mixture until just combined, and then fold in the blueberries (don't worry if there are a few lumps).
  • Divide evenly among the prepared muffin pan. Sprinkle with oats and turbinado sugar if using. Bake until the muffins are golden and a toothpick inserted in the center comes out clean, 20 to 24 minutes. Cool in the pan for a few minutes, and then transfer to a rack to cool completely.

100% WHOLE WHEAT MUFFINS

100% Whole Wheat Muffins image

Very nice muffins with a high health factor. I haven't had these stick around long enough to worry about freezing any. For their portraits I dressed them up with walnut halves on top. Pretty much any firm fruit (raisins, cranberries, cherries, dried apricots, etc) or chopped nuts can be added as desired.

WHOLE-WHEAT CARROT APPLESAUCE MUFFINS

Whole-Wheat Carrot Applesauce Muffins image

This recipe is by far the new favorite muffin in our house. Move over blueberry, zucchini, and even pumpkin-these are so deeelicious and could be eaten with breakfast, lunch, or even dinner (maybe as a side to some fall soup?)!

Provided by Lisa Leake

Categories     Breakfast     Snacks & Appetizers     Treats

Time 32m

Number Of Ingredients 11

1 1/2 cups whole-wheat flour
1 teaspoon baking soda
1 teaspoon cinnamon (ground)
1/2 teaspoon ginger (ground)
1/2 teaspoon salt
1/2 cup butter (softened (but not melted), 1 stick)
1/2 cup honey
1 egg
1 teaspoon pure vanilla extract
1 cup applesauce (unsweetened)
3/4 cup carrot (shredded)

Steps:

  • Preheat your oven to 350 degrees F. Line a muffin pan with paper, foil, or silicone liners, and set aside.
  • In a medium bowl whisk together the flour, baking soda, cinnamon, ginger, and salt.
  • In a large bowl fitted with an electric whisk (or beaters), mix the butter, honey, egg and vanilla together on medium speed. Turn the speed down and slowly add in the flour mixture until well combined. The batter will be fairly thick at this point.
  • Using a spatula, carefully fold in the applesauce and carrots (I used a cheese grater to shred the carrots). Divide the batter evenly among the muffin cups. Bake for 22 to 24 minutes or until a toothpick comes and muffins are beginning to turn golden brown on top. Enjoy!

FRUIT, NUT, OR BERRY WHOLE-WHEAT MUFFINS

Fruit, Nut, or Berry Whole-Wheat Muffins image

I love a good muffin recipe that you can really make your own by switching up the ingredients. These whole-wheat muffins taste delicious with fruit, nuts, or berries in them. Make sure to make a double batch to freeze or later.

Provided by Lisa Leake

Categories     Breakfast     Snacks & Appetizers     Treats

Time 20m

Number Of Ingredients 13

1 1/2 cups whole-wheat flour (I used King Arthur's white whole-wheat flour)
1/2 teaspoon salt
2 teaspoons baking powder
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
2 eggs
2 tablespoons honey
1 teaspoon pure vanilla extract
1/4 cup coconut oil (or other oil of your choice)
3/4 cup apple juice (or orange juice)
berries
fruit
nuts

Steps:

  • Heat oven to 400 degrees F.
  • In a large bowl with a fork or whisk mix the flour, salt, baking powder, cinnamon and nutmeg.
  • Make a well (hole) in the center of the flour mixture and pour in the eggs, honey, vanilla, oil and orange juice. Mix the dry and wet ingredients together - do not overmix.
  • Now here is the fun part. If you are in a hurry just add 1 cup of blueberries, mashed up banana & nuts, or other filling of your choice. If you have 5 or 10 minutes extra (and some anxious helpers) do not add anything to the muffin batter before continuing with the next step.
  • Line a muffin pan with liners and fill 2/3 to 3/4 of the way full with batter. If you didn't already add your filling, sprinkle 1 - 2 teaspoons of whatever you would like (from the list below or from your own creation) onto the top of each raw muffin in the pan. Then gently mix each one with a fork or spoon. Here are some options to consider for the fillings:- blueberries- diced strawberries- peeled and diced pears- applesauce- either diced or mashed up bananas and chopped walnuts- raisins and chopped pecans (I add an extra pinch of cinnamon to the muffins with this filling)- grated carrot and chopped walnuts- orange or lemon zest (only add 1/4 to 1/2 teaspoon of zest per individual muffin)- a mix of dried fruit bits- jelly
  • After the filling has been mixed into each muffin slide the tray into the warm oven and bake for 10 - 15 minutes or until a toothpick comes out clean. Serve warm or at room temperature and freeze some for a later date. Enjoy!
