Vegan beetroot & quinoa burgers image

Enjoy these vegan beetroot and quinoa burgers with rocket salad for a healthy yet hearty midweek meal

Provided by Liberty Mendez

Categories     Dinner

Time 45m

Number Of Ingredients 14

2 tbsp rapeseed oil
1 red onion, finely chopped
1 tbsp cumin seeds
2 garlic cloves, finely chopped
200g quinoa, cooked
2 large cooked beetroot (150g), finely grated and liquid reserved
50g plain flour
2 tbsp milled flaxseed
½ small bunch of coriander, plus a few leaves to serve
25ml beetroot preserving liquid
½ lemon, juiced
100g low-fat soy yogurt
50ml extra virgin olive oil
200g rocket

Steps:

  • Heat the oven to 220C/200C fan/gas 7. Put 1 tbsp of the rapeseed oil in a small frying pan and tip in the onion, cumin and garlic, then fry over a medium heat for 8 mins until softened and golden. Tip into a bowl. Add the cooked quinoa, beetroot, flour, flaxseed and coriander, and mix until combined. Season lightly. Leave to sit for 5 mins to bind.
  • Divide the mixture into four - it will be quite loose - then, using wet hands, shape them into patties. Put the burgers on a lined baking tray and put in the oven for 15 mins. Turn them over and cook for another 10 mins.
  • Meanwhile, make the salad dressing. Whisk together the beetroot liquid, lemon juice, yogurt and oil, and season.
  • To serve, pile the rocket onto plates and place a burger on top. Drizzle over the dressing and scatter over the extra coriander.

QUINOA AND MUSHROOM VEGGIE BURGERS

Quinoa and Mushroom Veggie Burgers image

Slightly adapted Veggie Burgers recipe from Martha Stewart website. Includes 1 hour chilling time. My food processor didn't chop the mushrooms easily, so I used the shredder attachment. Also had some sprouts that my hubby was unlikely to eat on the burger so I pureed them and added them to the mix. But you could also just add them as garnishment. Or do both! Mmmm, sprouts. Other things that are good to add to the finished burger is avocado, cucumber, mustard, mayo, yogurt, salsa, lettuce, grilled veggies, etc. Yum!

Provided by MahnaMahna

Categories     Lunch/Snacks

Time 1h40m

Yield 6 burgers, 6 serving(s)

Number Of Ingredients 12

2 small zucchini
10 medium mixed mushrooms
1/4 cup minced onion
1 teaspoon red pepper flakes
1/4 cup finely grated parmesan cheese
2 cups cooked quinoa (3/4 cup when dry)
2 teaspoons coarse salt
fresh ground pepper
2 large eggs, lightly beaten
1 1/2 cups fresh whole wheat breadcrumbs
1 cup mixed sprouts
6 whole wheat buns, split

Steps:

  • Pulse mushrooms in a food processor until finely chopped or use the grater attachment if, like mine, your processor doesn't do mushrooms well. Transfer to a bowl.
  • Shred zucchini and remove excess moisture with paper towells. Add to mushrooms.
  • Heat 2 tablespoons oil in a large pan over medium heat.
  • Add shallot/onion and red-pepper flakes, and cook until softened, about 2 minutes.
  • Add mushrooms and zucchini, and cook until tender, about 2 minutes.
  • Remove from heat, and add Parmesan, quinoa, and salt.
  • Season with pepper.
  • Let cool completely, then stir in egg and breadcrumbs.
  • Cover, and refrigerate until cold and firm, about 1 hour.
  • Heat remaining 2 tablespoons oil in a large nonstick skillet over medium heat.
  • Shape mixture into six 1/2-inch-thick patties, pressing firmly.
  • Cook in batches until golden brown and cooked through, about 3 minutes per side.
  • Wipe pan clean, and return to medium heat.
  • Brush cut sides of buns with oil, and heat buns, cut sides down, until toasted, about 1 minute.
  • Assemble burgers and enjoy!

Number Of Ingredients 17

¾ cup water
½ cup quinoa
1 carrot
1 (15 ounce) can garbanzo beans, drained and rinsed
6 small green onions, chopped
¼ cup whole wheat bread crumbs
1 egg, slightly beaten
1 clove garlic, minced
1 teaspoon ground cumin, or to taste
¼ cup peas

2 tablespoons olive oil
½ cup plain yogurt
3 tablespoons tahini
1 lemon, juiced
1 tablespoon chopped fresh cilantro, or to taste

KALE & QUINOA PATTIES

Kale & quinoa patties image

These veggie burgers are scrumptious and simple to make, top with fresh pesto and goat's cheese for a light lunch or dinner

Provided by Georgina Fuggle

Categories     Lunch, Main course

Time 1h5m

Number Of Ingredients 18

140g quinoa
500g hot vegetable stock
100g kale , stalks removed, leaves roughly chopped
3 tbsp olive oil
1 small onion , finely chopped
2 garlic cloves , crushed
75g fresh white breadcrumbs
2 medium eggs , beaten
50g sundried tomatoes , roughly chopped
100g goat's cheese , cut from a round log
green salad , to serve (optional)
½ small pack basil , leaves only
½ small pack parsley , leaves only
2 garlic cloves , crushed
50g pine nuts , toasted
50g parmesan , grated
150g olive oil
juice 1 lemon

Steps:

  • Put the quinoa in a saucepan and pour over the hot stock. Simmer for 18-20 mins over a gentle heat until the grains have fluffed up and the liquid has disappeared. Remove from the heat and allow to cool. Meanwhile, bring a large saucepan of water to the boil. Add the kale and simmer for 6-8 mins until cooked through. Drain, squeeze out any excess water and set aside.
  • Put 1 tbsp olive oil in a small frying pan over a medium heat. Add the onion and cook for 2-3 mins until translucent. Add the garlic and cook for 1 min more. Tip the cooked quinoa into a bowl and add the kale, onion, garlic, breadcrumbs, egg and sundried tomatoes. Season well and mix to combine. Set aside.
  • To make the pesto, put the basil, parsley, garlic, pine nuts and Parmesan in a small food processor. Pulse, slowly pouring in the oil, until you have a thick pesto. Squeeze in the lemon juice to loosen, then set aside.
  • Gently heat 2 tbsp olive oil in a shallow frying pan. Using your hands, form the quinoa mixture into 8 round patties. Add to the frying pan and fry for 4-5 mins each side until crisp and golden.
  • Heat the grill to high and put a slice of goat's cheese on top of each patty. Place under the grill to brown and melt the cheese slightly - this will take a matter of seconds, so keep an eye on them. Top each patty with a generous spoonful of pesto and serve with some fresh green leaves, if you like.
